½ cup salted butter, melted
3 pinches granulated sugar
Cooking spray
5 (8 ounce) packages cream cheese, softened
1 ¾ cups granulated sugar

5 large eggs
2 large egg yolks
1 teaspoon vanilla extract
4 ounces Ghirardelli® 60% Cacao Bittersweet Chocolate Chips
1 tablespoon coffee liqueur (such as Kahlua®)
1 teaspoon instant espresso granules
¾ cup heavy cream
1 tablespoon light corn syrup
6 ounces Ghirardelli Semi-Sweet Chocolate Baking Chips
Seasonal fruit for garnish, such as sugared cranberries, pomegranate seeds, and mint sprigs

Steps:

  • Prepare the Crust: Preheat oven to 350 degrees F. Stir together cookie crumbs, butter, and sugar in a medium bowl until well blended. Press mixture into bottom and up sides of a 9-inch springform pan coated with cooking spray.
  • Bake in preheated oven 10 minutes. Cool crust completely in pan on a wire rack, about 30 minutes. Reduce oven temperature to 325 degrees F.
  • Prepare the Cheesecake: Beat cream cheese with a heavy-duty stand mixer fitted with paddle attachment on medium speed until smooth and creamy, about 2 minutes. Gradually add sugar and flour, beating until smooth. Add eggs and egg yolks, one at a time, beating on low speed just until yellow disappears after each addition. Beat in vanilla.
  • Divide batter into 2 equal portions in separate medium bowls. Pour 1 portion into prepared crust; spread evenly.
  • Place Ghirardelli 60% Cacao Bittersweet Chocolate Baking Chips in a small microwaveable bowl. Microwave on medium (50% power) until melted and smooth, 1 1/2 to 2 minutes, stirring every 30 seconds.
  • Stir together coffee liqueur and espresso granules in a small bowl until espresso dissolves; stir mixture into remaining bowl of cheesecake batter. Stir melted bittersweet chocolate into coffee batter until blended.
  • Gently pour over plain cheesecake batter in prepared crust, and spread evenly. Pan will be very full. Place springform pan on a rimmed baking sheet.
  • Bake at 325 degrees F until center is almost set but center still jiggles slightly when pan is prodded, 1 hour and 5 minutes to 1 hour and 15 minutes. Remove to a wire rack and cool completely, about 2 hours.
  • Cover pan loosely with aluminum foil and chill 8 to 12 hours. Gently run a knife or offset spatula around outer edge of cheesecake to loosen from sides of pan. Remove sides of pan.
  • Prepare the Topping: About 1 hour before serving, bring cream and corn syrup just to a simmer in a small saucepan over medium. Place Ghirardelli Semi-Sweet Chocolate Baking Chips in a small heatproof bowl; pour cream-syrup mixture over chocolate chips. Let stand 1 minute. Whisk gently until smooth. Cool slightly, about 15 minutes.
  • Pour chocolate mixture over top of cheesecake, and gently spread to edge of crust. Chill until set, about 30 minutes. Garnish if desired.

This recipe is originally from Woman's Day Magazine. Watch out, it's incredibly rich and decadent. You can make it up through step 5 a couple of days before you need it, then glaze it an hour or two before serving and refrigerate to set the glaze. You can also substitute Neufchâtel cheese for the cream cheese to reduce the fat content. Make sure to use good quality white chocolate chips so that they'll melt well. I also occasionally sub the semisweet chocolate for 60% cacao chocolate and use the semisweet for the glaze. Cook time includes refrigeration time. Enjoy!

1/4 cup butter, softened
1 1/2 cups chocolate cookie crumbs (about 27 Nabisco Famous Chocolate Wafers or 20 Oreo cookies, finely crushed)
3 (8 ounce) packages reduced-fat cream cheese, softened
1 cup white sugar
2 tablespoons cornstarch
3 large eggs
1/2 cup reduced-fat sour cream
1 tablespoon vanilla extract
4 ounces milk chocolate (1/2 bag milk choc. chips)
4 ounces white chocolate (1/2 bag white choc. chips)
4 ounces semisweet chocolate (1/2 bag semisweet choc. chips)
3 ounces bittersweet baking chocolate
2 tablespoons stick butter
1 tablespoon light corn syrup

Steps:

  • Heat oven to 350°F You'll need an 8 x 3-in. springform pan coated with nonstick spray.
  • Crust: In small bowl, rub butter into crumbs until crumbs are evenly moistened. Press firmly over bottom of pan. Bake 8 to 10 minutes until set. Cool on rack. Reduce oven temperature to 300°F.
  • Filling: Beat cream cheese, sugar and cornstarch in a large bowl with mixer on medium speed until smooth. With mixer on low speed beat in eggs, 1 at a time, then sour cream and vanilla just until blended.
  • Divide the batter evenly (about 2 cups each) among 3 medium bowls. Melt the chocolates separately. Stir milk chocolate into 1 bowl of batter, white chocolate into another and semisweet chocolate into third. Spread milk chocolate batter in prepared crust in an even layer. Carefully spoon white chocolate batter over milk chocolate layer to cover; gently smooth with an offset spatula (do not let batters run together). Spoon semisweet chocolate batter over white chocolate layer to cover; smooth with an offset spatula.
  • Bake 1 and 1/4 hours or until set and center still jiggles slightly when shaken (cake should have pulled away from sides of pan; if not, carefully run a thin knife around edge of pan to release cheesecake). Cool in pan on a wire rack. Cover; refrigerate at least 4 hours or up to 2 days.
  • Chocolate Glaze: Combine glaze ingredients in a small saucepan; whisk over low heat until chocolate melts and mixture is smooth. Remove from heat; let cool 15 minutes, stirring occasionally.
  • Remove pan sides; place cheesecake on serving plate. Spread glaze over top of cheesecake, just to the edge (some glaze may drip down side of cake). Refrigerate just until glaze is set or, if chilled longer, let stand at room temperature 30 minutes before serving.

