Known in our family as Chocolate Garlic, thanks to a very clever (and probably concerned before she tasted them) girl. :) Again, from Williams Sonoma.

Number Of Ingredients 3

1/2 cup bittersweet chocolate, chopped
4 egg whites
1 cup sugar

Steps:

  • Preheat oven to 275°. Line 2 baking sheets with parchment paper.
  • Bring 2 inches water to a simmer in a saucepan.
  • Put chocolate in heatproof bowl and set over simmering water. Melt, stirring occasionally. Set aside to cool slightly.
  • In another bowl, combine egg whites and sugar. Place over simmering water and whisk until hot, 4 to 5 minutes. Transfer bowl to a mixer and beat on high speed until stiff peaks form and mixture is lukewarm, 4 to 5 minutes.
  • Remove bowl from mixer and drizzle melted chocolate over the egg whites, folding in with a rubber spatula until just marbled.
  • Use a soup spoon to drop batter in large mounds spaced 1 1/2 to 2 inches apart on the baking sheets.
  • Bake until crunchy outside and still chewy inside, 35 to 40 minutes.
  • Transfer pans to a wire rack and cool completely before removing the cookies from the parchment.
  • Store in an airtight container.

3 egg whites, at room temperature
1/4 teaspoon cream of tartar
3/4 cup granulated, superfine sugar
1 teaspoon vanilla
4 tablespoons unsweetened Dutch process cocoa, sifted

Steps:

  • Preheat oven to 200 degrees F. In a large bowl with an electric mixer beat the egg whites until frothy. Add the cream of tartar and granulated sugar 1 tablespoon at a time. Beat until the egg whites are stiff and shiny and the sugar granules cannot be felt in the whites. Beat in the vanilla, reduce speed to low and add cocoa until combined. With a spatula put the egg white mixture into a pastry bag fitted with a large star tip. Pipe 2-inch meringue "kisses" on a parchment paper lined baking sheet, at least 2 inches apart. Bake in the middle of oven for 2 hours. Turn off oven and leave the meringues in it for at least 2 more hours or until meringues are completely dry.

3 large egg whites
3/4 teaspoon vanilla extract
3/4 cup sugar
1/4 cup baking cocoa
GLAZE:
3 ounces semisweet chocolate, chopped
1 tablespoon shortening

Steps:

  • Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Add vanilla; beat on medium speed until soft peaks form. Gradually add sugar, about 2 tablespoons at a time, beating until stiff peaks form and sugar is dissolved. Gently fold in cocoa. , Insert a large open star tip into a pastry bag; fill half full with meringue. Pipe stars, about 1-1/4 in. in diameter, or drop by rounded teaspoonfuls onto parchment-lined baking sheets. , Bake at 300° for 30-35 minutes or until lightly browned. Remove from paper; cool on wire racks., In a microwave, melt chocolate and shortening; stir until smooth. Dip cookies halfway into glaze; allow excess to drip off. Place on waxed paper; let stand until set.

Egg whites
Sugar
Grated coconut or chopped pecans

Steps:

  • Put the cake cubes in a baking dish. You can sprinkle with some sort of liquid, such as simple syrup, juice, or alcohol, but it isn't necessary. Whip the egg whites until foamy, then add 2 tablespoons sugar per egg white and continue to whip until the whites hold firm peaks (you can do this by hand with a whisk, but it will be infinitely quicker and easier with an electric mixer). Pile the meringue thickly over the cake. Sprinkle with coconut or pecans. Bake in a 300°F oven until the meringue is lightly browned.
