CHOCOLATE FRUIT DIP
I've been told I'm not allowed to come to neighborhood parties unless I bring this dip! It's always a big hit. I usually serve it with strawberries and pineapple, but it's good with other fruit, such as apples and melon. -Sarah Maury Swan, Granite, Maryland

Steps:
- Line a baking sheet with foil. For the chocolate coating: In a small heatproof bowl set over hot (not simmering) water, melt the semisweet chocolate with 1 teaspoons of oil. In another small heatproof bowl set over hot (not simmering) water, melt the white chocolate with the remaining 1 teaspoons oil. Leave both bowls over the hot water.
- Pick up one piece of fruit at a time and dip it into the melted dark or white chocolate, coating about half of each piece of fruit. If desired, drizzle the dipped portion with a contrasting color of chocolate and sprinkle with some chopped nuts. Place the fruit on the foil-lined baking sheet. Work quickly to coat the remaining fruit.
- Refrigerate for 5 minutes or until the chocolate is set. Keep in a cool place until ready to serve. (Fresh fruit should not be held for more than 4 hours before serving).

- First, remove the waffle cones from the box. Using scissors cut a few X's on the top of the box to create holes to hold the cones up right. This will help for the chocolate to dry and for storage later on. (See photo below)
- Take a small amount of chocolate bark (one section) along with a teaspoon of coconut oil and place in small microwavable bowl. Cook in microwave stirring every 15-30 seconds to keep consistency. Once the chocolate is a smooth liquid substance, stop cooking in microwave. Don't overcook or you will end up with powdered chocolate. Trust me, I've been there! Also, adding the coconut oil will make the chocolate smoother and easier to mold. Be careful not to add too much coconut oil or it will be runny. (If it becomes too runny, add more chocolate and melt again)
- Dip your waffle cone in the chocolate covering all the sides and the bottom. Your kids can help with this part but make sure they don't touch the chocolate or bowl as it may still be hot from the microwave. Immediately after dipping the cone into the chocolate, dip the cone in the topping. That can be the nuts, sprinkles or coconut flakes.
- Then, set cone upright in a space in the waffle cone box. Repeat steps with other waffle cones. Once complete, you can air dry or place them in the fridge for the chocolate to harden faster.

- Melt the white chocolate in a double boiler. Remove from the heat and cool to 29ºC/84ºF. Stir frequently.
- Dip each piece of fruit into the melted white chocolate. Dip about two thirds of the way only, aiming to cover only one half of the fruit piece.
- Place all white-chocolate dipped fruits into the refrigerator to chill for 20 minutes. Or until the chocolate sets.
- Take the white-chocolate dipped fruits out of the refrigerator. Dip each one in the melted dark or plain milk chocolate. Do this at an angle and aim for a balance that matches the white-dipped side, only on the other side of the fruit piece this time.
