CHOCOLATE-COVERED CHERRIES

Chocolate-Covered Cherries image

Not only is this my family's favorite festive dessert, but it makes a delicious holiday present, too. Best of all, you can (and should) prepare these ahead. The candy gets better as it's stored, with the centers becoming even juicier. -Linda Hammerich, Bonanza, Oregon

MY FAMOUS CHOCOLATE COVERED CHERRIES

My Famous Chocolate Covered Cherries image

These are so good. I have to make 2 dozen for my grandmother every Christmas and she refuses to share them. She actually hides them and pulls them out one at a time! I really have no idea how many this makes as I usually double or triple the recipe. Also it depends on how much of the center you like . UPDATE: some people have had difficulty with the filling being to runny....adding more powdered sugar is not going to alter the taste so feel free to add another 1/2 c to a cup with out worry :)

Categories     Candy

Time 3h

Yield 1 batch

Number Of Ingredients 7

2 cups powdered sugar (you may want to use more to thicken it up, some people have used another cup full)
1/4 cup margarine
1/4 cup sweetened condensed milk
1 teaspoon vanilla
1 pinch salt
maraschino cherry, drained
milk dipping chocolate (I use giridelli's)

Steps:

  • Combine the first 5 ingredients until well blended and smooth and place in fridge until firm.
  • Meanwhile spread out the drained cherries on a cookie sheet and freeze for at least 1 hours.
  • Scoop out about 1-2 teaspoon of filling and form into a ball around a cherry.
  • Place on a wax paper lined cookie sheet and freeze for 1 hr after you have formed them all.
  • Melt dipping chocolate and using your hands dip each cherry placing it on a wax paper lined cookie sheet and chill in fridge until chocolate is solid.
  • Remove cherries carefully as not to break them open and loose the center.
  • Place in an airtight plastic container and keep in a cool dry place for up to 1 month.

HEALTHY CHOCOLATE-CHIA PUDDING POPS

Healthy Chocolate-Chia Pudding Pops image

These pops are uber-fudgy, thanks to a combo of chia seeds and cocoa powder. If you don't have the patience to wait for the frozen version-no problem, the pudding is just as delicious.

Provided by Food Network Kitchen

Time 10h20m

Yield 4 servings

Number Of Ingredients 7

1 1/4 cups 2-percent milk
2 ounces semisweet chocolate, finely chopped
3 tablespoons unsweetened cocoa powder
2 tablespoons light agave nectar
Kosher salt
2 tablespoons chia seeds
1/2 teaspoon pure vanilla extract

Steps:

  • Combine the milk, chocolate, cocoa powder, agave and a pinch of salt in a medium saucepan and set over medium-low heat. Cook, whisking constantly, until the chocolate melts and the cocoa dissolves, 6 to 8 minutes. Pour the chocolate mixture into a medium bowl. Stir in the chia seeds and vanilla. Let cool to room temperature, about 1 hour.
  • Cover and refrigerate the mixture until chilled and the chia seeds are plumped, about 1 hour more, stirring halfway through.
  • Divide the mixture evenly among four 3- to 4-ounce ice pop molds. Freeze until solid, at least 8 hours and up to overnight. Let sit at room temperature for a few minutes before unmolding.
  • The pops will keep in the freezer for up to 2 weeks.

CHOCOLATE COVERED CHERRY BROWNIE BOMBS

Chocolate Covered Cherry Brownie Bombs image

These Chocolate Covered Cherry Brownie Bombs are delicious bites of brownie surrounding cherries and then dipped in chocolate!

Provided by Lisa Longley

Number Of Ingredients 4

1 box of brownie mix and the ingredients it takes to make them
3/4 cup chocolate frosting
15 oz almond bark (melted according to package instructions)
1 can of cherry pie filling or maraschino cherries (see note)

Steps:

  • Bake the brownies as directed and let cool completely. Do not overcook the brownies, crunchy brownie bits don't make for good bombs.
  • Crumble the made brownies and mix in about 3/4 a cup of chocolate frosting. If you've made cake pops before, you want a similar consistency. You may need to add a little more, but you want to start out on the low side and add more if you need it.
  • Once you have it the consistency needed (stays together easily but isn't too sticky to roll into balls), start with about 1 1/2 TBSP of brownie frosting mixture. (A cookie scoop makes it a lot easier.) Form it into a ball, but then make a hole in the middle that you can drop one cherry from the pie filling into.
  • Fold the brownie ball in over the cherry or top with a little more of the brownie/frosting mixture and do your best to seal the cherry in.
  • Once you have all your bombs made, pop them in the freezer for about 20 minutes.
  • While they are hardening up in the freezer, melt your almond bark. You may need a little more or a little less depending on how heavily you coat the bombs.
  • After the 20 minutes, take them out of the freezer and keep them in the refrigerator. Working one bomb at a time, drop it into the melted almond bark, pull it back out, and tap off the excess chocolate.
  • Place it on wax paper and wait for it to dry completely.

  • Make the sour cherry ice pops: In a large, wide-sided saucepan over medium-high heat, combine both types of cherries with the sugar. Cook, covered, until they are soft and tender yet still retain their shape, 18 to 20 minutes. Remove the lid and continue to cook at a boil, stirring frequently, until the liquid has reduced to a syrup and the cherries are wrinkly, 20 to 25 minutes. Remove from the heat and set aside to cool slightly.
  • In a blender, combine the cherries, buttermilk, salt and 1 tablespoon of the lemon juice; purée on high speed until smooth. Taste and adjust the seasoning with lemon juice. Makes 3 cups of purée. Pour the ice pop base into the molds. Insert an ice pop stick and freeze until solid, 7 to 8 hours.
  • Make the candied hemp seed hearts: Line a rimmed baking sheet with parchment paper. In a small saucepan over medium heat, combine the sugar and water, and cook, stirring occasionally, until the sugar melts and turns a butterscotch color, 4 to 7 minutes. Reduce the heat to low, add the hemp seeds and stir to coat. Cook, stirring often, until the hemp seeds turn light golden and become fragrant, 2 to 4 minutes.
  • Spread the seeds onto the prepared baking sheet, sprinkle with the salt and let cool until room temperature, 8 to 10 minutes.
