1/2 cup butter, softened
1-1/2 cups packed brown sugar
1 large egg
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup pecans, coarsely chopped
ICING:
1 cup packed brown sugar
1/2 cup heavy whipping cream
1 cup confectioners' sugar

Steps:

  • In a bowl, cream the butter and brown sugar. Add egg and vanilla; mix well. Combine the flour, baking powder and salt; add to creamed mixture. Mix well. Cover and chill until dough is easy to handle, about 1 hour. , Form into 1-in. balls; place 2-in. apart on greased baking sheets. Flatten cookies slightly with fingers; sprinkle each with 1 teaspoon pecans. Bake at 350° for 10 minutes. Cool on wire racks. , Meanwhile, for icing, combine the brown sugar and cream in a saucepan. Cook over medium-high heat until sugar is dissolved and mixture comes to a boil, stirring constantly. Remove from the heat; blend in confectioners' sugar until smooth. Drizzle over cookies.

Easter just wouldn't be the same without chocolates! Follow our step-by-step, illustrated recipe and indulge with these delicious chocolates with a rich praline filling.

500g Alunga™ milk chocolate couverture
5g Mycryo cocoa butter
For the filling:
15g Inaya™dark chocolate couverture
30g Alunga™ milk chocolate couverture
100g hazelnut paste
50g Favorites almond and hazelnut praline paste
12g Mycryo cocoa butter or cocoa butter

Steps:

  • Before starting this Chocolates with Praline Filling recipe, organise the necessary ingredients for the tempering process.
  • Melt the chocolate in the microwave, working in periods of 1 minute. Make sure you don't melt the chocolate for too long so it doesn't burn. Stir the chocolate during every interval until melted completely.
  • Stir the melted chocolate with a rubber spatula. At this stage, the temperature should be between 40 and 45°C maximum. The use of a laser thermometer is recommended for this operation.
  • Wait until the temperature goes down to 35°C. To speed things up, transfer the chocolate from one bowl to the other.
  • The temperature is gradually cooling down (38.2°C in the picture).
  • Combine well with a rubber spatula until cooled down to the desired temperature. Try to combine constantly.
  • The temperature is now at 35.4°C.
  • Add Mycryo cocoa butter (1% of the total weight of chocolate). We need 5 grams for this recipe. Sift the powder through a fine sieve.
  • Combine the Mycryo cocoa butter carefully with a rubber spatula and incorporate to the warm chocolate.
  • Continue stirring while monitoring the temperature. Milk chocolate needs to cool down to 28°C.
  • You will notice the temperature is slowly cooling down...
  • ... 30.6°C...
  • ... 29.4°C...
  • ... 28,9°C...
  • ... and eventually the desired 28°C. The process and temperatures are exactly the same for white chocolate. The difference with dark chocolate is the final temperature (31°C instead of 28°C).
  • Fill the cavities of the mould of your choice. For this recipe I used a chocolate mould with swirled round shapes. No matter what mould you use, make sure the cavities are deep.
  • Fill the cavities up to the top, even overflowing a little. From now on, the chocolate should be maintained at a temperature of 28°C.
  • Using the handle of a chocolate spatula, tap on the sides of the mould to remove air bubbles. This will prevent the formation of air bubbles on the surface of the chocolates.
  • Flip the mould over the chocolate bowl to empty the cavities. Let the chocolate to drip off.
  • Tap the side of the mould with the spatula to get rid of the excess.
  • Place the mould on your workbench and scrape the surface with the spatula to remove any chocolate excess.
  • Leave to crystallize for now.
  • Flip the mould onto a sheet of greaseproof paper...
  • ... and leave to cool at room temperature.
  • For the praline filling: Organise all the ingredients.
  • In a bowl, place the Mycryo cocoa butter or cocoa butter mass. Both types can be used for this recipe. Add the dark and milk chocolate. Melt in the microwave.
  • Combine the melted cocoa butter and chocolate together carefully with a rubber spatula.
  • In a separate bowl, place the almond and hazelnut praline paste...
  • ... add the artisanal hazelnut paste...
  • ... and combine with the spatula.
  • Add the chocolate and cocoa butter preparation...
  • ... and combine with the rubber spatula.
  • The preparation should be around 25°C.
  • Transfer the preparation in a piping bag...
  • ... close the bag...
  • ... and lay it flat on the worktop surface.
  • At this stage, the chocolate is partially crystallized. You might notice some chocolate shells are already detached from the mould, thanks to the see-through material. This means the tempering process has been done correctly.
  • Flip the mould on your workbench...
  • ... with the cavities facing up.
  • Using the chocolate spatula, scrape the surface of the mould.
  • Cut the tip of the bag containing the praline filling in order to obtain a diameter of 0.5 cm. Fill all cavities and leave a 3mm gap on top. This gap is important to close the shell.
  • At this point, the chocolates should look like this. Place in the fridge for 10 to 15 minutes.
  • Take the mould out of the fridge when the filling has set.
  • Cover all the cavities with a layer of tempered chocolate...
  • ... using a piping bag for a more precise operation.
  • Tap with the spatula handle to get rid of air bubbles.
  • Scrape the surface again.
  • Leave to crystallize in the fridge for 20 minutes.
  • Take the mould out of the fridge and flip it on your workbench. Slightly twist the mould to release the chocolates. The chocolate should come away from the mould very easily.
  • Collect all the chocolates...
  • ... and store them in the fridge.
  • Enjoy these delicious chocolates! They should have a glossy finish without any white marks.