This is one of my all-time favorite cheesecake recipes, and I am a cheesecake lover! It was originally published in Bon Appetit about 10 years ago. It is simple, yet looks and tastes fabulous. Perfect for a holiday dessert since it can be made ahead of time. I see there are several recipes in Zaar for Bailey's Irish Cream that could be used in this recipe.

6 whole graham crackers
1/4 cup butter, melted
3 (8 ounce) packages cream cheese, room temperature
7 tablespoons sugar
1 tablespoon all-purpose flour
2 large eggs
6 tablespoons sour cream
6 tablespoons baileys irish cream
1 teaspoon vanilla
1/2 cup whipping cream
9 ounces semisweet chocolate, chopped
chocolate curls (optional)

Steps:

  • For crust: Preheat oven to 350 degrees.
  • Finely grind graham crackers in a food processor.
  • Add butter and blend until combined.
  • Press crust mixture onto bottom (not sides) of a 9-inch diameter springform pan.
  • Bake crust until golden brown, about 8 minutes.
  • Remove pan from oven, and maintain oven temperature.
  • For filling: Beat cream cheese and sugar in a large bowl until smooth.
  • Beat in flour.
  • Add eggs one at a time, beating just until combined.
  • Mix in remaining ingredients.
  • Pour filling into crust (cake will not fill pan).
  • Bake 10 minutes.
  • Reduce oven temperature to 250 degrees.
  • Continue baking cheesecake until set, about 40 minutes longer.
  • Cool cake in pan on a rack for 10 minutes.
  • Run a sharp knife around pan sides to loosen cake.
  • Cool.
  • Chill overnight.
  • For glaze: Bring cream to simmer in a heavy medium sized saucepan.
  • Reduce heat to low.
  • Add chopped chocolate (I use chocolate chips!) and stir until smooth.
  • Cool glaze to lukewarm.
  • Release pan sides from cheesecake.
  • Place cheesecake on rack set over a baking sheet.
  • Pour glaze over cheesecake, spreading with a spatula to cover top and sides, allowing excess to drip onto sheet.
  • Refrigerate until glaze sets, about 30 minutes.
  • Transfer cheesecake to platter.
  • Garnish with chocolate curls, if desired.

7 tablespoons unsalted butter
1 1/2 cups graham cracker crumbs (about 11 crackers)
1 1/4 cups sugar
2 lbs cream cheese, room temperature
1 vanilla bean, split in half lenghtwise
4 large eggs, lightly beaten
1 cup sour cream
1 pinch salt
6 ounces semisweet chocolate, chopped
4 tablespoons heavy cream

Steps:

  • Heat oven to 350°F
  • In a small saucepan, melt 5 tablespoons butter. In a medium bowl, combine graham cracker crumbs and 1/4 cup sugar. Stir in melted butter until crumbs are moist. Pour mixture into a 9-inch springform pan; press firmly, forming a 1/2-inch crust up sides of pan. Bake until set, 12-15 minutes. Transfer to a wire rack.
  • Reduce temperature to 275°F In the bowl of an electric mixer fitted with the paddle attachment, beat cream cheese until smooth. Slowly add remaining cup sugar. Scrape in vanilla seeds; reserve pod for another use. Beat until well combined, about 3 minutes.
  • Drizzle in eggs, one at a time, stopping occasionally to scrape down bowl, Beat in sour cream and salt, Pour batter into crust.
  • Bake cheesecake until sides have set but center appears soft, about 1 hour 45 minutes. Transfer pan to a wire rack to cool. Run a paring knife around the ourside of crust, loosening it from pan. When cool, cover tightly with plastic; let set at least 4 hours or overnight.
  • To serve place chocolate, remaining 2 tablespoons butter, and cream in top of double boiler, or a heat-proof bowl set over a pan of gently simmering water, Srir occasionally until melted. Remove from heat; let cool slightly. Pour chocolate glaze over cheesecake; spread into a circle, leaving a 1/2-inch border. Chill just until chocolate has set, about 10 minutes.

  • Cool; then cover and chill at least 8 hours.
  • Remove from pan; spread warm glaze on top.
  • To make Chocolate Glaze: Add chocolate and butter to the top of a double boiler; bring water to a boil.
  • Lower heat; cook until chocolate is melted and smooth, stirring occasionally.
  • Remove from heat; stir in remaining ingredients until smooth.
  • Spread warm glaze over cheesecake.
