- Heat oven to 350°F. Line 8-inch square pan with foil, allowing foil to hang over sides of pan for easy removal after baking. Spray with cooking spray.
- Press brownies evenly in bottom of pan. Bake 22 to 24 minutes or until brownies are set around sides and toothpick inserted in center of brownies comes out almost clean. Cool completely in pan on cooling rack, about 1 hour.
- Remove brownies from pan; remove foil. Crumble brownies into large bowl. Stir in chocolate syrup until brownies are moistened. Line rimmed pan with waxed paper. Shape brownie mixture into 24 (1 1/4-inch) balls; place in pan.
- In medium microwavable bowl, microwave white vanilla baking chips uncovered on High 45 seconds; stir. If needed, heat at additional 15-second intervals, stirring vigorously after each interval until melted.
- Using 2 forks, dip and roll each brownie ball in melted chips to cover brownie ball completely. Tap gently to remove excess; return to pan. Immediately top with sprinkles or sugars.
- Repeat for remaining melted chips and brownie balls. Allow to set at room temperature, about 20 minutes. Store in covered container in refrigerator.

- In a large saucepan, bring the sugar, butter and water to a boil over medium heat. Remove from the heat; stir in 1 cup chocolate chips and vanilla until smooth. Cool for 5 minutes. Beat in eggs. Combine the flour, salt and baking soda; add to chocolate mixture. Stir in 1 cup chocolate chips. , Pour into a greased 9-in. square baking pan. Bake at 325° for 35 minutes or until set. Cool completely on a wire rack. , Place in the freezer for 30-40 minutes or until firm (do not freeze completely). Cut into bars. , In a microwave-safe bowl, melt remaining chips and shortening; stir until smooth. Using a small fork, dip brownies to completely coat; allow excess to drip off. Place on waxed paper-lined baking sheets. Sprinkle with pecans, jimmies and/or nonpareils if desired. Let stand until set. Store in an airtight container.

CHOCOLATE-COVERED BROWNIE TRUFFLES
These sinful little bites are a double-blast of chocolate decadence. The idea was inspired by a recipe my mother made at Christmas time as well as the latest craze of cake pops. These little devils pack a big chocolate punch with moist, chewy brownie inside surrounded by a chocolate shell. Just be sure to have a big glass of ice-cold milk close at hand. For easier dipping and serving, spear with festive toothpicks.

- Preheat oven to 350°F.
- In a medium sized mixing bowl, combine brownie mix, oil, water and eggs. Mix well and pour into a greased 13 x 9 inch cake pan.
- Bake for 24-26 minutes or until a toothpick inserted into the center comes out clean. Allow brownies to cool completely. Cooling overnight is best, but be sure to cover them securely.
- Once cool, cut brownies into 1-inch squares. Remove each brownie from the pan and roll in the palms of your hands until rounded. If desired, trim the chewy outside edge from the brownies before cutting into 1-inch squares. Spear each brownie ball with a toothpick.
- On a large cookie sheet, lay a sheet of waxed paper.
- Place chocolate chips and shortening in a microwave-safe glass mixing bowl. Microwave for 30 seconds, stir, and repeat until chips are melted and the mixture is smooth.
- Carefully dip the bottom of each brownie ball into the chocolate. Hold sideways and spoon chocolate over the ball until completely covered. Allow excess chocolate to drip off into the bowl. Place each ball on the waxed paper 1 inch apart. If the chocolate mixture thickens, re-microwave for 15-20 seconds at a time until it reaches the desired consistency.
- If desired, garnish each truffle with a dusting of cocoa & powdered sugar: In a small mixing bowl, combine cocoa and powdered sugar. Sprinkle lightly over truffles. Refrigerate until chocolate hardens. Store at room temperature in a tightly covered container for up to one week.
- Pour a tall glass of ice-cold milk, sit back and enjoy!

- Preheat oven to 350 degrees F. Grease well a 9×13'' inch pan.
- Chop the butter and the unsweetened baking chocolate into chunks and place together in a microwave safe bowl.
- Microwave in 30 second intervals, stirring in between, until melted. Set aside to cool, stirring occasionally.
- In a large bowl beat the eggs, sugar, and vanilla until light and fluffy. While mixing, slowly add the melted chocolate.
- In a separate small bowl combine the flour and baking powder. Stir the flour into the chocolate batter, just until combined.
- Pour batter into greased pan and bake for 20-30 minutes or until a knife poked in the center comes out clean.
- Remove from oven and allow to cool completely.
- Once brownies are cool I like to cut off and remove the very outer edge where a "crust" sometimes forms. Then use a fork to fluff the mixture into crumbs.
- Take a small cookie scoop (or just use your hands) to roll the brownie crumbs into 30-35 small balls.
- Place them on a large, parchment lined baking sheet. Place in the freezer for 20-30 minutes or until firm.
- Melt the chocolate chips and butter in a double boiler or in the microwave until smooth. Use a spoon to roll the brownie balls in the melted chocolate--I remove them with a fork to allow the excess chocolate to drip off.
- Place the truffles carefully on parchment paper. At this point you could add sprinkles, if desired.
- Refrigerate until set. These are best stored in the fridge. Remove 5 minutes before serving.

