These cookies are your old classic boiled chocolate oatmeal cookie, but made lighter for those of us watching our weight!

1/2 cup light margarine
1/2 cup skim milk
2 cups Splenda sugar substitute
3 tablespoons cocoa
1/2 cup reduced-fat peanut butter
1 teaspoon vanilla
3 cups quick-cooking oats

Steps:

  • Bring margarine, milk, Splenda, and cocoa to a boil in medium saucepan. Boil for 1 minute.
  • Remove from heat. Stir in peanut butter and vanilla until combined.
  • Stir in oats.
  • Drop by spoonfuls on wax paper or parchment paper.
  • Allow to cool completely before eating.

1/2 cup butter
2 cups Splenda granular, sugar substitute (or 1 cup sugar and 1 cup splenda)
1/8 teaspoon salt
4 tablespoons cocoa powder
1/2 cup milk
3 cups oatmeal
1/2 cup peanut butter
1 teaspoon vanilla

Steps:

  • Bring this to a boil for 1 1/2 minutes butter, splenda, salt, cocoa, milk.
  • In large bowl mix oatmeal, peanut butter, vanilla.
  • Add boiled mixture, a little at a time until you have the consistency of a drop cookie. Put wax paper on a cookie sheet, use tablespoon to form balls, drop onto wax paper. Put cookies into freezer on the tray.
  • After a few hours put them into zip lock baggies. Keep the cookies in the freezer and eat them. You can eat them frozen, or let them defrost a bit.

1 Cup Splenda/Sugar Blend
8 tbsp light promise
1/2 cup 2% milk
1/3 cup cocoa
2 tsp vanilla extract

Steps:

  • Line cookie sheet with wax paper or foil.
  • Measure oats, and peanut butter and set aside.
  • Combine sugar, butter, milk, and cocoa in sauce pan and cook over medium heat stirring constantly until mixture comes to rolling boil.
  • Stir oats vanilla and peanut butter then remove from heat.
  • Stir till completely mixed.
  • Drop using tablespoon onto wax paper and allow to cool.

½ cup creamy peanut butter
2 teaspoons pure vanilla extract
2 cups quick cooking oats

Steps:

  • Stir sugar, milk, butter, and cocoa powder together in a saucepan over medium heat; bring to a boil and cook, stirring constantly, to dissolve sugar completely, 90 seconds to 2 minutes. Remove saucepan immediately from heat.
