- Peel bananas and cut in half. Place popsicle sticks inside bananas and put on tray with parchment paper.
- Freeze for 1 to 3 hours depending on how firm you want your bananas to be.
- Heat peanut butter in microwave at 30 second intervals until liquified.
- Coat bananas in peanut butter and sprinkle with mini chocolate chips.
- Set aside and freeze for an additional 20 minutes.

- Line a 9x5-in. loaf pan with plastic wrap, letting edges extend up all sides. Sprinkle with a third of the crushed cookies., In a large bowl, mix mascarpone cheese, sugar and vanilla; fold in whipped topping. Divide mixture evenly among 3 bowls., To 1 portion of cheese mixture, fold in sliced banana; add to loaf pan, spreading evenly. Repeat cookie layer. - Place a sheet of wax or parchment paper on baking dish or small tray. Peel bananas and slice into small coins, about 1/4 inch thick. Using a small knife, spread 1/2 tsp. peanut butter on each of half of the banana slices. Place another banana slice on top of each peanut butter-covered slice to create a "sandwich." Place banana "sandwiches" on the baking sheet or tray and put in the freezer for at least 3 hours.
