Old-Fashioned Chocolate Fudge image

This fudge is easy to make and very delicious. Enjoy this with your loved ones. For best results be sure to use a candy thermometer.

2 cups white sugar
½ cup cocoa
1 cup milk
4 tablespoons butter
1 teaspoon vanilla extract

Steps:

  • Grease an 8x8 inch square baking pan. Set aside.
  • Combine sugar, cocoa and milk in a medium saucepan. Stir to blend, then bring to a boil, stirring constantly. Reduce heat and simmer. Do not stir again.
  • Place candy thermometer in pan and cook until temperature reaches 238 degrees F(114 degrees C). If you are not using a thermometer, then cook until a drop of this mixture in a cup of cold water forms a soft ball. Feel the ball with your fingers to make sure it is the right consistency. It should flatten when pressed between your fingers.
  • Remove from heat. Add butter or margarine and vanilla extract. Beat with a wooden spoon until the fudge loses its sheen. Do not under beat.
  • Pour into prepared pan and let cool. Cut into about 60 squares.

7 oz or 400 g 70% dairy-free chocolate chips (or chocolate, chopped into small pieces)
8 medjool dates (pitted and chopped)
3 tablespoons tahini paste
3 tablespoons coconut oil
½ cup coconut milk (the solid part)
1 tablespoon vanilla extract
Sea salt to garnish

Steps:

  • In a medium pot, add chopped chocolate or chocolate chips, pitted dates, tahini paste, coconut oil, coconut milk and vanilla extract. All the ingredients should be at a room temperature. Cook over low heat until all the chocolate is melted. Don't overcook the mixture, otherwise it will curdle.
  • Line a 12x7 baking dish or equivalent with parchment paper and evenly distribute the chocolate mixture. Sprinkle with sea salt. Freeze for 30 minutes or refrigerate for 2 hours. Take out of the fridge 15 minutes before serving. Enjoy!

1 package devil's food cake mix (regular size)
2 tablespoons hot water
1 teaspoon instant coffee granules
1 cup chocolate fudge frosting
1/3 cup baking cocoa
1/4 cup chocolate syrup
1-1/3 cups miniature semisweet chocolate chips
2 pounds white candy coating, chopped
Optional toppings: milk chocolate English toffee bits, toasted sweetened shredded coconut and crushed candy canes

Steps:

  • Prepare and bake cake according to package directions. Cool completely. Crumble cake into a large bowl., In a small bowl, combine hot water and coffee granules; stir until dissolved. Add the frosting, cocoa and chocolate syrup; stir until combined. Add to cake; beat on low speed until blended. Stir in chocolate chips. Shape into 1-in. balls., In a microwave, melt candy coating; stir until smooth. Dip balls in coating mixture; allow excess to drip off. Place on waxed paper; sprinkle with toppings of your choice. Let stand until set. Store in airtight containers.

1/3 cup sweetened condensed milk
1/4 cup freshly brewed MAXWELL HOUSE Coffee or YUBAN Coffee
1/2 cup chopped pecans
1 tsp. vanilla
suggested coatings: unsweetened cocoa powder, ground pecans or Walnuts, graham cracker crumbs, finely crushed cookies, toasted BAKER'S ANGEL FLAKE Coconut

Steps:

  • Microwave chocolate, milk and coffee in large microwaveable bowl on HIGH 2 min. or until chocolate is almost melted, stirring after 1 min. Stir until chocolate is completely melted.
  • Stir in nuts and vanilla. Spread into 8-inch square pan. Refrigerate 2 hours or until firm enough to handle.

Creamy peanut butter fudge is scooped and rolled into balls then dipped in semi-sweet chocolate. Each buckeye candy looks like a Buckeye tree nut and is a popular Christmas candy that's easy to make.

1/2 cup creamy peanut butter
1 1/2 cups powdered sugar
3 tablespoons European-style salted butter, (melted)
12 ounces pure semi-sweet chocolate, (melted)

Steps:

  • Spoon the peanut butter into a mixing bowl.
  • Sift the powdered sugar over the peanut butter and pour the melted butter over top.
  • Stir until well combined.
  • Scoop out twenty 1-tablespoon-size portions of the fudge.
  • Roll them into balls and set them on a parchment paper-lined (or wax paper-lined) baking pan.
  • Chill the peanut butter fudge balls for at least 2 hours until really firm.
  • Insert the flat end of a thin wooden skewer into a cold peanut butter ball.
  • Dip the fudge ball into the melted chocolate leaving about a 1/2 inch circle uncovered around the stick.
  • Lift the fudge ball out of the chocolate and gently shake allowing the excess chocolate to drip off.
  • Set the buckeye on a parchment paper-lined baking sheet.
  • Repeat.
  • Once you have all the fudge balls dipped in chocolate, chill them in the refrigerator for 1 hour.
  • Remove them from the fridge and gently pull out the skewers.
  • Pinch the hole in the fudge between two fingers, then smooth the surface out by brushing your finger over the top of the fudge.
  • Keep refrigerated until you are ready to serve your buckeyes.

  • Scoop out a tablespoon of dough and roll into a ball. Roll in extra cocoa or chopped nuts or seeds to coat. You could probably eat them without this coating, but it helps them be less sticky and looks nice.   • Place rolled balls in a storage container. Keeps on the counter for 1-2 weeks, but we prefer them cold out of the fridge or freezer. Keeps in fridge for 3-4 weeks, freezer for 3+ months. If traveling with them, putting them in lunches, etc. I recommend freezing and then they will be perfectly thawed by lunchtime!
