- Combine the graham cracker crumbs, butter and egg white; press onto the bottom and up the sides of a greased 9-in. pie plate. Bake at 375° for 6-8 minutes or until lightly browned. Cool on a wire rack., For filling, in a large saucepan, combine the sugar, cocoa, cornstarch and salt. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer., Remove from the heat. Stir a small amount of hot mixture into egg; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat; stir in chocolate chips and vanilla., Pour into crust. Refrigerate for at least 2 hours or until firm. Spread whipped topping over filling; sprinkle with grated chocolate.

- Beat pudding mix and milk in medium bowl with whisk 2 min. Stir in 1-1/2 cups COOL WHIP.
- Spoon into crust.

- Heat ice cream topping as directed on label; drizzle over pie. Top with remaining COOL WHIP.

- For the crust: Preheat the oven to 375 degrees F.
- Roll the pie dough out on a lightly floured board to about 1/4-inch thick, then fit into a 9-inch pie dish and crimp the edges.
- Place a piece of parchment paper into the pie crust and fill with dried beans or pie weights. Bake until the crust is starting to set and the edges are browning, 20 minutes. Remove the parchment and beans, and continue to bake until completely golden and crisp looking, another 5 minutes. If the edges start browning before the center cooks, cover them with some foil. Let cool completely.
- Melt the bittersweet chocolate over a double boiler. Using a pastry brush, paint the inside of the pie shell with the melted chocolate in a thin even layer. Set aside to harden.
- For the chocolate filling: Meanwhile, in the top of a double boiler heat 2 cups of the milk until almost, but not quite, boiling. Add the chocolate and stir until it's completely melted. Set aside off the heat.
- In a big bowl, whisk together the sugar, cornstarch, flour and salt. Whisk in the remaining 1/2 cup milk.
- Stir the flour mixture into the hot chocolate mixture. Return the double boiler to the heat, whisk in the egg yolks, and cook, whisking constantly, until the mixture is very thick, about 20 minutes. Remove from the heat, then transfer to another bowl. Cover with plastic wrap directly touching the surface, and refrigerate until cold.
- At least 3 hours before you are ready to serve, add the chocolate filling to the pie shell, and refrigerate.
- For the whipped cream: Right before serving, cream together the mascarpone with the sugar and vanilla bean seeds in a stand mixer fitted with the whisk attachment. Add the heavy cream and continue to beat until it holds medium-stiff peaks.
- Add the whipped cream to a pastry bag fitted with a large star tip. Pipe the cream generously on top of the pie. Sprinkle with chocolate curls and shavings, and serve.
CHOCOLATE DREAM PIE

- Place chocolate squares in a small, microwave-safe bowl. Microwave on high 2 minutes. Set aside. Sprinkle gelatin over boiling water and set aside to soften.
- In a large glass or metal bowl, beat egg whites until soft mounds form. Gradually add sugar, continuing to beat until whites are stiff and glossy. Beat in corn syrup and vanilla extract. Gently mix in chocolate and gelatin mixture.

DREAM WHIP PIE
I forgot how quick and easy and inexpensive this pie was! My sister made this a while back, and I'm so glad she did! This is such a great summer pie...light and fluffy and can be made with any flavor pudding to please everybody! I also use a little bit of Cool Whip on top to make extra yummy! This recipe is from the back of the Dream Whip box.

- Beat whipped topping mixes, 1 cup of the milk and vanilla in large bowl with electric mixer on high 6 minutes or until topping thickens and forms peaks.
- Add remaining 1-3/4 cups milk and pudding mixes; beat on low speed until mixed.

- Spoon into pie shell.

DREAM WHIP PIE
Steps:
- Measure 1 cup of the cold milk into a medium-sized bowl.
- Add the Dream Whip envelopes and vanilla, and mix using a handheld mixer on high for 6 minutes.
- Alternatively, mix in a stand mixer with the whisk attachment until thick.
- Add the rest of the milk (1-3/4 cups) and both packs of pudding mix to the thickened whipped topping.
- Whisk on low until it starts to incorporate.
- Scrape the bowl down and turn the mixer up to high, beating for an additional 2 minutes.
- Using a spatula, scrape the mix into the prepared pie crust and smooth over the top.
- Let the pie set in the fridge for at least 4 hours.
- Add any toppings just before serving and store leftovers in the fridge.

WHITE CHOCOLATE DREAM PIE

- Combine all crust ingredients and mash into the bottom of a greased 9x11 cake pan. Bake for 10 minutes in a 300 degree F oven. Set crust aside to cool while you prepare the filling.
- Combine cream, sugar, eggs, vanilla, and cornstarch into a medium sauce pan and bring to a boil over a medium flame. As the filling begins to thicken, add the butter, vanilla, and white chocolate chips. When the filling has thickened turn off the heat and whisk in the cream cheese. Pour the filling on top of the crust.
- Allow to cool in the refrigerator for at least thirty minutes. Then take the Cool Whip and spread over the top of the filling. Garnish with the remaining macadamia nuts and chill until ready to serve.

- In heavy pan over medium-high heat, toast coconut until lightly browned. Remove 1 tablespoon of the coconut for garnish. Add rice milk and orange juice concentrate. - First, make sure your frozen deep-dish pie crust is blind baked according to package instructions. Set aside.
