Prize-Winning Recipe Fall 2010! Got ripe bananas? Stir 'em up with sugar cookie mix to make yummy banana bars.

1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
1/2 cup plus 2 tablespoons butter or margarine, softened
1 egg
3/4 cup mashed very ripe bananas
1/2 cup chopped walnuts
1 1/4 cups semisweet chocolate chips

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 9-inch square pan with cooking spray. In large bowl, stir cookie mix, 1/2 cup butter and egg until soft dough forms. Reserve 1 cup of the dough. To the remaining dough, add mashed banana and walnuts; mix well. Spread in bottom of pan.
  • In medium microwaveable bowl, microwave 3/4 cup of the chocolate chips with the remaining 2 tablespoons butter on High about 1 minute, stirring after 30 seconds, until melted and smooth. Add reserved cookie dough; stir until well blended. Drop chocolate dough by spoonfuls evenly over top of banana mixture; spread gently to almost cover. Swirl chocolate mixture into banana mixture with knife for marbled design.
  • Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes.
  • In small microwavable bowl, microwave remaining 1/2 cup chocolate chips on High about 1 minute, stirring after 30 seconds, until melted and smooth. Drizzle over bars. Cool completely, about 2 hours. For bars, cut into 5 rows by 4 rows. Store covered at room temperature.

2 1/3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup semi-sweet chocolate chips or 1/3 dark chocolate chips
1/3 cup peanut butter chips
2 medium bananas, mashed
3/4 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
2 large eggs
1 1/2 teaspoons vanilla extract
1/2 cup milk
1/4 cup unsweetened cocoa powder

Steps:

  • Preheat oven to 350 degrees F. Grease a 9-inch loaf pan.
  • In a medium bowl, sift together flour, baking powder, baking soda and salt. Whisk in chocolate and peanut butter chips until combined.
  • In a large mixing bowl, using a mixer on medium speed, beat together banana and peanut butter until creamy, about 1 minute.
  • Beat in granulated sugar and brown sugar until creamy, about 1 minute.
  • Beat in eggs and vanilla until combined.
  • Reduce mixer speed to low and gradually beat in flour mixture, alternating with milk, until well combined (about 2 minutes).
  • Divide half of the batter into medium bowl; sift in cocoa powder, and beat until combined.
  • Alternate spoonfuls of banana batter and chocolate batter into the pan. When all the batter is in the pan, swirl a knife sparingly through the batters to marble them. Sprinkle with additional chocolate and peanut butter chips, if desired.
  • Bake for 60-65 minutes or until bread pulls away from pan, is well risen, deep golden brown, and a toothpick inserted comes out with moist crumbs attached. Cool on a wire rack for 1 hour; run a knife around outer edges and invert onto wire rack to cool completely before slicing.

My sister gave me this recipe, which is always in demand with family, friends and co-workers. It's amazing how fast these tempting bars vanish when I serve them! The cream cheese frosting is heavenly.

1 cup butter, cubed
1/2 cup water
1-1/2 cups sugar
1/2 cup packed brown sugar
1 cup mashed ripe bananas (about 2 medium)
1/2 cup buttermilk
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 cup chopped pecans or walnuts
FROSTING:
1 package (8 ounces) cream cheese, softened
1/2 cup butter, softened
1 teaspoon vanilla extract
3-1/2 cups confectioners' sugar

Steps:

  • In a small saucepan, bring butter and water to a boil. Remove from the heat; set aside. In a large bowl, beat the sugars, bananas, buttermilk, eggs and vanilla until blended. Combine flour and baking soda; gradually add to sugar mixture. Beat in butter mixture until blended. Stir in nuts., Pour into a greased 15x10x1-in. baking pan. Bake at 350° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. , For frosting, in a large bowl, beat cream cheese and butter until light and fluffy. Beat in vanilla. Gradually add confectioners' sugar until smooth. Spread over bars. Store in the refrigerator.

3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1/4 cup butter, softened

2 eggs or 1/2 cup egg substitute
1/3 cup sour cream or 1/3 cup plain low-fat yogurt
1/2 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350°F.
  • Combine flour, baking soda and salt, stirring with a whisk.
  • Place sugar and butter in a large bowl and beat with mixer at medium speed until well blended (about 1 minute).
  • Add banana, egg substitute, and yogurt; beat until blended.
  • Add flour mixture, beat at low speed just until moist.
  • Place chocolate chips in a medium microwave-safe bowl and microwave at HIGH 1 minute or until almost melted, stirring until smooth.
  • Cool slightly.
  • Add 1 cup of batter to chocolate, stirring until well combined.
  • Spoon chocolate batter alternately with plain batter into an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray.
  • Swirl batters together using a knife.
  • Bake at 350°F for 1 hour and 15 minutes or until a wooden pick inserted in center comes out clean.
  • Cool 10 minutes in pan on a wire rack; remove from pan.
  • Cool completely on wire rack.