1 box betty crocker triple chocolate fudge cake mix
2 eggs
1/3 c vegetable oil
1/2 c semi-sweet chocolate chips
FOR THE PRALINE ICING
1 c chopped pecans
1 c firmly packed light brown sugar
1/3 c whipping cream
1/4 c salted butter
1 c powdered sugar
1 tsp vanilla extract
TIP: IF YOU CAN NOT FIND THE BETTY CROCKER TRIPLE CHOCOLATE FUDGE CAKE MIX THEN FEEL FREE TO USE A REGULAR CHOCOLATE FUDGE CAKE MIX, BUT YOU WILL HAVE TO ADD AN ADDITIONAL 1/2 CUP OF CHOCOLATE CHIPS.

Steps:

  • 1. Preheat the oven to 350 degrees. Mix together cake mix, eggs, and oil until powder is completely dissolved together.
  • 2. Next add the 1/2 cup of chocolate chips. Mix well.
  • 3. Grease a cookie sheet and drop by spoon fulls onto pan. I like to use my cookie scoop for more uniform cookies. Bake 9-12 min until done. The cookies will come out soft but will harden up a little when it cools. They will be nice a chewy.
  • 4. FOR THE FROSTING: While cookies are cooling bring the brown sugar, whipping cream, and butter to a boil in a 2 quart sauce pan over medium heat, stirring often; boil for 1 min.
  • 5. Remove the pan from the heat and whisk in the powdered sugar, and vanilla until smooth. Stir in chopped pecans. Stirring gently for 2-4 minutes or until mixture begins to cool and thicken slightly.
  • 6. With the cookies on a cooling rack, place a sheet of aluminum foil under the cooling rack. Then spoon the icing over the cookies. Let the icing set and then enjoy!

¼ teaspoon salt
1 egg white
1 teaspoon vanilla extract
2 cups chopped pecans

Steps:

  • Preheat oven to 275 degrees F (135 degrees C). Grease a baking sheet or line it with parchment paper.
  • Whisk sugar, flour, and salt; set aside.
  • In separate bowl, beat egg white until stiff. Fold sugar mixture into stiffened egg white. Add pecans and vanilla. Stir gently.
  • Drop by teaspoonfuls onto prepared baking sheet. Bake in preheated oven until browned, 25 to 30 minutes. Cool 5 minutes on baking sheet, then remove to wire rack to cool completely.

  • Line 2 cookie sheets with wax paper.
  • In a heavy 3 quart saucepan combine sugar,brown sugar,cocoa and light cream.
  • Cook over medium heat,stirring constantly until mixture boils.
  • Reduce heat to low,cook stirring occanionally to 234 degrees (soft ball stage).
  • Remove from heat.
  • Add butter and vanilla.
  • DO NOT STIR.
  • Cool at room temperature to 160 degrees.
  • Add pecans,Beat with wooden spoon just until mixture begins to thicken (about 1-2 minutes) but is still glossy.
  • Quickly drop by teaspoonfuls onto cookie sheet.

