6 ounces salted roasted peanuts, 1 1/3 cups
1/2 cup light corn syrup
1/4 ounce unsalted butter, 1/2 tablespoon

2 1/4 cups sugar
9 ounces butter
5 eggs
3 egg yolks
3 cups cake flour
1 1/2 cups all-purpose flour
2 1/4 teaspoons baking powder
1 1/2 teaspoons salt
3/4 teaspoon baking soda
2 cups buttermilk
2 teaspoons vanilla
1 1/2 cups peanut brittle, recipe above, chopped into small pieces
2/3 cup mini chocolate shell candies
Butterscotch Caramel, recipe follows
Fudge Icing, recipe follows
Caramel Corn, recipe follows
Vanilla Buttercream, recipe follows
1 cup prepared butterscotch caramel topping (recommended: Mrs. Richardson's Butterscotch Caramel Topping)
1 tablespoon heavy whipping cream
Pinch salt
8 ounces butter
1 cup confectioners' sugar
3/4 cup unsweetened cocoa powder
1/4 teaspoon salt
3/4 cup corn syrup
1 teaspoon vanilla extract
8 ounces bittersweet chocolate, melted and cooled
1/2 cup packed light brown sugar
1/4 teaspoon salt
1ounce unsalted butter
2 tablespoons light corn syrup
1/2 teaspoon vanilla extract
1/4 teaspoon baking soda
4 cups popped unflavored popcorn
1/2 cup egg whites, from 3 large eggs
1 cup sugar
8 to 10 ounces unsalted butter, softened and cut into small pieces
1/4 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Grease a sheet pan with nonstick spray. Line 3 (12-cup) cupcake or muffin pan with paper cupcake liners.
  • For the Peanut Brittle:
  • Combine the sugar, peanuts, and corn syrup in a saucepan. Cook on medium heat until the mixture is golden in color. Remove the saucepan from the heat. Stir in the butter and baking soda. Working quickly, spread the mixture onto the greased sheet pan. Allow the mixture to cool slightly before using a spatula to spread the mixture out even further. Once cooled a little more, stretch the candy out to be thin. Once fully cooled, approximately 30 minutes, break the candy into small pieces. You will not need all this brittle for the cupcakes. The extra can be stored in a plastic storage container for snacking or a second batch of cupcakes!
  • For the Buttermilk Pound Cake:
  • In a large bowl, beat together the sugar and butter until smooth. Add in the eggs, 1 at a time. Scrape down the bowl and mix after each egg addition. In a separate bowl, sift together the cake flour, all-purpose flour, baking powder, salt, and baking soda. In a third bowl, mix together the buttermilk and vanilla extract. Add the dry ingredients and buttermilk mixture to the butter-egg mixture, alternating between the dry and wet ingredients. Fold in the chopped peanut brittle.
  • Using a medium-size ice cream scoop, scoop the batter into the prepared cupcake liners Add a layer of mini chocolate shell candies. Bake until the tops of the cupcakes lightly spring back when pressed and a toothpick inserted in the center comes out clean, about 20 to 22 minutes.
  • Warm the butterscotch topping, and then add the cream and salt, mixing until smooth. Allow the mixture to cool, and then transfer to a disposable pastry bag fitted with a small tip and use to fill the cupcakes. This is a little sticky and messy!;
  • In a food processor, blend the butter, sugar, cocoa, and salt until smooth. Add the corn syrup and vanilla extract. Blend again, making sure to scrape the sides of the food processor. Add the chocolate and pulse until completely combined. It should be smooth and creamy.
  • Place the brown sugar, salt, butter, corn syrup, and vanilla extract into a microwave-safe container, and cook on high power for 1 minute. Remove and stir until smooth. Place the container back in the microwave and cook again for another 2 minutes, or until the mixture is bubbling.
  • Remove the container from the microwave and stir in the baking soda. It will foam up. Spray a large stainless steel bowl with nonstick spray, and place the popcorn in it. Pour the hot mixture from the microwave over the popcorn, and toss until evenly coated. Spread the popcorn over a sheet tray and move it around until it is all separated. Allow the mixture to cool before layering on top of the fudge icing.
  • In a bowl, whisk together the egg whites and sugar. Heat them over a bain marie until hot and the sugar is melted. Pour the hot egg white-sugar mixture into the bowl of an electric mixer and whisk on high until the mixture is cooled. Switch to a paddle attachment. With the mixer running on medium-high speed, gradually add the softened butter until the frosting is thick, smooth and glossy. Add the vanilla extract, and mix until combined.
  • For the assembly:
  • Fill the cooled cupcakes with the butterscotch caramel. Spread the fudge icing on top. Sprinkle the caramel corn over the icing and top with a dollop of the vanilla buttercream. Top the buttercream with a mini chocolate shell candy.

