OLD FASHIONED CHOCOLATE PIE
An old fashioned chocolate pie with a cooked custard type of filling. Egg whites are used to make the meringue on top.

Steps:
- Pre-bake the two pie shells. Set aside and let cool.
- Separate the egg whites from the yolks.
- Place egg whites in a clean glass or metal mixing bowl, let come to room temperature.
- Place egg yolks in a large mixing bowl.
- Add cocoa.
- Add vanilla flavoring.
- Add sugar.
- Add milk.
- Add flour.
- Mix well with an electric mixer.
- Place mixture in a sauce pot over Medium heat.
- Add the butter, stirring constantly as mixture heats up.
- Cook until mixture is thick, stirring constantly. About 10 minutes.
- Remove from heat and let mixture cool for about 10 minutes.
- Beat the egg whites until soft peaks form.
- Add the sugar.
- Add the Cream of Tartar.
- Beat egg whites until stiff peaks form.
- Divide the cooked chocolate mixture into the two pie shells.
- Divide the meringue over the top of the pies.
- Bake at 350F degrees until top is lightly browned.
- Remove from oven, place on wire racks to cool.
- Refrigerate, uncovered for 2-3 hours to firm up.
- Enjoy!
MINI CHOCOLATE PIES

- Start by preheating your oven to 325 degrees. Then place your mini pie crust on a baking sheet.
- Now in a saucepan you will add your milk and cream and whisk until it is warmed and simmering. Make sure to stir often to prevent burning.
- Add in your coffee and whisk until incorporated. Remove your chocolate pie filling from the heat.
- Now add in your sugar, salt, and both chocolates. Stir until the chocolate is fully melted down.
- In a small bowl add in your room temperature eggs, and whisk well. Then slowly stir them into the pie mixture. They have to be room temperature or they will cook into scrambled eggs.
- Pour the chocolate mixture into your tart shells, and bake for 15-20 minutes or until the chocolate filling is fully cooked.
- Place your mini chocolate pies on a cooling rack to cool down. Then serve and enjoy.
CHOCOLATE RASPBERRY POT PIES

- Crust: Cream the butter and sugar in a mixer fitted with a paddle attachment (or using a hand mixer) until fluffy. Add the egg yolk and vanilla and mix. Stir the remaining ingredients together, then add to the butter mixture and mix. Form the dough into a disk, wrap in plastic, and chill for 1 hour. Meanwhile, sprinkle a work surface with cocoa. Roll the dough out to about 1/8-inch thick, then cut rounds to fit the tops of the pies.
- Filling: Heat the oven to 375 degrees F. Combine the egg yolks, the whole eggs, and the sugar in a mixer fitted with a whisk attachment and whip until fluffy and light. Stir the melted chocolate into the egg mixture. Stir in the melted butter.
- Use a ladle or pitcher to divide the filling among 10 to 12 ramekins. Gently push 3 raspberries down into each one. Arrange the ramekins on a baking sheet. Bake the pie filling for 6 minutes. Remove the pies but leave the oven on. Top each pie with a round of chocolate crust and bake another 8 to 10 minutes, until crisp. Let cool slightly and serve with whipped cream. Or let cool completely and rewarm before serving. Serve the same day.

These are AWESOME. We made these for Valentine's for teacher gifts. They were so good. I use this dough for chicken pot pies, I will be adding that recipe shortly. It's a great to make the most out of your recipes.

