Number Of Ingredients 7

2 cups sugar
1/4 cup light corn syrup
1/2 cup milk
1/2 cup shortening
2 ounces unsweetened chocolate, cut up (or 6 TBSP.cocoa plus 4 tsp. shortening)
1/4 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • Mix all ingredients except vanilla in sauce pan.
  • Stir over low heat until chocolate and shortening melt.
  • Bring to a full rolling boil, stirring constantly.
  • Boil 1 minute.
  • Remove from heat and beat until lukewarm.
  • Add vanilla.
  • Beat until looks ready to spread.
  • Use to frost my Fudge Cake or your favorite chocolate cake recipe!

2 ¼ cups all-purpose flour
2 teaspoons baking soda
½ teaspoon salt
½ cup butter
2 ½ cups packed brown sugar
3 eggs
1 ½ teaspoons vanilla extract
3 (1 ounce) squares unsweetened chocolate, melted
1 cup sour cream
1 cup boiling water
½ cup butter
1 cup packed brown sugar
¼ cup milk
1 ¾ cups confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sift together the flour, baking soda and salt. Set aside.
  • In a large bowl, beat 1/2 cup butter or margarine and 2 1/2 cups brown sugar until well mixed. Add eggs one at a time. Beat in the vanilla and melted chocolate squares. Add 1/2 the sour cream and then 1/2 the dry ingredients to the butter mixture until well blended.
  • Add the remaining sour cream and dry ingredients to the batter. Stir in boiling water.
  • Bake in a greased 9 X 13 inch pan for 35 minutes.
  • Let cool 10 minutes before icing.
  • To Make Caramel Icing: First melt 1/2 cup butter in a saucepan. Stir in 1 cup brown sugar and boil about 2 minutes. Stir in 1/4 cup milk and bring to a boil. Place pan in cold water and stir in the confectioners' sugar. Continue stirring until smooth. Spread over still warm cake.

4-6 tbsp heavy whipping cream
1 1/2 C unsalted sweet cream butter (softened)
1 - 8 oz cream cheese (soften)
1 1.2 Heryhey special cocoa powder

7 C powder sugar
1/4 C heavy whipping cream
1 large piping bag with star tip
2 C chopped walnuts
1 ½ C mini chocolate chips
1 C semi sweet chocolate chips
1/2 C heavy whipping cream
1 large squeeze bottle

Steps:

  • Preheat your oven to 350 and using pam baking spray, spray 3 9inch round cake pans
  • Using a medium whisk together the flour, cocoa powder, baking powder, baking soda, and salt
  • Using a medium saucepan over medium to high heat, combine the water and sugar.
  • Bring to a boil and stir until the sugar is dissolved. About 1 minute
  • Remove from heat and whisk in the chocolate and butter until melted
  • Whisk in the canola oil and vanilla extract
  • Quicky whisk in the eggs to avoid them cooking into the chocolate mixture.
  • Gradually whisk in the dry ingredients until combined
  • Fold in the chopped walnuts
  • Divide the batter between the three round cake pans
  • Bake cakes for 30-35 minutes or until a toothpick comes out clean
  • Using a standing mixer, beat together all ingredients until combined and smooth
  • Remove the cakes from the pans
  • Cut the domes off the tops of the cakes
  • Place the first cake layer down onto a cake board
  • Scoop 1 C of the vanilla frosting onto the top of the cake layer and smooth evenly
  • Place the second cake layer on top
  • Scoop remaining vanilla frosting on top of the second layer and smooth evenly
  • Place the third cake layer on top of the frosting
  • Using the standing mixer again, beat the cream cheese and butter until combined and smooth
  • Gradually mix in the cocoa powder, vanilla and salt
  • Very slowly, beat in the powder sugar until combined
  • Whisk in the heavy whipping cream until the ice cream is smooth and fluffy
  • Chocolate walnut mix Directions
  • Combine into a bowl and mix together
  • Scoop 1 C chocolate frosting into the large piping bag and set aside
  • Using the remaining chocolate frosting, frost the entire cake
  • Coat the bottom of the cake with the chopped walnut and chocolate chip mix
  • Using a small pot, heat up the heavy whipping cream until steaming
  • While heavy whipping cream is heating up, place chocolate chips into a heat-proof bowl
  • Once the heavy whipping cream is heated, pour over the chocolate chips
  • Allow to sit for 1 minute before whisking until smooth
  • Pour ganache into the squeeze bottle
  • Pipe dollops of ganache over the edge of the cake and cover the top, spreading evenly
  • Pipe dollops of frosting on top
  • Sprinkle with some left over walnut and chocolate chips.
  • Cut and enjoy!

