1 (9 inch) pie shell, baked
1 cup semisweet chocolate chips
¼ cup white sugar
4 tablespoons water
1 teaspoon unflavored gelatin
1 tablespoon instant coffee powder
3 eggs
1 teaspoon vanilla extract
½ cup heavy whipping cream
2 tablespoons white sugar
2 tablespoons unsweetened cocoa powder
2 tablespoons confectioners' sugar
1 cup heavy whipping cream
½ teaspoon almond extract
½ teaspoon vanilla extract

Steps:

  • Sprinkle the gelatin on top of 2 tablespoons water; set aside. Separate the eggs. Lightly beat the egg yolks.
  • In a small saucepan, heat chocolate, 1/4 cup sugar, 2 tablespoons water, and coffee; stir constantly until melted. Add softened gelatin to the saucepan, and heat until completely dissolved. Remove pan from heat, and gradually pour chocolate mixture into beaten egg yolks, whisking constantly. Return the custard to the pan. Cook over medium-low heat, stirring constantly, until mixture thickens slightly. Remove from heat, and stir in 1 teaspoon vanilla. Transfer to a bowl and allow to cool to room temperature.
  • When chocolate mixture has cooled, beat egg whites to soft peaks. Gradually add 2 tablespoons sugar, and beat until stiff but not dry. Fold whipped egg whites into chocolate mixture. Whip 1/2 cup cream until stiff, and fold into chocolate mixture. Spoon into pie crust and refrigerate.
  • To Make Topping: Add cocoa and confectioners' sugar to 1 cup whipping cream. Chill mixture 30 minutes, then whip until stiff. Stir in almond extract and 1/2 teaspoon vanilla extract. Top the pie with this chocolate whipped cream. Chill pie several hours or overnight until set. Filling with be a little soft.

This impressive and insanely delicious dessert requires only six ingredients, but that can be your little secret. Italian chocolate-filled sandwich cookies make a crust reminiscent of a Kit Kat bar; you can also use chocolate wafer cookies. 1 oz. (2 Tbs.) unsalted butter, melted; more for the pan
8 oz. Italian chocolate wafer sandwich cookies, such as Quadratini, or other chocolate wafers, such as Famous
9 oz. semisweet chocolate, chopped (about 1-1/2 cups); more for garnish
1-1/2 tsp. pure vanilla extract
Pinch kosher salt
3-3/4 cups heavy cream

Steps:

  • Butter a 9-inch springform pan.
  • Grind the cookies in a food processor until they resemble wet sand, 20 to 30 seconds; you will have about 1-3/4 cups. Transfer to a small bowl and mix in the butter. Spread the crumbs in the pan, cover with plastic wrap, and press evenly into the bottom. Refrigerate.
  • Combine the chocolate, 1/2 tsp. of the vanilla, and the salt in a large bowl. In a small saucepan, bring 3/4 cup of the cream to a bare simmer. Pour the cream over the chocolate, let sit for 1 minute, then whisk until smooth. Cover and refrigerate for about 30 minutes to cool.
  • Beat 1-1/2 cups of the cream in a medium bowl with an electric mixer on medium-high speed to stiff peaks, about 2 minutes. Whisk the chocolate mixture to loosen it, and fold it into the whipped cream with a large silicone spatula until no streaks remain.
  • Carefully peel the plastic wrap off the crust and scrape the mousse into the pan, gently spreading it to the edges. Cover and refrigerate for at least 6 hours.
  • Just before serving, beat the remaining 1-1/2 cups cream and 1 tsp. vanilla in a medium bowl to medium-stiff peaks. Run a knife around the pie to loosen its edges and then remove the side of the pan. Slide a spatula under the crust and transfer the pie to a serving plate. Mound the whipped cream over the mousse and top with chocolate curls, shards, or shavings. To serve, dip a knife into hot water and dry it before slicing.

1 (9 inch) pastry shells, baked or 1 (9 inch) chocolate cookie pie crust
1 (14 ounce) can condensed milk (not evaporated milk)
2/3 cup water
1 (3 1/2 ounce) package chocolate pudding mix (not instant)
1 ounce unsweetened chocolate square
2 cups whipping cream, stiffly whipped

Steps:

  • In large saucepan, combine condensed milk, water and pudding mix; mix well. Add chocolate. Over medium heat, cook and stir rapidly until chocolate melts and mixture thickens. Remove from heat; beat until smooth.
  • Cool. Chill thoroughly; stir. Fold in whipped cream.
  • Pour into prepared pastry shell. Chill 4 hours or until set.

  • 1 block chocolate, at room temperature.
  • Using a swivel vegetable peeler, peel down the long side of the chocolate to make curls.

