Healthy Protein Cookies are soft, chewy, and packed with protein powder, peanut butter, oats, bananas and no added sugar!

2 medium ripe bananas
2 scoops (60 grams) (unflavoured whey protein powder)
1 cup quick or old fashioned rolled oats
2 tbsp peanut butter (unsalted)
2 tbsp chocolate chips (mini)
Cooking spray (I use Misto)

Steps:

  • Preheat oven to 350 degrees F. Line large baking sheet with unbleached parchment paper or silicone baking mat, and spray with cooking spray.
  • In a medium bowl, mash bananas with a fork. Add whey protein powder, oats and peanut butter. Stir well to combine, batter's consistency will be runny. Add chocolate chips and give a few more stirs.
  • Spoon mixture onto prepared baking sheet (cookies don't spread, so shape them now) and bake for 12-14 minutes (depending on size). Cool on a cooling rack for 5 minutes.

¼ cup golden flax seeds
2 teaspoons chia seeds
2 scoops vanilla protein powder
1 tablespoon powdered peanut butter
2 tablespoons dairy-free mini chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Mash banana in a bowl with an electric mixer until creamy. Blend in flax seeds and chia seeds. Mix in protein powder and powdered peanut butter. Fold in chocolate chips using a spatula.
  • Drop 6 cookies onto the baking sheet using an ice cream scoop. Flatten each cookie with the palm of your hand.
  • Bake in the preheated oven until cookies are firm in the center and edges are browned, 8 to 9 minutes. Transfer to a wire rack; cool for 10 minutes.

1 ¼ cups vanilla-flavored whey protein powder
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon salt
1 cup unsalted butter, softened
¾ cup white sugar
6 tablespoons sucralose and brown sugar blend (such as Splenda® brown sugar blend)
1 teaspoon vanilla extract
2 large eggs
1 (10 ounce) bag chocolate chips
1 cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine whey protein, whole wheat flour, baking soda, and salt in a bowl.
  • Beat butter, white sugar, brown sugar substitute, and vanilla extract together in a separate bowl until creamy. Add eggs one at a time, mixing each one in fully before adding the next. Slowly beat in flour mixture. Stir in chocolate chips and walnuts by hand.
  • Drop tablespoonfuls of dough 2 inches apart onto ungreased baking sheets.
  • Bake in the preheated oven until edges are golden brown, 9 to 12 minutes. Let cool for about 2 minutes before removing cookies from the sheets and placing on cooling racks.

  • Add all of the dry ingredients (except the chocolate chips) to a large bowl and whisk together to avoid clumping. Add the peanut butter, applesauce, and milk, then use an electric hand mixer to mix it up. You can mix by hand, but it’s much easier to get the peanut butter mixed up and smooth with an electric mixer.
  • Use a spoon to scoop out dough into 4 roughly equal sized pieces, and place them on a baking sheet lined with either parchment paper or a silicone baking sheet (my preferred method). Side note: many cookie recipes require chilling the dough, but we don’t need to do that here.
  • Wet your fingers with cold water to make it easier to work with the dough since it’ll be sticky. Form circles with cavities in the center to fill with your chocolate chips (reference the instructions with photos above). I ended up using 2 servings (30g) of chocolate chips total, but you can use more or less.

  • With a small cookie scoop or spoon, portion the cookie dough by tablespoonfuls and drop onto your prepared baking sheet (you will have 12 to 14 cookies total). With your fingers, gently flatten the tops of the cookies, as they will not spread but will puff up during baking. Bake for 5 to 6 minutes, until the edges are barely golden brown and dry to the touch but the middles seem fairly doughy. Do not overbake! Place the cookie sheet on a wire rack and allow the cookies to cool on the baking sheet for 3 minutes before transferring them directly to the wire rack to finish cooling.