- Bake brownies according to directions on package. Do NOT over bake. Allow to cool.
- Once cooled, scoop out brownies into a large bowl. If the edges are hard, leave those out. Add in cream cheese and stir until combined.
- Line parchment paper onto a cookie sheet. Then roll your brownie mixture into balls and place on the sheet. Place in freezer for about 30 minutes or until firm.
- Melt chocolate in medium-sized bowl in the microwave. Then place your truffle ball on a fork and dip into the chocolate. Spoon chocolate on top. - Follow the directions on the boxed brownie mix and bake as instructed. Once the brownies are fully baked, allow them to cool completely. Note: We used Betty Crocker Fudge Brownies in family size.
- Take the brownies and cut all around the edges (removing any hard edges) and keeping only the soft brownies.
- Place the brownies into a food processor. Pulse to crumble the brownies.
- Add the cream cheese to the food processor and pulse until the brownies and cream cheese are fully incorporated.
- Using a tablespoon or a 1 inch cookie scoop, scoop the brownie mixture onto a cookie sheet that has been lined with parchment paper. Place into the freezer for about 20-30 minutes.
- Remove the cookie sheet and start rolling the brownie dough into 1 inch balls. (Doing this step without chilling the brownie mixture first won't be easy. Make sure to chill the dough!)
- Place the round brownie dough balls back into the freezer for another 10 minutes.
- Start melting the white chocolate wafers in a microwave safe bowl. I start with 30 seconds and stir. Then I do 15 second increments as needed until the chocolate is melted, stirring between each interval.
- Dip the brownie truffles into the white chocolate, tapping to let any excess drip off. Place back on the cookie sheet. If adding sprinkles, do so now before the chocolate hardens. Continue to dip and sprinkle until all of the truffles are complete.
- Store truffles in the freezer until they are ready to serve. Allow them to sit at room temperature for 5 minutes to soften before serving.

These Chocolate Covered Cherry Brownie Bombs are delicious bites of brownie surrounding cherries and then dipped in chocolate!

- Bake the brownies as directed and let cool completely. Do not overcook the brownies, crunchy brownie bits don't make for good bombs.
- Crumble the made brownies and mix in about 3/4 a cup of chocolate frosting. If you've made cake pops before, you want a similar consistency. You may need to add a little more, but you want to start out on the low side and add more if you need it.
- Once you have it the consistency needed (stays together easily but isn't too sticky to roll into balls), start with about 1 1/2 TBSP of brownie frosting mixture. (A cookie scoop makes it a lot easier.) Form it into a ball, but then make a hole in the middle that you can drop one cherry from the pie filling into.
- Fold the brownie ball in over the cherry or top with a little more of the brownie/frosting mixture and do your best to seal the cherry in.
- Once you have all your bombs made, pop them in the freezer for about 20 minutes.
- While they are hardening up in the freezer, melt your almond bark. You may need a little more or a little less depending on how heavily you coat the bombs.
- After the 20 minutes, take them out of the freezer and keep them in the refrigerator. Working one bomb at a time, drop it into the melted almond bark, pull it back out, and tap off the excess chocolate.
- Place it on wax paper and wait for it to dry completely.
CHOCOLATE-DIPPED BROWNIE BITES (BROWNIES)
A rich, chocolate coating over decadent, double-chocolate bite-size brownies with festive toppings. I got this recipe at a TOH Christmas Show and they are INCREDIBLE!! They are probably the absolute best cookie/candy type treat I've ever made!! We noticed they tasted even better on day 2 & 3 so you might want to make them ahead of time. I used candy coating wafers to dip them in rather than more chocolate chips. One of the reasons was, I wanted to dip half of them in white chocolate. If you try that, make sure you do the white chocolate first...when the brownies are right out of the freezer. As they warmed up, I had trouble with crumbs getting in the coating. Both kinds, the white and dark chocolate, were fantastic though!
