This comes from Company's Coming Chocolate book. I love these they are sooooooo good, especially if you like chocolate.

Steps:
- Stir first 6 ingredients in a large bowl, make a well in the center.
- In a seperate bowl beat eggs until foamy and light.
- Pour into the well.
- Add margarine, apple and chocolate chips.
- Stir just until moist.
- Drop by rounded tablespoonfuls into 375F oil.
- when they start to brown turn over and cook other side.
- Remove to paper towel and cool completely.
- Dust with icing sugar.
MEXICAN CHOCOLATE AND DATE FRITTERS

- Whisk together the flour, baking powder, mandarin peel, salt, dates and chocolate in a bowl. Whisk together ricotta, eggs, granulated sugar, and vanilla in another bowl. Mix in the flour mixture to form a chunky batter.
- In a large heavy-bottomed saucepan, pour enough oil to fill the pan about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F. (If you don't have a thermometer a cube of bread will brown in about 4 minutes.)
- Working in batches, gently drop a tablespoon of the batter in the oil and fry, turning occasionally, until deep golden in color, about 3 minutes per batch. Transfer with a slotted spoon onto paper towels to drain.
- Dust generously with powdered sugar and serve with Mexican Hot Chocolate.
CHOCOLATE FRITTERS
Make sure the chocolate pieces are completely covered with the dough so none of the chocolate leaks into the oil. Use your favorite type of chocolate to suit your tastes. Serve with fresh whipped cream for a delicious treat.

- Sift the flour, salt, baking powder, and sugar together into a mixing bowl. Add the egg, butter, and milk, and mix until smooth.
- Slowly heat 3 inches oil to 340°F.
- Dip the chocolate into the batter, coating each piece completely. Fry the fritters, a few at a time in the hot oil until golden brown all over, about 1 or 2 minutes. drain each batch on paper towles, then tranfer to a warm serving platter and dust with confectioner's sugar.

BANANA FRITTERS WITH CHOCOLATE SAUCE
Steps:
- In a bowl, whisk together the egg yolks, milk, and butter. Add the flour, salt, and the sugar to the egg mixture, combine well, beat until mixture is smooth, and allow to rest in the refrigerator for about 2 hours.
- In a dry clean bowl whip the egg whites until stiff, but not dry. Fold the egg whites into the batter with a rubber spatula.
- In a large heavy-bottom saucepan, pour enough oil to fill the pan about a third of the way, about 3 to 5 inches.
- Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F. dredge the banana pieces in the confectioners' sugar then dip the pieces into the batter. Deep-fry the bananas in batches until golden brown, about 3 to 4 minutes.
- Drizzle with chocolate sauce. Garnish with mint leaves.
- In a heavy bottom saucepan, put chocolate and water. Over low heat, melt the chocolate, while stirring. Boil the mixture for 1 minute. Remove from the heat and add the rum.
STRAWBERRY FRITTERS WITH CHOCOLATE SAUCE

- In a large bowl, whisk together the flour, 1/4 cup butter, 1/3 cup cream, eggs, salt, brown sugar, and cinnamon. Add the strawberries to the batter and fold gently to coat.
- Heat the oil in a large heavy pot over medium-high heat to 360 degrees F (180 degrees C).
- Meanwhile, make the chocolate sauce by combining the chocolate chips, 3 tablespoons butter, vanilla extract, and 1/4 cup cream in a microwave-safe dish. Place in the microwave and cook on medium-high heat stirring every 30 seconds until the chocolate chips are melted and the chocolate sauce is smooth. Set the dish on a kitchen towel and cover to keep warm.
- Working in batches, carefully drop the batter-coated strawberries into the hot oil. Fry until the batter is golden brown, flipping the strawberries to brown both sides evenly. - Before beginning to explain how to make chocolate fritters at home, you should know that this recipe is used for making fritters that incorporate chocolate into the dough as well as in the filling. However it is also possible to make pumpkin fritters and fill them with chocolate or simply make traditional fritters that are covered in chocolate.
- The first step in preparing the chocolate fritters is to make the dough; to do this, start beating the eggs in a bowl or use an electric mixer. Then add the remaining ingredients: baking soda, which will make the dough spongy, cocoa powder, sugar, water and flour.
- Beat the ingredients until you have a homogeneous mixture, i.e., one that is chocolaty and doesn't have lumps. Note that if you do not own a mixer, you can also hand beat it with a whisk, it will just take longer. Once you've finished beating it, cover the bowl of dough with transparent film or wax paper and put it in the refrigerator where you should leave it for at least 3 hours.
- In the meanwhile, you can make the chocolate ganache which will be the filling of our chocolate fritters. Pour the cream into a saucepan, add the butter and put it on low heat so that it warms up. When it is hot, add the chopped chocolate and stir this until it has completely melted.
- Once the ganache is ready, pour it into molds for chocolates or an ice cube try. Then put the mold with the chocolate balls in the freezer and leave them in for at least an hour.
- Next, heat a pan with abundant oil while using a needle to prick the ganache balls so you can put them in the dough of the fritters and completely cover them. Turn them over a few times to remove excess dough and put them in the hot oil for frying. When done, take them out and place them on paper towels to remove excess oil from the fritters. Do this with each chocolate fritter until the ganache and dough is used up.
- You now have your delicious chocolate fritters ready to be eaten as an original and decadent dessert! Enjoy!

- In large bowl, whisk together flour, cocoa, sugar, baking powder, and salt. In medium bowl, whisk together club soda, vegetable oil, and egg. Whisk wet ingredients into dry, then fold in chocolate and nuts.
- In heavy 4-quart pot, heat 3 inches of oil until thermometer registers 350°F. Working in batches of 4 and returning oil to 350°F between batches, drop batter by rounded tablespoons into hot oil and fry fritters until crisp, 3 to 4 minutes. Transfer to paper towels to drain.
- Serve immediately, offering chile powder, confectioners' sugar, cinnamon, and/or cocoa for dusting.
