CHOCOLATE & GINGER BAKED PEACHES

Steps:
- Preheat the oven to fan 160C/conventional 180C/gas 4. Butter a large, shallow ovenproof dish. Cut the peaches in half and remove the stones, then stand the peaches cut-side up in the dish.
- Put the ginger biscuits into a tough plastic bag, seal the bag and bash the biscuits with a rolling pin until they're roughly crushed. Tip them into a bowl and mix in the chocolate, two-thirds of the chopped ginger, the egg yolk, dessert wine and orange zest until everything is evenly mixed.
- Divide the mixture equally between the peach halves, mounding it into the holes left by the stones. Pour the white wine around the peaches, dot them with the butter and bake for 20 minutes, or until tender. (This can be made up to a day ahead, kept in the fridge once cool, then gently reheated, in two batches, on Medium in the microwave for 4-5 minutes each batch.) To serve, spoon over the cooking juices and scatter with the remaining ginger. Serve warm.

CHOCOLATE-DIPPED APRICOTS
Steps:
- Line 2 baking sheets with parchment or waxed paper. Melt and temper the chocolate (see pages 25-30).
- Hold an apricot half securely between your thumb and forefinger, and dip it halfway into the chocolate. Remove the apricot from the chocolate, gently shake off the excess chocolate, and place the apricot half on the paper. Repeat with the remaining apricot halves. Let the chocolate set up at room temperature, or chill in the refrigerator for 15 minutes. Between layers of waxed paper, in a tightly covered container wrapped in several layers of aluminum foil, the apricot halves will keep for 2 weeks in the refrigerator. They are best eaten at room temperature.
- VARIATIONS
- Substitute dried peaches or dried pears for the apricots. Dip these halfway into the chocolate on the diagonal for an interesting design.

- Wash the peaches well, then cut them in half and remove the pits. Place the peaches in a large food processor and pulse in short bursts until the peaches are in chunky pieces.
- Remove 1/2 cup of the peaches, and add the passion fruit puree and sugar to the remaining peaches in the food processor. Blend until very smooth. Taste the mixture, and add additional sugar if desired. (The amount of sugar you'll need depends on your taste and the sweetness of your peaches.) Add the chunky peaches back to the peach puree, and stir it in.
- Pour the popsicle mix into your molds and freeze for 30 minutes, until the pops have begun to set. Insert popsicle sticks into each pop, and freeze for another 2-3 hours, until frozen completely.
- If you want to cover them with chocolate, combine the finely chopped chocolate and coconut oil in a bowl, and melt it in the microwave, stirring after every 30 seconds to prevent overheating. The chocolate should flow freely and be fairly thin—if it still seems thick and gloopy, add more coconut oil, a small spoonful at a time, until it's thin.

- Preheat the oven to 350 degrees Fahrenheit. Line a half sheet pan (18x13 inches), or similarly sized rimmed baking sheet, with aluminum foil so that the foil hangs over the sides. Spray the foil with nonstick cooking spray.

- In a small bowl, whisk together the flour, baking powder, and salt. Add the dry ingredients to the wet ingredient and mix just until they’re combined. Finish stirring everything together with a spatula, scraping down the bottom and sides of the bowl.
- Pour the batter into the prepared pan and smooth it into an even layer. Drizzle the melted chocolate over the top and use a butter knife to swirl it in—try to swirl it down to the bottom of the pan, not just along the top layer.
