These soft, cakelike cookies have a delicate hazelnut flavor—perfect for making great memories! They're baked in the distinctive shell-shaped madeleine pan, available in kitchen specialty stores. —Taste of Home Test Kitchen

Number Of Ingredients 10

1/2 cup whole hazelnuts, toasted
1 tablespoon confectioners' sugar
1 tablespoon plus 1/2 cup butter, divided
2 tablespoons plus 1 cup all-purpose flour, divided
2 large eggs, separated, room temperature
2/3 cup sugar
1/4 teaspoon vanilla extract
1 teaspoon baking powder
1/8 teaspoon salt
Additional confectioners' sugar, optional

Steps:

  • In a food processor, combine the hazelnuts and confectioners' sugar; cover and process until nuts are finely chopped. Set aside. Melt 1 tablespoon butter; brush two 12-shell madeleine pans with butter. Dust with 2 tablespoons flour; tap pans to remove excess flour and set aside. Place remaining 1/2 cup butter in a saucepan; melt over low heat until it turns a light amber color, 4-5 minutes. Set aside to cool., In a large bowl, beat egg yolks and sugar until thick and a pale lemon color. Stir in melted butter and vanilla. Combine the baking powder, salt and remaining flour; stir into butter mixture just until combined. In a small bowl, beat egg whites on high speed until stiff peaks form; fold into batter. Gently fold in reserved nut mixture., With a tablespoon, fill prepared pans two-thirds full. Bake at 325° until golden brown, 18-20 minutes. Cool for 2 minutes before inverting pans onto wire racks to remove cookies. Cool completely. Lightly dust with additional confectioners' sugar if desired.

¼ cup sifted all-purpose flour
¼ cup unsweetened cocoa powder
½ teaspoon baking powder
1 pinch salt
2 ounces butter
½ teaspoon vanilla extract
¼ cup white sugar
1 egg
2 egg yolks
⅓ cup confectioners' sugar for decoration

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Butter one Madeleine pan.
  • Sift the flour, cocoa, baking powder and salt together. Set aside.
  • Cream the butter with the vanilla and the sugar. Add the egg and egg yolks, beating to mix. Stir in the dry ingredients until just combined only, do not over mix. Place rounded teaspoon of batter into the prepared Madeleine shell forms.
  • Bake at 375 degrees F (190 degrees C) for 12 minutes. Remove from oven and immediately invert onto a wire rack to cool. Once cool sprinkle with confectioners' sugar, if desired.

This week is all about our Chocolats Favoris partnership, and I had challenged myself to cook with their new products from " The sweet side of cooking ", and I have to admit that it wasn't a challenge at all haha!. Apparently baking sweets stimulates your imagination like none other. Here's a chocolaty recipe that will be delicious with a cup of tea or coffee in the afternoon. If you don't own Madeleine molds, simply use a mini-muffin pan, the look will be different but the taste will be the same.

Number Of Ingredients 10

3/4 cup of all-purpose flour
3 tablespoons of cocoa powder, sieved
1/2 teaspoon of baking powder
1/2 teaspoon of ground cinnamon
1/4 teaspoon of salt
3 of eggs
1/2 cup of sugar
1/2 cup of melted butter
1/2 cup of melted Chocolats Favoris milk chocolate drops
1/4 cup of hazelnut bresiliennes

Steps:

  • Combine the flour, cocoa powder, baking powder, cinnamon and salt in a bowl then set aside.
  • In another bowl, whisk the eggs and sugar with a handheld mixer until the mix whitens and doubles in volume.
  • Gradually alter adding the flour mix and melted butter one at a time.
  • Refrigerate the mix for an hour before continuing.
  • Preheat the oven at 400°F and set the rack at the middle of it. Grease and dust flour on the Madeleine molds then set aside.
  • Pour the mix into the molds, then bake for 12 minutes. Remove from the molds as soon as they are out of the oven.
  • Dip each madeleine in the melted chocolate and into the Hazelnut Brezilienne, then lay onto a cooling grid.

1 cup bittersweet chocolate chips
1/4 cup chocolate-hazelnut spread, such as Nutella
8 madeleines
1 tablespoon chopped roasted, skinned hazelnuts

Steps:

  • Melt the chocolate chips in a medium bowl set over a double-boiler, stirring with a rubber spatula, until almost entirely melted, about 3 minutes.
  • Remove the bowl from the heat and continue to stir until the chocolate is completely melted, another 30 seconds. Stir in the hazelnut spread. Let cool slightly.
  • Preheat the broiler to high.
  • If the madeleines have a side with a bump, trim the bump to create a flat surface. Cut each madeleine in half horizontally and place cut-side up on a baking sheet. Broil until toasted and brown, 3 minutes. Let cool completely.
  • Spread a heaping teaspoon of the chocolate mixture evenly over the bottom half of a madeleine; sprinkle with hazelnuts. Place the top half on the hazelnuts and press gently. Dip the assembled madeleine halfway in the chocolate mixture, then place on a tray. Continue with the rest of the madeleines. Refrigerate until completely cool and the chocolate has hardened slightly, 30 minutes.
  • Serve alongside Bourbon Milk (see below) if desired.

  • Line 2 rimmed baking sheets with parchment paper. Stir sugar and 1/3 cup water in a small saucepan over medium-low heat until sugar dissolves. Increase heat and cook without stirring, occasionally swirling pan and brushing down sides with a wet pastry brush, until amber in color, 7–8 minutes. Stir in hazelnuts, then pour onto 1 prepared sheet, separating nuts. Let cool.
  • Transfer candied nuts to a food processor. Add hazelnut oil and purée until smooth to make praline paste.
  • Combine both chocolates and 3 Tbsp. praline paste in a medium metal bowl (reserve remaining praline paste for praline mousse layer). Set bowl over a saucepan of simmering water and stir until chocolate is melted and mixture is smooth. Remove from heat and stir in salt, then cereal. Spread out in a thin layer (about 1/8") on second pre-pared baking sheet. Chill until set, about 30 minutes. DO AHEAD: Can be made 1 day ahead. Cover and keep chilled. Cover and chill remaining praline paste.
  • Preheat oven to 375°. Line a 17x11x1" sheet pan with parchment paper; butter paper. Sift flour and cocoa powder into a medium bowl and set aside. Separate 4 eggs, placing yolks in a large bowl and whites in a medium bowl. Using an electric mixer, beat yolks with 1/2 cup sugar on medium speed until thick and light yellow, about 3 minutes. Beat in 4 whole eggs, one at a time, blending well between additions.
