These easy no bake chocolate peanut butter granola bars are the perfect make ahead healthy snack or on-the-go breakfast that kids will love!

¼ cup honey
¼ cup unsalted butter
⅓ cup brown sugar
1 teaspoon vanilla extract
¼ teaspoon Kosher salt
½ cup creamy peanut butter
2 ½ cups old-fashioned rolled oats
½ cup roasted salted peanuts
¼ cup mini chocolate chips

Steps:

  • Line a 9x9-inch baking dish with parchment paper so that some of the parchment hangs over two sides. Spray with cooking spray.
  • Add the honey, butter, and brown sugar to a medium saucepan. Cook over medium heat until the butter melts and the sugar dissolves, stirring occasionally. Let the mixture come to a light bubble for 1 minute while stirring.
  • When the butter mixture is ready, remove it from the heat, and stir in the vanilla, salt, and peanut butter.
  • Add the oats and the peanuts to the saucepan, and stir to combine. Make sure none of the oats are dry.
  • Place all of the oat mixture in the prepared pan. Use a rubber spatula or the bottom of a greased measuring cup to press firmly the mixture into the pan very well.
  • Let this cool for about 10 minutes before sprinkling the mini chocolate chips over the top. Press the chocolate chips into the granola bars with the bottom of a measuring cup.
  • Let the granola bars cool for at least 2 hours. Lift the bars from the pan using the edges of the parchment, and place them on a cutting board. Cut into desired shape and size and serve.

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line a 9x13-inch baking sheet with aluminum foil; coat with cooking spray.

  • Melt peanut butter and honey together in a saucepan over medium heat. Dissolve brown sugar into the peanut butter mixture; bring to a simmer for 2 minutes.

0.25 cup light-color corn syrup
0.25 cup peanut butter
3 tablespoon packed brown sugar
2 tablespoon butter

0.75 cup coarsely broken pretzel sticks

Steps:

3 heaping cups rolled oats ((gluten-free for GF eaters))
2 Tbsp organic cane sugar ((or sub granulated))
1/4 cup olive, avocado, or melted coconut oil
1/4 cup creamy natural salted peanut butter
1/4 cup maple syrup or agave nectar ((or sub honey if not vegan))
1/3 cup dairy-free dark or bittersweet chocolate chips ((minis would work great, too!))

Steps:

  • Preheat oven to 340 degrees F (171 C).
  • In a large mixing bowl, combine oats and sugar. (Note: this helps add an extra crispiness to the final product and sweetens it up a bit more. But if you're sugar conscious, it's optional. However, I recommend it!)
  • Warm peanut butter, oil, and maple syrup or agave in a small skillet or saucepan until thoroughly combined and pourable.
  • Pour over oats and quickly toss/stir to combine. If it appears too wet, add more oats (mine was just right).
  • Spread evenly on a large baking sheet (or two small baking sheets) and bake for 18-22 minutes, or until evenly golden brown. Watch closely as it tends to brown quickly near the end. IMPORTANT: Toss once around the 15-minute mark to ensure even baking.
  • Remove from oven, toss gently to release heat and let cool completely on the pan.
  • Transfer to mixing bowl or storage container and add chocolate chips (optional) and stir or shake.
  • Eat with almond milk - my favorite. Sliced bananas take it to the next level.
  • Will keep fresh for up to two weeks. Freeze after that.

1.5 cups all-natural creamy peanut butter*
1 cup honey
2 tablespoons coconut oil
1 teaspoon pure vanilla extract
2 cups rolled oats*
1.5 cups quick cooking oats*
½ cup mini chocolate chips
½ cup chopped peanuts
Flakey sea salt, for garnish

Steps:

  • Line a square 9×9-inch pan with parchment paper and spray it very lightly with non-stick baking spray.
  • Add the peanut butter, honey, and coconut oil to a large, microwave-safe bowl. Microwave for 1 minute.
  • Stir together the peanut butter mixture until it is smooth and thick. Add the vanilla and stir to combine.
  • Next add the oats and fold them, making sure to get the oats evenly coated with the wet ingredients.When the oats are almost fully incorporated, add half of the chocolate chips and half of the peanuts. Continue folding until they are fully combined.
  • Transfer the mixture to your prepared pan and spread it out evenly with your spatula. Sprinkle over the remaining chocolate chips and peanuts.
  • Place a piece of parchment paper on top of the granola bars and press them into the pan. You want to pack them very tightly so they stay together!
  • Transfer the granola bars to the fridge to chill for at least 2 hours- make sure to leave them covered with the parchment paper on top!

  • Prepare an 8-by-8-inch baking pan by lining it with foil leaving overhang, spray with cooking spray; set aside. In a large microwave-safe bowl combine corn or brown rice syrup (I suspect maple syrup or agave are not quite sticky enough to properly bind the ingredients so bars will hold together), peanut butter, brown sugar, and heat on high power for 1 minute; stir to combine mixture. Heat for 1 more minute on high power and stir to combine.
  • Add vanilla, cinnamon, salt, and stir to combine. Add oats and stir to combine. Add rice cereal and gently stir to combine so it doesn't become too crushed. Add the raisins and fold to incorporate. Add the chocolate chips and quickly and gently fold to combine so chips don't begin to melt. Pour mixture into prepared pan and pack it down firmly with a spatula or hands, and place pan in the freezer for at least 1 hour, or until bars have set up.
  • Slice bars into desired sizes and shapes; I prefer 10 bars cut into rectangles about 4-inches long by about 3/4-inch wide, similar in size and shape to a Quaker Chewy Granola Bar; choose any shape and size desired. Bars will keep in an airtight container or wrapped in plasticwrap at room temperature or in the refrigerator for up to 1 week, or can be frozen for up to 3 months.
