1 1/2 cups Gold Medal™ all-purpose flour
1 cup sugar
1/4 cup unsweetened baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1/3 cup vegetable oil
1 teaspoon white vinegar
1 teaspoon vanilla
1 cup chocolate fudge topping
1 1/2 quarts (6 cups) vanilla ice cream, slightly softened
2 cups malted milk ball candies, coarsely chopped
1 cup whipping (heavy) cream
1/4 cup chocolate fudge topping
Additional malted milk ball candies, if desired

Steps:

  • Heat oven to 350°F. Grease bottom and side of springform pan, 9x3 or 10x2 3/4 inches, with shortening; lightly flour. In large bowl, mix flour, sugar, cocoa, baking soda and salt. Add water, oil, vinegar and vanilla. Stir vigorously about 1 minute or until well blended. Immediately pour into pan.
  • Bake 30 to 35 minutes or until toothpick inserted in center of cake comes out clean. Cool completely, about 1 hour.
  • Spread 1 cup fudge topping over cake; freeze about 1 hour or until topping is firm. In large bowl, mix ice cream and coarsely chopped candies; spread over cake. Freeze about 4 hours or until ice cream is firm.
  • In chilled medium bowl, beat whipping cream with electric mixer on high speed until stiff peaks form.
  • Remove side of pan; place cake on serving plate. Top with whipped cream. Melt 1/4 cup fudge topping; drizzle over whipped cream. Garnish with additional candies.

This amazing cake joined the Walker family traditions when my brother met my sister-in-law. She's a redhead with lots of freckles, and this cake, thanks to the chocolate shavings and chips, has lots of freckles too. So, we changed the name. Chocolate Chip Cake (boring!) is now Freckle Cake. Great topped with vanilla ice cream!

1 package yellow cake mix
1 (3.5 ounce) package instant vanilla pudding mix
4 eggs
1 cup vegetable oil

1 (4 ounce) package sweet baking chocolate (such as Baker's German's Sweet Chocolate®), grated
1 (12 ounce) package miniature chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Generously grease a 10-inch fluted tube pan (such as a Bundt®).
  • Beat yellow cake mix, vanilla pudding mix, eggs, vegetable oil, and water in a bowl with an electric mixer to make a smooth batter, about 2 minutes. Stir grated chocolate and chocolate chips into batter and pour into prepared tube pan.
  • Bake until a toothpick inserted into center of cake comes out clean, 50 to 55 minutes. Let cool completely in the pan before turning out onto a cake plate.

1 box Betty Crocker™ Super Moist™ butter recipe chocolate cake mix
Water, butter and eggs called for on cake mix box
6 cups green mint-flavored ice cream with chocolate chips or chocolate swirl, slightly softened
1 1/2 cups whipping cream
2 tablespoons powdered sugar
4 drops green food color

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Grease bottoms only of two 9-inch round cake pans; line bottoms with waxed paper. Make cake batter as directed on box. Spoon evenly into pans.
  • Bake as directed on box for 9-inch rounds. Cool in pans 10 minutes. Remove from pans to cooling racks. Remove waxed paper. Cool completely, about 30 minutes.
  • Line 9-inch round cake pan with foil. Spoon and spread ice cream evenly in pan. Cover with foil; freeze until completely frozen, about 2 hours.
  • On serving plate, place 1 cake layer with rounded side down. Remove ice cream from pan; peel off foil. Place on top of cake. Top with remaining cake layer, rounded side up.
  • In medium bowl, beat whipping cream, powdered sugar and food color on high speed until stiff peaks form. Frost side and top of cake with whipped cream. Freeze about 2 hours or until firm. Let stand at room temperature 10 minutes before serving.

3/4 cup (100g) Oreo crumbs (about 9 Oreos)
1 1/2 tbsp butter, melted
1.5 quart container vanilla ice cream
1.5 quart container chocolate ice cream
6 oz | 1 cup semi sweet chocolate chips
3 tbsp light corn syrup
1/2 tsp vanilla extract
1/2 cup (120ml) heavy whipping cream
2 cups (480ml) heavy whipping cream, cold
1 cup (115g) powdered sugar
1 1/2 tsp vanilla extract
Sprinkles

Steps:

  • Preheat oven to 350 degrees. Line a cookie sheet with parchment paper or a silicone baking mat and set aside.
  • 2. Combine the Oreo crumbs and melted butter and stir until well combined. Spread the crumbs evenly onto the prepared cookie sheet.
  • 3. Bake for 8-10 minutes, then allow to cool. Use your fingers to break any big clumps into smaller ones. Set aside.
  • 4. Line an 8×3 inch cake pan* with clear wrap that covers the bottom and goes above the sides of the cake pan. I used two pieces.
  • 5. About 20 minutes before you need it, set the chocolate ice cream out to soften. Add the softened chocolate ice cream to the prepared cake pan and spread into an even layer. Freeze for 30 minutes.
  • 6. To make the fudge layer, add the chocolate chips, corn syrup and vanilla extract to a medium sized bowl.
  • 7. Heat the heavy whipping cream just until it begins to boil, then pour it over the chocolate chips. Allow to sit for 2-3 minutes, the whisk until smooth.
  • 8. Remove the cake pan with the chocolate ice cream from the freezer, then pour the chocolate fudge over the ice cream and spread into an even layer. Freeze for about 10 minutes.
  • 9. Add the cookie crumbles to the top of the fudge layer, then freeze for about 2 hours, until mostly firm.
  • 10. About 20 minutes before you need it, set the vanilla ice cream out to soften. Add the vanilla ice cream to the top of the cake, then freeze until firm, 2-3 hours.
  • 11. Use the clear wrap to lift the frozen cake out of the pan, then place it on a cardboard cake circle or a serving plate. Set it back in the freezer.
  • 12. To make the whipped cream, add the heavy whipping cream, powdered sugar and vanilla extract to a large mixer bowl. Whip on high speed until stiff peaks form.
  • 13. Frost the cake with the whipped cream and decorate as desired. I used Ateco tip 844 for piping the borders.
  • 14. Freeze the cake until ready to serve. Cake is best when stored well covered and eaten within 4-5 days.

I first made this for my boyfriend's birthday. It takes a bit of time to put together and freeze, but there's no baking time so I think it all works out the same in the end! You can also try different ice cream combinations, depending on what you like. Pistachio and vanilla is another possibility. A fun idea for a summer cake!

1 liter chocolate ice cream, softened
1 liter vanilla ice cream, softened
1 (10 ounce) package of frozen sliced strawberries
1 cup sugar, plus
2 tablespoons sugar
1/2 tablespoon cornstarch
1/2 cup heavy cream
4 ounces unsweetened chocolate
1 tablespoon rum (optional)
40 chocolate chip cookies
1/4 cup butter, melted

Steps:

  • Crush 20 of the cookies and mix the crumbs with the butter.
  • Pat mixture on the bottom of an 8 inch springform pan and put in the freezer for 15 minutes.
  • Now make a fudge sauce by putting the cream, chocolate and 1 cup of sugar in a saucepan and stirring constantly over low heat until the chocolate is melted.
  • Add rum if desired.
  • When the fudge sauce is cool, use about half of it to spread over the cookie crumb crust.
  • At this point, you also take the remaining chocolate chip cookies and stand them up along the edge of the pan.
  • Put the mixture back in the freezer for 15 minutes.
  • Take the ice cream out to soften at this point and start making the strawberry sauce.
  • Put the strawberries, two tablespoons of sugar and cornstarch in a saucepan and heat-- stirring occasionally-- until the strawberries form a thick sauce.
  • When the ice cream is fairly soft, take the pan out of the freezer and start spreading the ice cream in the pan.
  • You want to create a marbled effect by lightly mixing the two ice cream flavours together, but not so much that they become all one colour.
  • Swirl in the strawberry sauce.
  • Pour over the remaining fudge sauce and return to freezer until everything is firm, at least two hours.
  • To serve, remove the edge of the pan and let soften for 10-15 minutes.

Chocolate freckles are a very popular candy of small chocolate discs covered in hundreds and thousands (round sprinkles). This cake looks like a giant freckle, with layers of chocolate ice cream, sponge finger biscuits and vanilla ice cream in the middle. 2 liters vanilla ice cream (Streets Blue Ribbon re-freezes well)
200 g butter, softened
1 1/2 cups icing sugar
4 eggs, room temp
400 g dark chocolate, chopped (make sure it's good quality)
1/2 cup thickened cream
250 g ladyfingers (sponge finger biscuits, Zaar defaults to ladyfinger)
2 (175 g) packets hundreds and thousands

Steps:

  • Remove ice cream from freezer and stand for 10-15 minutes. Ice cream should be just softened but not melted.
  • Meanwhile, using an electric mixer, cream butter and sugar until pale. Add eggs one at a time, beating well after each addition. Mixture may curdle but that's ok :-).
  • Combine chocolate and cream in a bowl and microwave, stirring every minute, until melted and smooth. Add to butter mixture and beat until smooth.
  • Sprinkle 1 packet of hundreds and thousands over base of a line springform cake pan (7.5 x 25cm base). Carefully spoon over half the chocolate mixture so as not to disturb the sprinkles.
  • Cut biscuits in half lengthways to make 2 thin, flat fingers. Arrange in a single layer to cover chocolate mixture, trimming if necessary. The easiest way to do this is to lay them pointing from the edge towards the centre, and then fill the centre with smaller bits (great if some of them broke while being halved).
  • Spoon vanilla ice cream over biscuits. Press another layer of biscuits into surface of ice cream and pour over remaining chocolate mixture. Sprinkle with remaining hundreds and thousands.
  • Cover tightly with plastic wrap and foil and freeze overnight or up to 4 weeks. Remove from pan and serve.