1 cup Dutch-process cocoa powder
3 1/4 cups packed dark brown sugar
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1 1/4 cups buttermilk
2 large eggs, at room temperature
2 teaspoons vanilla extract
1/2 cup granulated sugar
1/4 cup creamy peanut butter
1/4 cup butterscotch chips
1 cup heavy cream
2 10-ounce bags peanut butter chips

Steps:

  • Make the cupcakes: Position a rack in the middle of the oven and preheat to 350 degrees F using the convection setting, if available. Line two 12-cup muffin pans with paper liners. Put the butter, cocoa powder and 3/4 cup water in a microwave-safe bowl, cover with plastic wrap and microwave until the butter melts, about 2 minutes. Whisk to combine, then whisk in the brown sugar.
  • Whisk the flour, baking powder, baking soda and salt in a large bowl. Whisk in the warm cocoa mixture. In another bowl, beat the buttermilk, eggs and vanilla; stir into the batter until just combined but don't overmix.
  • Divide the batter among the prepared cups, filling each three-quarters of the way. Bake until the cupcakes are slightly domed and spring back when lightly pressed, 25 to 30 minutes. Let cool in the pans 10 minutes, then transfer to racks to cool completely.
  • Make the brittle: Line a baking sheet with a silicone mat or parchment paper. Place the granulated sugar in a small saucepan over medium-high heat, bring to a boil and cook, swirling the pan but not stirring, until it turns amber. Remove from the heat; stir in the peanut butter and butterscotch chips until smooth. Immediately pour the mixture onto the prepared baking sheet, smooth into a thin layer with a spatula and let cool. Break the brittle into pieces, place in a resealable plastic bag and crush with a rolling pin.
  • Make the frosting: Bring the cream to a simmer in a small saucepan. Remove from the heat, add the peanut butter chips and let stand about 5 minutes. Whisk until smooth. Place the pan over a bowl of ice, stirring occasionally, until the frosting is spreadable, about 10 minutes. Spread on the cupcakes or transfer to a pastry bag with a large round tip and pipe on top; sprinkle with the brittle.

2 2/3 c all purpose flour
1 1/3 c firmly packed brown sugar
2/3 c granulated sugar
2/3 c butter
1 1/3 c buttermilk**
1 c crushed peanut brittle
1/3 c chopped nuts
2 eggs
1 1/2 tsp baking soda
1/2 tsp salt
1 1/2 tsp vanilla

Steps:

  • 1. Heat oven to 325*. Grease and flour a 12 cup Bundt Pan. (If using a 10-cup pan, fill to 3/4 full and make 3 or 4 cupcakes from remaining batter.)
  • 2. In a large mixing bowl, mix together flour, brown sugar, granulated sugar and butter until coarse crumbs form. Remove 1/2 cup flour mixture; mix with peanut brittle and nuts. Set aside.
  • 3. Add all remaining ingredients to flour mixture; mix well. Spoon half of the batter into a prepared pan. Spoon floured peanut brittle mixture over batter. Top with remaining batter.
  • 4. Bake at 325* for 55-60 minutes or until toothpick inserted in center of cake comes out clean. Cool 10 minutes.
  • 5. Remove from pan; cool completely on rack. If desired, sprinkle with powdered sugar or glaze of your choice.
  • 6. ** To substitute for buttermilk, use 4 teaspoons lemon juice or vinegar plus enough milk to make 1 1/3 cups.
  • 7. Variation: Toffee bars can be substituted for the peanut brittle. Use 4 (5 3/4 oz) bars. It is easier to crush toffee if it is frozen.

Meanwhile, in a large bowl, beat together the cake mix, oil, eggs, water, caramel syrup and peanut butter together with a handheld electric mixer for about 2 minutes or until blended. Distribute batter evenly among the cupcake tins, filling about 3/4" full.
  • Bake for approximately 15-17 minutes or until a toothpick inserted near the center comes out clean or with light crumbs. Cool the cupcakes completely while you prepare the frosting.
  • In the bowl of a stand mixer, beat together the butter, peanut butter, vanilla and caramel syrup with the paddle attachment until creamy and blended. Gradually add the powdered sugar, about one cup at a time, until frosting is light and fluffy. Add the milk if frosting is too thick.
  • Spoon the frosting into a disposable piping bag attached with a large open star tip. Pipe the frosting high onto the cooled cupcakes, then garnish with a couple of shards of peanut brittle. Top with caramel sundae syrup if you'd like! Serve immediately.