2½ cups all-purpose flour
¾ teaspoon baking soda
1 cup brown butter (Click here to learn how to make it), (softened )
1 cup granulated sugar
¾ cup packed golden brown sugar
1 teaspoon salt

2 large eggs
2 cups semisweet chocolate chips

Steps:

  • Set the oven. Place a rack in the center and upper third of the oven and preheat to 350°F.
  • Prep baking sheets and toast pecans. Line two baking sheets with parchment paper, and spread an even layer of the pecans on one of them. When the oven is preheated, toast the pecans until they are becoming a bit browned and are very aromatic. Remove from the oven, place in a small bowl and set aside to cool.
  • Make the batter. In a medium-sized mixing bowl, combine the flour and baking soda. Set aside.In a large mixing bowl, combine the brown butter with the sugars, salt and vanilla. Mix for about 2 minutes with a large wooden spoon, an electric hand mixer or in a stand mixer, fitted with a paddle attachment.Add the eggs and mix until it's a smooth batter.Now add the dry ingredients and mix just until it's incorporated. Set aside.
  • Grind the pecans and add them. Add the cooled, toasted pecans to a food processor fitted with the blade attachment and blend until they are finely ground.Fold the ground pecans and chocolate chips into the batter.
  • Shape. Use a small (approx. 1 inch) cookie scoop or spoon to shape the batter onto the prepared baking sheets -- they should be about a tablespoon each.

1/2 cup butter, softened
1 cup packed brown sugar (I use light brown)
2 teaspoons baking powder
1 egg
2 teaspoons vanilla extract
2 cups all-purpose flour
1 cup toasted chopped pecans or 1 cup walnuts
1/2 cup semi-sweet chocolate chips
1 teaspoon shortening

Steps:

  • Set oven to 375°F.
  • Cream butter and brown sugar together with an electric hand mixer, or if you would rather do it by hand, a heavy spatula will work.
  • Add the baking powder and egg until the mixture looks smooth and creamy.
  • Beat in the vanilla extract.
  • Slowly beat the flour into the mixture, a quarter cup at a time until you use all the flour.
  • Add your pecans or walnuts. (I have used both together, and apart, either way they taste wonderful! In fact I have even altered this recipe and used ground almonds).
  • If you think the dough is too warm you may want to put it in the freezer. When I bake in the winter I often will put all my cookie doughs in the freezer for fifteen minutes before working with them. If the dough is too warm, it will spread while baking and you will get pancakes rather then cookies :).
  • Take the dough from the freezer and drop it by the teaspoon onto an ungreased cookie sheet approx 2 inches apart.
  • Bake for 8-10 minutes until the cookie looks golden, when you lift the cookies they should have an even color on the bottom.
  • Cool the cookies on a wire rack until they are cool to touch.
  • While the cookies cool gather your semisweet chips and vegetable shortening in a small sandwich baggie. If you want you can use a chocolate melting double boiler. Personally I like to do things the quick and easy way, so take your baggie of chocolate and shortening and seal it closed, then put it in a bowl of warm water. Wait approximately five minutes and the chocolate should have melted. If not repeat with warmer water. Use your finger to make sure the chocolate and shortening have mixed.
  • Using a scissors snip the corner of the sandwich baggie and drizzle the chocolate over the cooled cookies. For small drizzles make only a slight cut in the corner of the bag, for larger chocolate lines, make a larger cut. I usually make designs on the cookies with the chocolate. Simple criss cross lines look elegant and sophisticated.
  • These cookies are one of my favorites, and I often bring them to parties or special occasions because of their beautiful appearance and interesting flavor.
  • **To Toast Nuts**.
  • Set oven to 350°F.
  • Place nuts on baking sheet in a single layer.
  • Bake for approximately 5-8 minutes checking frequently, and stirring them about on the sheet. They should become a golden bronze color, depending on the nut. The toasting of nuts will allow for a richer flavor usually.

