3 -4 tablespoons unsweetened cocoa powder, sifted
4 tablespoons cornstarch
1 pinch salt
1 3/4 cups milk
1 cup half-and-half cream (or use 2-3/4 cups milk)

Steps:

  • In a saucepan combine the first 4 dry ingredients.
  • Add in milk and half and half cream; cook over medium heat stirring/whisking until thickened and just at a slight bubble (do not boil hard) remove from heat.
  • Immediately pour into serving dishes allow to sit at room temperature until cooled.
  • Enjoy warm or refrigerate until cold.

Homemade Chocolate Pudding without Cornstarch image

How to make chocolate pudding from scratch without cornstarch, using cocoa powder and real chocolate.

¼ cup all-purpose flour (or 1-to-1 gluten-free flour, if desired)
½ cup granulated sugar (or coconut sugar/sweetener of choice)
4 Tbsp unsweetened cocoa powder
¼ tsp salt
3 cups milk of choice (room temperature (separated into ½ cup and 2½ cups))
3 egg yolks (room temperature)
5 oz ~⅔ cup dark or milk chocolate, finely chopped
½ tsp vanilla extract

Steps:

  • Add flour, sugar, cocoa powder, and salt to a bowl and whisk to combine.
  • Add ½ cup of milk and egg yolks one at a time, whisking to combine after each.
  • Set aside.
  • In a saucepan, add remaining 2½ cups of milk and bring to a simmer over medium-high heat.
  • Once simmering lightly, remove from heat and slowly pour hot milk into cocoa mixture, whisking constantly to combine. (You don't want to scramble the eggs!)
  • Add entire mixture back into saucepan and return to the heat.
  • Whisk constantly over medium-high until thickened, so the pudding leaves a "trail" as you whisk (2-3 minutes).
  • Remove from heat and add chopped chocolate and vanilla, stirring until smooth.
  • Transfer pudding into small containers and allow to cool. (It will thicken as it cools.)
  • Serve chilled or at room temperature. Store in airtight container(s) in the fridge for 5-7 days.
  • Enjoy on its own, or use to make DIY pudding dirt cups with crumbled Oreos and gummy worms!
  • Yields 10 servings of pudding, in 4oz mason jars.

3 tablespoons cornstarch
1/8 teaspoon salt
1/3 cup sugar
1/2 cup milk
1 1/2 cups milk
1 teaspoon vanilla

Steps:

  • Place cornstarch, salt, and sugar in mixing bowl, and mix well.
  • Add 1/2 cup milk, and stir until smooth.
  • Scald 1 1/2 cups milk in top of double boiler, and add cornstarch mixture slowly, stirring constantly.
  • Place over boiling water in bottom of double boiler, and cook slowly, stirring constantly until smooth and thickened.
  • Cover, and cook for 15 minutes longer, stirring occasionally.
  • Add vanilla and stir.
  • Pour into individual molds which have been rinsed in cold water.
  • Chill until firm.
  • Unmold and serve with maple syrup, cream, chocolate sauce, sliced peachs, or sliced apricots as desired.
  • Chocolate: Add 1 square unsweetened chocolate, melted, at the same time vanilla is added.
  • Coconut: Add 1/2 cup shredded coconut to scalded milk.

  • In the top of a double boiler, mix cornstarch, sugar, and salt
  • Add the cold milk to the cornstarch mixture, set aside
  • In another saucepan, scald 2 cups milk; slowly add to cold milk mixture
  • Cook in the top of a double boiler stirring until thick
  • Cover and cook 15 - 20 minutes
  • Add vanilla, stir in well.
  • Pour into large dish or in divided dishes. Placing plastic wrap directly on the surface while cooking prevents a skin from forming. Serve slightly warm or chill.

Although store-bought chocolate puddings are actually pretty decent in terms of flavor and quality, I absolutely love to make my own chocolate pudding

2 Large Egg Yolks
2 tbsp. Cornstarch
2 c. Whole Milk, Divided
1/2 c. Sugar
1/4 c. Unsweetened Cocoa Powder
1/4 tsp. Salt
2 tsp. Chocolate Extract (or Vanilla Extract)

Steps:

  • In a medium bowl, whisk the egg yolks for about 60 seconds until light yellow and increased in volume, then whisk in the cornstarch and about 1/4 cup of the milk. Once smooth and incorporated, set aside.Place the sugar, cocoa, salt, and remaining milk in a saucepan, and bring to a scald over medium-high heat, which is when the liquid is about 180-190ºF. This is before the mixture comes to a boil, and in this stage you will see little bubbles start forming on the sides of the pan. Remove the pan from the heat and, while whisking constantly, dribble the hot cocoa into the egg cornstarch mixture very gradually. We are tempering so we don't scramble the eggs. Pour everything back into the saucepan and cook over medium high heat, whisking constantly, until the pudding comes to a full boil. Reduce the heat to a simmer and continue whisking for a couple minutes until the pudding is thickened.Remove the pudding from the heat and stir in the chocolate or vanilla extract. Pour the pudding into a bowl and press plastic wrap directly on the surface of the pudding so a skin doesn't form. Refrigerate for an hour or two until chilled. Serve and enjoy!

1/4 cup dutch cocoa powder
1/3 cup sweetener ((sugar, pure maple syrup, erythritol, or honey))
1/2 cup milk of choice + 3 tbsp cornstarch
optional 3 oz chocolate chips or broken-up bar
3/4 tsp pure vanilla extract

Steps:

  • Healthy Chocolate Pudding Recipe: Heat the 2 cups milk of choice in a saucepan with the salt, cocoa powder, and sweetener. Meanwhile, whisk the cornstarch and 1/2 cup milk in a small bowl until dissolved. When the 2 cups milk are warm, add the cornstarch mixture and bring to a boil. Once boiling, stir constantly for 2 minutes. Lower to a simmer for an additional minute, then turn off the heat. Once the heat is off, stir in the vanilla and broken-up chocolate pieces until the chocolate melts. Transfer the pudding to the refrigerator to thicken. It gets thicker the longer it sits and will be ready to consume after a few hours or overnight. *Note: I've not tried arrowroot and have only tried this recipe with Dutch cocoa powder so can't vouch for the taste if regular unsweetened cocoa powder is used in its place.
