This is a sweet and chocolately "cow pie" that will be just great for the chocolate lover!! Source: Burt Wolf's Local Flavors, Wooster, Ohio

10 tablespoons sugar
1/2 cup buttermilk
1/3 cup vegetable oil
1 egg
1/2 teaspoon vanilla
3/4 cup flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, whisk the sugar, buttermilk, oil, egg, and vanilla together until smooth. In a medium bowl, sift the flour, cocoa and baking soda together and add to the buttermilk mixture, stir until the ingredients are just combined. Be careful not to overework the batter, If there are lumps, they will disappear during baking baking. The less you work the batter, the more tender the pies will be.
  • Fill 6 nonstick muffin top cups with the batter. Bake for 10 minutes in the center of the oven. To prevent the pies from getting soggy after baking, remove the cooked muffins from their cups and cool them on a rack. Serve warm.

BEV'S CHOCOLATE PIE

This recipe was given to me by a dear friend at a church dinner. This pie never is runny. If you opt to use a frozen prepared pie crust, use the deep dish kind.

2 cups white sugar
5 tablespoons unsweetened cocoa powder
¼ cup all-purpose flour
1 (12 fluid ounce) can evaporated milk
1 teaspoon vanilla extract
4 egg yolks
¼ cup butter
1 recipe pastry for a 9 inch single crust pie
4 egg whites
¼ cup white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a saucepan, whisk together 2 cups sugar, cocoa and flour. Blend in evaporated milk and vanilla. Beat egg yolks, and stir into pan. Add the butter or margarine. Heat, stirring constantly just until butter is melted. Pour filling into unbaked pie shell.
  • Bake in preheated oven for 35 to 40 minutes, or until pie is not "wobbly" when shaken.
  • Beat egg whites until soft peaks form. Gradually add 1/4 cup sugar, beating constantly, until stiff peaks form. Spread meringue on pie.
  • Return pie to oven, and bake until meringue is golden.

2 cups (12 ounces) milk chocolate chips
1 tablespoon shortening
1/2 cup raisins
1/2 cup chopped slivered almonds

Steps:

  • In a heavy saucepan or microwave, melt the chocolate chips and shortening over low heat, stirring until smooth. Remove from the heat; stir in raisins and almonds. Drop by tablespoonfuls onto waxed paper. Chill until ready to serve.

2 cups sugar
2 1/2 sticks (1 1/4 cups) butter, softened
2 large eggs
1 tablespoon vanilla extract
2 1/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon kosher salt
1 cup good semisweet chocolate chips, plus extra for topping if desired
1 cup milk chocolate chips, plus extra for topping if desired
1/2 cup white chocolate chips, plus extra for topping if desired
16 ounces semisweet chocolate

Steps:

  • Preheat the oven to 350 degrees F.
  • Using a mixer, cream the sugar and butter until fluffy, scraping the sides once. Add the eggs one at a time, mixing after each addition. Mix in the vanilla.
  • Sift together the flour, cocoa, baking soda and salt in a bowl, then add in batches to the mixer, mixing until just combined after each addition. Gently mix in the semisweet, milk and white chocolate chips.
  • Using a cookie scoop, add generous 1-tablespoon portions of dough to a baking sheet (about 12 portions). Repeat with the remaining dough and additional baking sheets. Dot the top of each cookie with 2 to 3 chocolate chips if you'd like them to really show up on top. Bake until the cookies are barely done and are still soft and chewy, 9 to 11 minutes. Don't overbake! Let cool on a baking rack.
  • Melt the semisweet chocolate in a bowl over a pan of simmering water.
  • Dip the cookies one by one into the melted chocolate to coat, then transfer to parchment-lined baking sheets to set.

1 (9 inch) pie crust, baked
3 egg yolks, beaten
1 ½ cups white sugar
3 tablespoons cornstarch
½ cup unsweetened cocoa powder
½ teaspoon salt
3 cups milk
1 tablespoon butter
1 ½ teaspoons vanilla extract
1 cup frozen whipped topping, thawed

Steps:

  • In a large mixing bowl, cream together egg yolks and sugar. Mix in cornstarch, cocoa powder, and salt. Add milk and stir gently.
  • Pour mixture into a large saucepan and cook over medium heat, stirring constantly, until boiling. Remove from heat. Stir in butter or margarine and vanilla extract. Cool slightly, then pour mixture into pastry shell. Chill before serving. Garnish with whipped topping.

1 1/2 cups sugar
1/2 cup unsalted butter
1/2 cup 1% low-fat milk or 1/2 cup 2% low-fat milk
1/2 cup cocoa powder
1 teaspoon vanilla
3 cups rolled oats
1 cup sweetened coconut

Steps:

  • Melt butter in large sauce pan, add milk, sugar and cocoa powder. Bring to medium boil and boil for 1 minute. Any longer and the sauce will harden too much when cookies set. Any shorter and the cookies may not harden enough.
  • Remove from heat and add rolled oats and coconut. (I usually premix the coconut and oats). Mix well with wooden spoon and drop onto parchment or wax paper. You decide on the size of cookies you want. These cookies take about a 1/2 day to a day to set depending on the size.
