2 cups packed brown sugar
1 cup butter
1 cup milk
2 cups semisweet chocolate chips
4 cups quick cooking oats
1 cup chopped walnuts
1 cup flaked coconut

Steps:

  • Place oats, nuts, coconut, and chocolate chips in a large bowl.
  • Place sugars, butter or margarine, and milk in a saucepan. Bring to a boil, and continue to boil for 2 minutes. Pour hot mixture over oat mixture. Mix well. Drop from a teaspoon onto wax paper. Allow to set up.

  • Place the milk, butter, sugar, and cocoa in a medium sized saucepan, and bring to a full rolling boil. Boil for one minute. Remove from heat, and stir in oats. Mix in coconut, if desired. Drop by teaspoonfuls onto waxed paper. Let stand until set. Quickies may be refrigerated to speed setting.

2 cups sugar
1/2 cup milk
3 tablespoons cocoa
3 cups quick-cooking rolled oats
1/2 cup peanut butter

1 cup raisins or 1/2 cup nuts (your choice) (optional)

Steps:

  • Combine margarine, sugar, milk, cocoa, and salt in a heavy pot and bring to boil over medium heat for 1 1/2 minutes.
  • Remove from hot burner.
  • Add oats, peanut butter, and vanilla.
  • Add raisins/nuts if desired.
  • Mix well.
  • Drop by teaspoon on waxed paper and let cool.

Steps:

  • Start by prepping a cookie sheet with parchment or wax paper . Set this aside while you work.
  • In a saucepan on medium heat, combine together sugar alternative, milk, butter, unsweetened cocoa powder, and sugar free chocolate chips. Bring this to a boil stirring as it heats. Be sure to scrape the sides of the pan to reduce sticking. Once the ingredients begin to bubble, wait one minute and then remove the pan from the heat.
  • Stir in the remaining ingredients, one at a time. Then use a teaspoon to scoop the batter and drop it onto the prepped cookie sheet from the first step. This should harden at room temperature within 45 minutes. Store the cookies in your refrigerator or freeze to take with you later on.

2 c sugar
2 Tbsp cocoa powder (or up to 1/3 c if you like them real chocolatey)
1/2 c (1 stick) butter
1/2 c milk
1 c peanut butter
3 c quick-cooking oats
1 tsp vanilla

Steps:

  • 1. Mix the sugar, cocoa, butter and milk in a saucepan. Bring to a strong boil for 1 & 1/2 to 2 & 1/2 minutes NO LONGER.
  • 2. Add vanilla and peanut butter; stir quickly and thoroughly to melt peanut butter. Add oats and mix quickly...this step must be where the quickie comes from in the title of quickie cookies :-)
  • 3. Again, quickly pour mixture in a greased dish (13X9) or whatever you have. Press into pan evenly. When cooled, cut into squares.
  • 4. *Note* My mom dropped spoonfuls on wax paper, but I find it easier to put it all in a dish and let it cool. I think to have enough time to drop by spoonfuls before the mix hardens, I would only boil the mixture for 1 1/2 to 2 minutes.

Steps:

  • Line two baking sheets with parchment paper and set aside.
  • In a medium saucepan, combine the butter, milk, sugar and cocoa and bring to a boil over high heat. Boil for 2 minutes.
  • Remove from the heat and stir in the peanut butter and vanilla until uniform. Add the oats, flax seed and salt and stir well to combine.
  • Immediately drop about 24 rounded tablespoons onto the prepared baking sheets and allow the cookies to cool and set for about 15 minutes. The cookies will keep in a sealed container at room temperature for 1 week. If you'd like a chewier cookie, store in the fridge.