½ cup evaporated whole milk
3 tablespoons light corn syrup

Steps:

  • Line a baking sheet with parchment paper.
  • Stir white sugar, light brown sugar, evaporated milk, corn syrup, and cocoa powder in a saucepan and bring the mixture to a full rolling boil over medium heat. Reduce heat to medium low and cook, stirring constantly, until the syrup reaches 220 degrees F (104 degrees C) when measured with a candy thermometer. A small amount of syrup dropped into cold water should form a soft ball that flattens when removed from the water and placed on a flat surface.
  • Remove pan from heat and stir in marshmallows, vanilla extract, butter, and pecans, beating the candy by hand until creamy and the candy begins to to set up slightly at the edges of the pan, about 10 minutes.
  • Drop the warm candy by teaspoons onto the parchment paper; allow room for pralines to spread slightly. Cool the candy thoroughly before serving.

1/2 cup (1 stick) unsalted butter, at room temperature
1 1/2 cups packed dark brown sugar (you can use light brown)
1 large egg
1 tsp vanilla extract
2 1/4 cups all purpose flour
1 1/2 tsp baking soda
1/2 tsp salt
2/3 cup heavy cream
1/2 cup brown sugar
1 1/3 cups confectioner's sugar (sifted)
1 cup finely chopped pecans

Steps:

  • Set oven to 350F
  • Line a heavy duty baking sheet with parchment paper.
  • Cream the butter and sugar together until light and fluffy. Beat in the egg and vanilla.
  • Toss the flour, soda, and salt together to blend well, and then add to the butter mixture, beating just until the dough comes together and everything is well incorporated.
  • Use a 1 1/2 inch cookie scoop to scoop out the dough onto the baking sheet. Space the cookies 2 inches apart. Bake for 10-12 minutes (mine took exactly 11 minutes.) Cool the cookies for a few minutes on the pan so they can set, and then transfer to a cooling rack.
  • To make the frosting put the cream and sugar in a saucepan and bring to a boil, stirring constantly. Break up any lumps in the brown sugar while you stir. Once it comes to a boil, boil for 2 minutes (set the timer.)
  • Remove from the heat and whisk in the confectioner's sugar until smooth.
  • Let the praline cool a little bit so it thickens up, and then spread onto the cookies. Note: if your praline is very thin, beat in more sifted confectioner's sugar.
  • Top right away with the chopped nuts. The praline will harden as it cools.

1 cup packed light brown sugar
1 cup granulated sugar
3/4 cup evaporated milk
4 tablespoons (1/2 stick) unsalted butter, cut into small pieces
1/4 teaspoon baking soda
2 cups pecan halves, toasted
1 teaspoon vanilla extract
1/2 teaspoon kosher salt
2 cups dark chocolate chips
Flaked sea salt, optional

Steps:

  • Line a baking sheet with parchment paper or a silicone baking mat and have a tablespoon-sized cookie scooper ready.
  • Add the brown sugar, granulated sugar, milk, butter and baking soda to a medium heavy-bottomed pot over medium-high heat. Cook, stirring with a wooden spoon occasionally, until the sugars are dissolved and the mixture begins to boil. Clip a candy thermometer onto the side of the pot and continue to cook until the mixture reaches between 235 to 240 degrees F. Remove the pot from the heat and allow the mixture to cool for 5 minutes. Add the pecans, vanilla and salt and stir vigorously with a wooden spoon until the candy begins to dull and the mixture starts to thicken, about 4 minutes. Working quickly, drop heaping tablespoon-sized mounds with the cookie scooper onto the prepared baking sheet (see Cook's Note). Cool completely until set and the pralines have reached room temperature, about 30 minutes.
  • Add the chocolate chips to a heat-resistant metal or glass bowl set over a pot of simmering water and stir until completely melted. Remove bowl from the heat. Using a spoon, add a dollop of chocolate on the top of each of the praline mounds and use the back of the spoon to spread slightly and create a swirl in the chocolate. Sprinkle with the flaked sea salt, if using. Let cool completely until set (see Cook's Note). Store in an airtight container at room temperature or in the refrigerator with wax paper between the layers of pralines.