- 1. Process the butter, cream cheese, and cream in a food processor, electric mixer, or by hand to thoroughly combine.
- 2. Add the flour and salt. Process just until combined and the dough holds together in a ball. Turn the dough out onto a well-floured surface. Divide into 2 pieces. Flatten into disks and wrap each in plastic wrap. Refrigerate for at least 30 minutes before rolling out. If the dough is chilled overnight, take it out 15 minutes before rolling out.
- 3. To form the pocket pies, work with half of a disk of dough at a time, rolling it out on a floured surface. Using an overturned bowl (about 3 inches across), cut out circles about 3 at a time from each piece of dough. After cutting out all your circles, gather all dough scraps, reroll, and cut out a final time. Place 1-2 chocolate bars on one side of a dough circle. Wet the edges of the dough with the water. Fold the dough over to form a half circle. Pinch the edge of the dough together. Crimp the edge with a fork. Repeat the process until all the filling is used.
- 4. Place the pocket pies on the prepared baking sheet and chill for a few minutes. Prick each pie on top twice with a fork. When ready to bake, beat the egg with 1 tablespoon water. Brush the egg wash over each pocket pie. Bake for 20 to 25 minutes, until golden brown. Let rest for 5 minutes before serving.

DOUBLE CRUST CHICKEN POT PIE

- Prepare the pie crust as directed in my pie crust recipe, including chilling for at least 2 hours. I usually make the crust the night before. The pie crust recipe makes 2 crusts and you'll be using both crusts.
- In a large saucepan, combine chicken, carrots, and celery. Add water to cover and boil for 12 minutes. Remove from heat, drain, and set aside.
- In a large skillet, cook the butter, onions, and garlic over medium heat, stirring occasionally. Cook until the onions are translucent and the butter is lightly browning. Whisk in the flour, salt, black pepper, thyme, chicken broth, and half-and-half. Cook and whisk until no flour lumps remain, then simmer over medium-low heat until thick. I simmer mine for 10 minutes. You want it to be a very thick gravy; simmer longer if necessary. Taste and add more seasonings if you prefer. Sometimes I add more thyme. Remove from heat and set aside.
- Preheat oven to 425°F (218°C).
- After the pie dough has chilled: On a floured work surface, roll out 1 half of the chilled pie dough. Turn the pie crust dough about a quarter turn after every few rolls until you have a circle 12 inches in diameter. Carefully place the dough into a 9-inch pie dish. Tuck it in with your fingers, making sure it is smooth. With a small and sharp knife, trim the extra overhang of dough and discard. Place the chicken mixture on top. Top with frozen peas. Pour gravy over top. Roll out 2nd half of pie crust dough just as you did the first. Cover the pie with the 2nd crust and trim the extra overhang off the sides. Seal the edges by crimping with a fork or your fingers. With a small and sharp knife, slice a few small slits in the top crust for steam to escape. Using a pastry brush, brush crust and edges with beaten egg.
- Bake for 32 - 38 minutes, or until crust is golden brown. I use a pie crust shield to protect the edges from browning too much too soon. Cool for 10 minutes before serving. Makes amazing leftovers- the filling is so thick on the next day! Reheat as desired. Leftovers keep well in the refrigerator in an airtight container for up to 5 days.

- If using a store bought frozen crust, prick the bottom of the crust with a fork several times. Then blind bake the pie crust in the oven at 375F for about 30 minutes or until gold brown (see notes below if using a fresh made pie crust). Remove from oven and allow to cool completely on a rack.
- In a large mixing bowl or stand mixer, add heavy whipping cream, powdered sugar and vanilla. Use a hand held mixer or a stand mixer with whisk attachment, whisk on high for approximately 5 minutes or until stiff peaks form. Pause whisking occasionally to test how the peaks are forming when the whisk is raised from the cream. Once they're holding their shape in stiff peaks, it's ready. Place bowl in fridge to keep cool.
- In a medium size microwave safe bowl, melt chocolate chips on high for 1 minute, stirring after 30 seconds. Repeat until chocolate is smooth and completely melted if more time is necessary. Add 1 cup of whipped cream and stir well until blended. Add 1/4 cup coconut to chocolate cream. Spread chocolate mixture evenly in the bottom of the cooled pie crust.
- In a large bowl, beat milk and pudding with a whisk for about 2 minutes or until pudding starts to firm up. Spread pudding evenly on top of chocolate layer in crust.
