Steps:
- Preheat oven to 400F.
- Line a baking pan with aluminum foil then spray the foil lightly with cooking spray.
- Melt butter in a medium sized, heavy-bottomed, saucepan set over medium-low heat. Add brown sugar and cayenne pepper (if using). While stirring gently and very slowly, bring the mixture to a boil slowly and over steady heat. Use a candy thermometer to check the temperature. Continue stirring very slowly and gently (it is a slow process). Boil 3-4 minutes or until the thermometer registers 270°-290°F and becomes lighter in color and "fluffier". Turn off the heat and add the oyster crackers."
- Now, working quickly so the brown sugar/butter mixture doesn't set up, pour the toffee/oyster crackers onto the prepared baking sheet and try to spread them out to a single layer. (If it is too difficult to spread the crackers into a single layer at this point, don't worry - it will be possible in a few minutes.)
- Sprinkle the crackers lightly with coarse sea salt or kosher salt.
- Place the crackers on a middle rack in the hot oven and bake 2 minutes.
- Remove the crackers from the oven and smooth them out to a single layer.
- Place back in the oven and bake for 3 more minutes.
- After a total 5 minutes baking time, remove from oven and place the pan on a cooling rack to cool for 5 minutes.
- Once they are cool enough to handle, pick up the edges of the aluminum foil that is under the crackers and bring the edges together so the crackers roll together.
- Remove from the foil, break into individual pieces and place on foil or parchment paper to cool completely.
- Store in an airtight container.

DIY OYSTER CRACKERS RECIPE
Steps:
- Adjust oven rack to middle position and preheat oven to 375°F (190°C). Combine flour, salt, sugar, and baking powder into a medium bowl and whisk to combine. Add butter and using a pastry cutter or fingertips, work into flour until it resembles coarse meal. Add water and lightly knead dough until it comes together into a ball.
- Set dough on a lightly floured surface and cover with an overturned mixing bowl. Allow to rest for 15 minutes.
- Roll dough out on a well floured surface to a thickness of 1/8 inch. Cut dough into 1/2-inch squares, rectangles, or diamonds. Transfer to a parchment-lined baking sheet and space the shapes out as much as possible.
- Bake until crackers are showing color around the bottom edges, about 15 minutes. Turn oven off and crack the door open about 8 inches. Leave crackers inside to cool and continue to crisp, about 30 minutes. Remove from oven, season with salt, and allow to cool completely. Crackers can be stored in a sealed container for up to a week.

- Whirl the first four ingredients in the bowl of a food processor. Add the butter and process until the mixture looks like coarse meal. Working quickly, turn on the food processor and pour the ice water through the feed tube, stopping before the dough comes together. Pinch a bit of the dough between your fingers. If it does not stick together, add a teaspoon more water and whirl briefly.
- Turn the dough out onto a large piece of plastic wrap. Use the plastic wrap to help you create a flat disk: fold the edges of the dough toward the center and press down to smooth out the roughness. Refrigerate dough for about 15 minutes.
- Roll the dough about 1/8-inch thick on a well-floured piece of parchment paper. Using a pizza cutter and a ruler, trim the dough into 1/2-inch squares, rectangles, or diamonds. Carefully transfer the cracker-lined parchment paper to a baking sheet. Don't worry about separating the crackers before baking.
- On the middle rack of an oven preheated to 375° F, bake the crackers until they just start to turn pale brown, about 15 minutes. Turn the oven off and crack the door open, leaving the crackers inside to cool and continue to crisp, about 30 minutes more. Remove from the oven and allow to cool completely. Separate crackers gently and serve. Store in a sealed container for up to a week.

- Lay a large piece of parchment or wax paper on the counter. Place a large stockpot over medium heat. Attach a candy thermometer to the side, making sure the tip reaches the bottom of the pot. Add the butter, sugar, and salt.
- Bring the sugar mixture to a rolling simmer, stirring the entire time. Continue gently stirring as it boils to keep the butter and sugar from separating, until the temperature reaches between 300-305 degreed F. If the butter and sugar separate, the candy will not have the proper texture. *Be careful; boiling sugar can be dangerous!
- Once you reach the desired temperature, immediately turn off the heat. Stir in the vanilla. Then gently pour in the oyster crackers and stir to coat well.
- Carefully, pour the crackers out on the parchment paper. Use a spatula to quickly separate the pieces, so they dry individually. **If your candy thermometer is accurate you reached the proper temperature, the candy will dry and harden on its own. It will have a light glossy sheen. If it stays sticky or looks crystalized, your candy thermometer is probably inaccurate. You can fix this by moving the candy onto a parchment paper lined baking sheet. Bake in a single layer at 450 degrees F for 5 minutes.