CHOCOLATE-ALMOND PRALINE COOKIES

3/4 cup skin-on almonds
Nonstick vegetable oil spray (optional)
1/3 cup granulated sugar
5 tablespoon unsalted butter
3/4 cup all-purpose flour
1/2 teaspoon kosher salt
1/4 teaspoon baking soda
1/3 cup (packed) light brown sugar
1 large egg yolk
1 teaspoon vanilla extract
1/3 cup bittersweet chocolate wafers (disks, pistoles, fèves) or chocolate chips
Flaky sea salt

Steps:

  • Place racks in upper and lower thirds of oven; preheat to 350°F. Toast almonds on a rimmed baking sheet on upper rack, tossing halfway through, until slightly darkened in color and fragrant, 6-8 minutes. Let cool.
  • Gather almonds into a tight pile on a nonstick silicone baking mat or a rimmed baking sheet coated with nonstick spray. Cook granulated sugar in a small saucepan over medium heat, undisturbed, until it begins to liquefy and turn golden brown around the edges. Use a heatproof rubber spatula to incorporate melted sugar into unmelted sugar and continue to cook, stirring occasionally, until all sugar is melted and caramel turns a medium amber color, 6-8 minutes. Carefully pour caramel over almonds and let cool.
  • Break almond mixture into large pieces and transfer to a food processor. Process, scraping down sides occasionally, until praline paste is very smooth and creamy (it should be as smooth as peanut butter with a slightly oily sheen; this takes time, so be patient), 12-16 minutes.
  • Cook butter in a medium skillet over medium heat, swirling occasionally, until it foams, then browns, about 5 minutes. Let cool until just warm.
  • Whisk flour, kosher salt, and baking soda in a medium bowl. Using an electric mixer on medium-high speed, beat brown butter, praline paste, and brown sugar in a large bowl until mixture is smooth, about 2 minutes. Reduce speed to medium, add egg yolk and vanilla, and beat just to combine. Reduce speed to low and gradually add dry ingredients. Mix until mostly combined. Using a wooden spoon, mix in chocolate. Scrape out dough onto a sheet of parchment paper and roll up into a 1 3/4"-diameter log. Chill until very firm, at least 2 hours.
  • Reheat oven to 350°F. Slice dough into generous 1/4"-thick slices with a serrated knife and place on 2 parchment-lined baking sheets, spacing 1" apart. Sprinkle with sea salt and bake until cookies are firm around the edges and slightly darker, 9-10 minutes. Let cool on baking sheets.
  • Do Ahead
  • Praline paste can be made 1 week ahead; store airtight at room temperature. Dough can be made 3 days ahead; wrap in plastic and keep chilled, or freeze up to 1 month.

150g hazel nuts
2.25 cups plain flour
0.75 cup oats
200g dark chocolate chunks
200g white chocolate chunks

Steps:

  • Roast or grill the hazel nuts. Cool. Grind to a rough powder. (If you're using salted hazelnuts, reduce the added salt to half a teaspoon.) Break chocolate into chunks. Cream the butter and 2 sugars. Add the eggs - and cream again. Mix in the salt and vanilla. Mix in flour, oats and powdered nuts. Mix in chocolate chunks. Put cookie dough in the fridge to get cold - about 2 hours at least. Set oven too 200 celcius. Form dough into egg-shaped balls - and place on a greased baking tray. Bake for 16 minutes - or until golden-brown. Remove and cool. Served best warm or fridge-cold.

  • Break almond mixture into large pieces and transfer to a food processor. Process, scraping down sides occasionally, until praline paste is very smooth and creamy (it should be as smooth as peanut butter with a slightly oily sheen; this takes time, so be patient), 12–16 minutes.
  • Cook butter in a medium skillet over medium heat, swirling occasionally, until it foams, then browns, about 5 minutes. Let cool until just warm.

  • Spread almonds on a baking sheet lined with parchment paper. Roast for 6-8 minutes, tossing half way through their total time. Let cool. Place them into a tight group, so they are on top of and as close together as possible.
  • While the almonds are cooling, make your praline. Cook granulated sugar in a small sauce pan over medium heat. Do not disturb. Wait until it begins to liquify and turn golden brown around the edges. Using a rubber spatula to incorporate any unliquified sugar into the liquified. Stirring until it becomes a light brown or dark amber color. This will take about 6-8 minutes. Then pour over the top of your almonds (which are on your parchment paper). Set aside and let cool.
  • Take out a food processor. Break up the almond praline into rough pieces and place in the food processor. Process for about 4 minutes until you have an almond paste. You will need to scrape down the sides from time to time.