Combine the flour, cocoa, cream of tartar, baking soda, baking powder and salt; add to creamed mixture alternately with water and milk, beating well after each addition., Pour into prepared pan. Bake at 350° for 22-27 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before inverting onto a wire rack. Discard parchment. 250g dark chocolate , broken into chunks - standard supermarket chocolate is fine
300g self-raising flour
300g light, soft brown sugar , plus 2 tbsp
50g cocoa
200ml sunflower oil , plus a little extra for greasing
284ml soured cream
3 eggs
1 tsp vanilla essence
500g white caster sugar
1 tsp vanilla extract
1 tbsp liquid glucose
2 egg whites
25g icing sugar , sifted

Steps:

  • Heat oven to 160C/fan 140C/gas 4 and grease and line a deep, 20cm round cake tin. Whizz the chocolate in a food processor until crumbs. Tip the flour, sugar, cocoa, oil, 150ml soured cream, eggs, vanilla and 150ml water into the largest mixing bowl you have. Whisk with an electric whisk until smooth, then quickly stir in 150g of your whizzed-up chocolate bits. Scrape into a tin, and bake on the middle shelf for 1 hr 20-1 hr 30 mins, or until a skewer inserted in the centre comes out clean. Cool in the tin.
  • While the cake is baking, make the icing. Combine remaining chocolate bits and soured cream with 2 tbsp soft brown sugar in a small saucepan and heat, stirring, until the chocolate is melted and you have a smooth icing. Leave to cool.
  • When the cake is cool, slice it into 3 even layers. Spread 2 layers with chocolate icing.
  • To make the angel frosting, put the sugar, vanilla and liquid glucose in a pan with 125ml water. Bring to the boil and cook just until the sugar has melted and the syrup turns clear. Take off the heat. Meanwhile, beat the egg whites until stiff, then continue beating, gradually pouring in the hot sugar syrup in a steady stream, until the mixture is fluffy and thick enough to spread - this might take a few mins as the mixture cools. Beat in the icing sugar. Work quickly and spread a tiny bit over each chocolate-covered layer. Assemble cake and swirl remaining frosting over entire cake.

1-3/4 cups (220 grams) all-purpose flour
1 cup (120 grams) dark or dutch-processed cocoa powder (I used 3/4 cup Dutch processed and 1/4 cup black cocoa for color - do not use all black cocoa).
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon kosher salt
2 large eggs, at room temperature
1 cup buttermilk
1 cup boiling water
3/4 cup vegetable oil or light olive oil
1 tablespoon vanilla extract
2 cups (4 sticks/452 grams) unsalted butter, softened
2 1/2 cups (300 grams) powdered sugar, sifted
1 1/4 cups (150 grams) dark or Dutch processed cocoa powder (I used 30 grams black cocoa and Dutch-processed for the rest), sifted
1/2 cup full fat sour cream, at room temperature
1/2 cup hot water
2 teaspoons vanilla extract
pinch fine sea salt
10 ounces dark chocolate (60-70%), melted and cooled to lukewarm

Steps:

