Chocolate-Covered Cereal Mix with Dried Cherries and Pistachios image

Number Of Ingredients 7

4 cups mixed unsweetened cereal, such as Cheerios, corn flakes and Chex
3/4 cup confectioners' sugar
1/4 unsweetened cocoa powder
6 ounces semisweet chocolate, finely chopped
2 tablespoons unsalted butter, cut into pieces
1 cup dried tart cherries
1 cup shelled salted pistachios

Steps:

  • Put the cereal in a large bowl. Combine the sugar and cocoa powder in a large resealable plastic bag.
  • Combine the chocolate and butter in a small bowl set over a pot of simmering water. Heat, stirring occasionally, until melted.
  • Pour the chocolate mixture over the cereal and toss to coat thoroughly. Transfer the cereal to the plastic bag and shake well to coat in the sugar-cocoa mixture. Pour the cereal into a clean bowl and stir in the cherries and pistachios.

1 teaspoon vanilla extract
1 cup peanut butter
4 cups chocolate puff cereal

Steps:

  • Combine the sugar, corn syrup and vanilla in a medium saucepan. Bring to a boil over medium high heat, stirring occasionally, boil for 1 to2 minutes. Remove from heat and stir in the peanut butter. Add cereal, mix until cereal is evenly coated.
  • Drop cookies by spoonfuls onto greased foil or waxed paper. Let sit at room temperature until cool and set. This recipe can also be made in the microwave, if watched carefully.

This is an easy-to-make, kid-friendly treat, especially in the summer when no cook wants to heat up the kitchen. I first made this with cornflakes, but have since used many other types of non-sugar-coated cereals, like Cheerios and Rice Krispies. This can even be a great, slightly indulgent breakfast treat, for kids and adults alike.

4 cups very crisp cornflakes or other non-sugar-coated flaked cereal
1 pound bittersweet chocolate, tempered

Steps:

  • Line 2 rimmed baking sheets with parchment paper.
  • Place the cereal in a large bowl. Pour about half of the chocolate over the cereal and, using a rubber spatula, toss the cereal around to coat evenly. The chocolate will begin to set. When the first coating has set, pour in the remaining chocolate and again toss to coat evenly.
  • Working quickly while the chocolate is still pliable, scoop up small mounds of the the cereal and place them on the prepared baking sheets. Set aside for about 30 minutes, or until hardened completely. If your kitchen is very hot, you can place the baking sheets in the refrigerator for no more than 10 minutes to speed the setting.
  • Layer the cereal clusters, separated by sheets of waxed paper, in an airtight container and store at room temperature for up to 2 weeks.

  • In a large bowl, combine the cereal and peanuts. In a microwave-safe bowl, melt chips at 70% power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth., Pour over cereal mixture; stir until well coated. Spread onto a waxed paper-lined baking sheet. Let stand until chocolate is set. Break into small pieces.

Chocolate Dipped Rice Krispie Treats are an extra special twist on classic Rice Krispie squares. They're fun party snacks that are easy to make and perfect for customizing with your favorite colors and sweet goodies, like sprinkles or chopped nuts and more!

½ stick of butter (1/4 cup)
10-ounce bag of mini marshmallows (about 5 cups)
2 tsp vanilla extract or paste
5 cups Rice Krispies cereal
12 ounces chocolate chips (1 bag)
Sprinkles (optional)

Steps:

  • Grease the bottom of a 9x13 pan. Set aside.
  • In a large pot, melt the butter over medium-low heat.
  • Reduce heat to low and add the marshmallows. Stir often until the marshmallows are melted and totally incorporated with the butter. Do not overcook or you'll have hard treats!
  • Add the vanilla and stir to combine.
  • Turn off the heat and pour in the cereal. Gently fold in the marshmallow mixture until all of the cereal is fully coated.
  • Transfer the cereal mixture into the greased pan. Lightly press the mixture so you have a nice even layer throughout the pan.
  • Allow the treats to cool, cut them into any size squares you like.
  • Next, add the chocolate chips into a small bowl. Microwave in 15-20 second intervals stirring each time until chocolate is completely melted and smooth. If the chocolate seems too thick, add about 1 teaspoon of vegetable or coconut oil until the chocolate is shiny and stirs easily.
  • Dip each Rice Krispies treat in chocolate and lightly shake off any excess chocolate. You can dip just the top or dunk half of the bar into the melted chocolate. If desired, add sprinkles to the top while the chocolate is still wet.
  • Place the dipped treats on a sheet of wax paper to set up. Allow the chocolate to harden before serving.

  • Package as you wish!
