Use your favorite combination of nuts to make this quick and easy chocolate nut bark.

2 cups semisweet, bittersweet or milk chocolate chips, melted (see Tip)
1 ½ cups assorted nuts, such as hazelnuts, almonds and cashews, plus more for garnish

Steps:

  • Line a rimmed baking sheet with foil. (Take care to avoid wrinkles.) Combine melted chocolate and nuts in a medium bowl. Scrape the mixture onto the foil and spread it into an approximate 12-by-9-inch rectangle. Sprinkle with additional finely chopped nuts, if desired. Refrigerate until set, about 20 minutes.
  • Transfer the bark and foil to a cutting board. Use a sharp knife to cut into 1 1/2-inch pieces.

I've been making these yummy candies for many years. With their three rich gooey layers, a little goes a long way. One batch is enough to please a crowd.

Number Of Ingredients 8

3 cups semisweet chocolate chips
2 cups creamy peanut butter
1 cup butter, cubed
1/2 cup evaporated milk
1/4 cup instant vanilla pudding mix
1 teaspoon vanilla extract
2 pounds confectioners' sugar
3 cups salted peanuts

Steps:

  • In a heavy saucepan over low heat, melt chocolate chips and peanut butter, stirring frequently. Pour half into a greased 15x10x1-in. pan; chill. Set remaining chocolate mixture aside. , In another saucepan, bring butter, milk and pudding mix to a boil; boil for 1 minute, stirring constantly. Remove from the heat; pour into a large bowl; add vanilla. Gradually stir in sugar. Spread over chocolate layer in pan; chill. , Add peanuts to reserved chocolate mixture; spread over filling. Chill. Cut into 1x1-1/2-in. pieces.

2 cups dry-roasted macadamia nut halves with sea salt
1/2 cup roughly chopped dried papaya
1/2 cup roughly chopped dried pineapple
10 ounces bittersweet chocolate chips (about 2 cups)
1/2 cup toasted coconut flakes, optional, to garnish
Hawaiian pink salt, optional, to garnish

Steps:

  • Line a 24-count mini muffin tin with cupcake liners. In a large bowl, mix together the macadamia nuts, papaya and pineapple.
  • Over a double boiler or in the microwave, melt the chocolate. Pour the melted chocolate over the nut and fruit mixture and stir to combine. The nuts and fruit should be completely coated in chocolate. Divide the mixture evenly among the cupcake liners, about 2 tablespoons in each. Sprinkle the toasted coconut or Hawaiian pink salt over the melted chocolate to garnish, if desired. Refrigerate to set for about 30 minutes.

8 oz good quality dark chocolate chips (although I've used Nestles semi-sweet chocolate chips and they are still very good)
1 c coarsely chopped walnuts, pecans or almonds (make sure the pieces are not too small)
1/2 c dried cranberries (Craisins) or you can use raisins

Steps:

  • 1. Line a small baking sheet with waxed paper.
  • 2. Place chocolate chips in a 2 cup Pyrex measuring cup and microwave on 50% power for approx 25 seconds - then stir well. Continue doing this until the chocolate chips are almost completely melted - reducing the time as you go. Be careful to not let the chocolate burn.
  • 3. Add the nuts and dried cranberries to the melted chocolate and mix well.
  • 4. Drop tablespoon fulls of the chocolate mixture onto the waxed paper-covered cookie sheet.
  • 5. Place in the fridge for at least 15 minutes. Enjoy.
  • 6. I like to store mine in the freezer.

2 2/3 cups sweetened flaked coconut
2 cups pecans (or your favorite, even mixed nuts would be good) or 2 cups walnuts, chopped (or your favorite, even mixed nuts would be good)
2 2/3 cups milk chocolate chips or 2 2/3 cups semi-sweet chocolate chips
chocolate chips, for drizzle (a different kind of chocolate from what you use in the clusters) (optional)

Steps:

  • Line 4 miniature muffin pans with candy cups; set them aside. (Or you can skip the paper candy cups and just drop these by the spoonful onto wax paper lined cookie sheets.).
  • Heat the oven to 350 degrees. Spread the coconut and nuts on separate cookie sheets.
  • Bake each until golden brown, about 9 minutes for the nuts and 10 for the coconut, stirring every few minutes to keep them from burning. Let them cool.
  • Combine the toasted coconut and nuts in a medium-size bowl. Melt the chocolate chips in the microwave according to the package directions.
  • Add the melted chocolate to the coconut mixture; stir well. Drop the mixture by heaping teaspoonfuls into the candy cups (or directly onto lined cookie sheets). Chill until set, about 45 minutes.
  • If desired, melt additional chocolate according to the package directions.
  • Pour the contents into a zipper bag. Snip off a small corner of the bag, then drizzle the chocolate over the clusters.
  • Chill until drizzle is set, about 15 minutes.
  • Store in an airtight container in the refrigerator.
