CHOCOLATE BANANA BREAD



Chocolate Banana Bread image

Nothing tops old-fashioned banana bread, except maybe this chocolate version! Each slice is studded with nuts. -Connie Deke, DeWitt, Nebraska

Yield 1 loaf.

Number Of Ingredients 11

1/2 cup butter, softened
1 cup sugar
2 eggs
1 cup mashed ripe bananas (about 2 medium)
1/4 cup milk
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 cup baking cocoa
1 teaspoon baking soda
1 teaspoon salt
1/2 cup chopped nuts, optional

Steps:

  • Preheat oven to 350°. In a bowl, cream butter and sugar. Add eggs, bananas, milk and vanilla. Combine the flour, cocoa, baking soda and salt; add to the banana mixture and mix just until combined. Fold in nuts if desired. Transfer to a greased 9x5-in. loaf pan., Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

1 cup unbleached flour
3/4 cup cream of wheat or 3/4 cup farina
1/2 cup sugar
2 1/2 teaspoons baking powder
3/4 teaspoon salt
1 egg (beaten)
3/4 cup milk
1/3 cup cooking oil

Steps:

  • Mix together the Farina, flour, sugar, baking powder, and salt.
  • In a separate bowl mix egg, milk and oil together.
  • Add egg mixture to flour mixture, stirring just until moistened. Batter will be a little lumpy.
  • Grease loaf pan and pour batter into pan.
  • Bake at 400 for about 30 minutes or until done.

1/2 cup water
1/2 cup plain yogurt
1 Tablespoon butter
1 Tablespoon sugar
1 teaspoon salt
1 packet yeast
4 packets Chocolate instant Cream of Wheat (= just shy of 1c)
1 1/2 cups flour
2 teaspoons pasilla dried chili flakes
Oil or cooking spray

Steps:

  • Heat the water, yogurt, butter, sugar, and salt until everything is melted Cool until you can comfortably hold your finger in it - too hot may kill the yeast Sprinkle the yeast into the bowl of your food processor (make sure you're using the dough blade) or stand mixer and pour the warm liquid over it Let sit for about 5" to give the yeast a chance to bloom Mix in the Cream of Wheat, then the flour and chilies, a little at a time If using a stand mixer, let knead for 5-8" until glossy and smooth If using a food processor, pulse until it comes together in a ball and pulls away from the blade Lightly spray or oil a bowl, turn the dough in the bowl to coat, then cover and let rise for 45" to 1' (I tuck mine away in the oven) Punch down the dough, form it into a ball and transfer to a lightly sprayed pie plate, parchment-lined tray, baking stone - whatever you're comfortable with Let rest for 20" or so Bake at 375° for 35-40" Cool completely before slicing

1 cup flour
3/4 cup Cream of Wheat (Farina)
1/2 cup brown sugar
3/4 teaspoon of salt
2 1/2 teaspoons baking powder
1 egg
3/4 cup milk or water
1/3 cup vegetable oil or melted butter

Steps:

  • Preheat oven to 400 degrees F
  • Lightly grease a 9 inch round cake pan, square pan or 12 cup muffin pan.
  • In a large bowl, combine flour, cream of wheat, sugar, salt and baking powder.
  • In a large measuring cup or separate bowl, whisk together egg, milk and butter or oil.
  • Pour your wet ingredients into your dry and mix just until combined.
  • Pour batter into prepared pan.
  • Bake in preheated oven for 15-20 minutes. Enjoy!

1/2 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup unsweetened applesauce
1/3 cup oil (vegetable, avocado, melted coconut, etc.)
1 cup light brown sugar
2 large eggs
1 teaspoon vanilla extract
2/3 cup sour cream or plain Greek yogurt
1 cup chocolate chips

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9X5-inch baking pan and set aside.
  • In a medium bowl, whisk together the flour, cocoa, salt, baking powder, and baking soda.
  • In a large bowl, whisk together the applesauce, oil, brown sugar, eggs, vanilla and sour cream until well blended.
  • Add the dry ingredients and pour the chocolate chips on top of the dry ingredients. Stir until the batter is just combined (don't overmix!).
  • Spread the batter evenly in the prepared pan and bake for 45-60 minutes until a toothpick inserted in the center comes out with moist crumbs but not wet batter.
  • Let the bread cool in the pan for 5-10 minutes before running a knife gently around the edges and turning out onto a cooling rack to cool completely.