1/4 teaspoon salt
3/4 cup brandy

1 cup plus 2 tablespoons butter, softened
3/4 cup coffee
2 1/4 cups heavy cream
Chocolate crust

Steps:

  • Beat yolks in top of double boiler with 1 1/2 cups sugar, vanilla, salt and brandy, over simmering water, until mixture is thick. Remove from water and set aside.
  • Melt chocolates over hot water or over direct heat, carefully. Remove; beat in butter a little at a time. Gradually beat chocolate into yolks until mixture is smooth. Beat in coffee.
  • Beat whites until soft peaks form. Gradually beat in 3 tablespoons sugar until stiff peaks form. Beat one cup of whites into chocolate mixture to thin it. Then fold in remaining whites until well blended.
  • Whip cream until stiff and fold into chocolate mixture. Pour into prepared crust and chill overnight in refrigerator.
  • Or spoon mixture into 16 individual souffle dishes, each holding less than 1/8 cup.

28 Oreo cookies (320g, or sub other (gluten-free) cookies, *see recipe notes)
1/3 cup vegan butter (80g, melted)
2 cups non-dairy whipping cream (480ml, or sub coconut cream & coconut milk, *see recipe notes)
8 oz dark chocolate (225g, coarsely chopped (I used 70%))
3/4 cup non-dairy whipping cream (180g, or sub coconut cream & coconut milk, *see recipe notes)
6 oz dark chocolate (170g, coarsely chopped (I used 70%))
fresh fruit (e.g. figs, blackberries, blueberries)
shredded coconut

Steps:

  • In a food processor or blender, pulse the whole Oreos into fine crumbs. (Alternatively, put the cookies into a freezer bag and crush them using a rolling pin).
  • Transfer ground crumbs to a medium bowl, add melted vegan butter and stir until crumbs are evenly moistened.
  • Press the mixture onto the bottom and up the sides of a 9 or 9,5-inch (23/24cm) tart pan with removable bottom (or pie pan). Place in the fridge or freezer for 15 minutes to firm up (or bake it for a crispier result *see notes).
  • Place chopped chocolate in a heatproof bowl. Heat 1/2 cup of the non-dairy cream in a small saucepan until it begins to boil. Then immediately pour it over the chocolate and stir until smooth. Let come to room temperature.
  • In a mixing bowl, beat remaining chilled non-dairy cream with an electric hand mixer until stiff peaks form. Then gently fold in the chocolate mixture. Stir just until combined. Spoon into the prepared tart shell, smoothing out evenly. Refrigerate for 4 hours or until set.
  • Repeat step 1 of the chocolate mousse: Place chopped chocolate in a heatproof bowl. Heat the non-dairy cream in a small saucepan until it begins to boil. Then immediately pour over the chocolate and stir until smooth. Allow to cool to room temperature, then spread on top of the chocolate mousse. Refrigerate for another 30 minutes or until the ganache has set.
  • Decorate your tart with fresh fruit, shredded coconut or other toppings you like. Serve chilled and enjoy!

OREO COOKIE CRUST
1 pkg Oreo's (cheap chocolate cookies work just as well)
1/2 stick melted butter, enough to hold crumbs together
CHOCOLATE MOUSSE
12 oz semi-sweet chocolate
1 tsp vanilla
1 c heavy cream
WHIPPED CREAM TOPPING
2 c heavy cream
1/2 c sugar
1/2 tsp vanilla
GARNISH
shaved chocolate (Hershey bars taste the best)
additional whipped cream

Steps:

  • 1. Crush cookies (about 1/2 package for an 8-inch crust). Do more if you think it is not enough. Melt 1/2 stick of butter to hold the crust together. Add more butter if needed. For a pie shape you can use a pie tin, I use a spring form pan. Also is lovely with no crust and using champagne glasses or whatever fun shaped large or individual serving bowls/glasses you have.
  • 2. Melt cream, chocolate, and vanilla slowly in a double boiler. You can use a heat-proof bowl over a regular pot on the stove as well. Cool to room temperature.
  • 3. Beat two cups heavy cream, sugar, and vanilla, to stiff peaks.
  • 4. Fold whipped cream into the chocolate mixture.
  • 5. Pour into the prepared crust (can also make this in individual serving bowls). Chill 6 hours until set. I make this a day ahead.
  • 6. Top with additional whipped cream. I like to do a full layer of the whipped cream on the entire top of the pie and then garnish it with shaved chocolate. You can top with whipped cream on each individual piece and Oreo's as well.

  • Preheat oven to 350F. Oil a 7″ tart pan (the walls should be at least 1½” tall — like this one) with a removable bottom and set aside.
  • Process all crust ingredients into a fine sticky crumble in a food processor. Transfer this mixture into the tart pan and press down into an even thin flat crust along the base with your hands. Set aside.

  • Preheat oven to 350°F (177°C). Combine the Oreo crumbs and melted butter together in a medium bowl. Press tightly into the bottom and up the sides of an ungreased 9-inch pie dish. Bake for 18 minutes. Allow to cool completely. I do this the night before to save time!

(No need to wash or wipe the bowl/whisk attachment clean– you’ll make sweetened whipped cream in step 6.)