  • Preheat oven to 350ºF. Butter and line two 8-inch round baking pans with parchment paper. Butter parchment.In a large mixing bowl, combine the sugar, flour, cocoa, baking soda, baking powder and salt, whisking until thoroughly combined. Add eggs, buttermilk, water, oil, and vanilla and beat with an electric mixer on medium speed until all dry ingredients are incorporated. Divide evenly among prepared pans.Bake for 40 to 45 minutes (30 to 35 minutes for a 6-inch cake) or until a toothpick inserted in the center comes out with just a few moist crumbs attached. Add sifted powdered sugar and cocoa powder and mix to combine. Add sour cream, hot water, vanilla and salt and mix on low speed until the liquid is incorporated, scraping down the sides of the bowl as needed. It may look slightly curdled at this point, but don't worry. Increase speed to medium-high and beat until smooth, another 2-3 minutes. Add lukewarm chocolate and mix until smooth and glossy. At this point you have about 30 minutes at cool room temperature (longer in the summer) to work with the frosting before it begins to harden (this frosting doesn't do particularly well when made ahead of time).To assemble, level your cake layers first if necessary (if there is any sort of domed top, you want to trim that off with a serrated knife). Place one layer, bottom side up, on a cake stand or serving platter (on a piece of parchment if you will need to move it). Spread about 1 cup of frosting in an even layer, then place second layer on top, flat side up, pressing gently to adhere.Cover the entire cake with a thin layer of buttercream using an offset spatula. This "crumb coat" will seal in the cake crumbs and make the final layer of frosting easier. If your cakes were frozen this should firm up pretty quickly, otherwise refrigerate for about 10 minutes to set.Slather with remaining buttercream in a thick layer, reserving some for piping decorative details if desired.

1 tsp bicarbonate of soda
150g caster sugar
2 tbsp golden syrup

150ml semi-skimmed milk
100g unsalted butter
225g icing sugar
40g cocoa powder
2½ tbsp milk (a little more if needed)

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Oil and line the base of two 18cm sandwich tins. Sieve the flour, cocoa powder and bicarbonate of soda into a bowl. Add the caster sugar and mix well.
  • Make a well in the centre and add the golden syrup, eggs, sunflower oil and milk. Beat well with an electric whisk until smooth.
  • Pour the mixture into the two tins and bake for 25-30 mins until risen and firm to the touch. Remove from oven, leave to cool for 10 mins before turning out onto a cooling rack.
  • To make the icing, beat the unsalted butter in a bowl until soft. Gradually sieve and beat in the icing sugar and cocoa powder, then add enough of the milk to make the icing fluffy and spreadable.
  • Sandwich the two cakes together with the butter icing and cover the sides and the top of the cake with more icing.

  • Preheat the oven to 325°. Line the bottoms of three 8-inch round cake pans with rounds of parchment paper. Spray the pans and the parchment paper with vegetable cooking spray.
  • In a large bowl, whisk the sugar with the flour, cocoa powder, baking powder, baking soda and salt. In a small bowl, whisk the buttermilk with the eggs and vanilla. In another small bowl, melt the butter in the hot coffee. Using an electric mixer, beat half of the buttermilk mixture into the dry ingredients at low speed. Beat in half of the coffee mixture, then scrape down the bowl. Beat in the remaining buttermilk and coffee mixtures.
  • Pour the batter evenly between the prepared pans and bake for 25 to 30 minutes, rotating the pans halfway through baking, until the cakes are springy to the touch. Let the cakes cool in the pans for 10 minutes, then turn the cakes out onto a rack to cool completely. Peel off the parchment paper.
  • Put the chocolate in a large bowl. In a small saucepan, bring the cream and corn syrup to a boil. Immediately pour over the chocolate and let stand in a warm place for 5 minutes. Gently whisk the ganache until smooth. Whisk in the butter until incorporated. Refrigerate, stirring frequently, until the ganache is thick enough to spread, about 30 minutes.
