- Beat egg yolks in small bowl with electric mixer on high speed about 3 minutes or until thick and lemon colored. Gradually beat in sugar.
- Heat 1 cup whipping cream in 2-quart saucepan over medium heat until hot. Gradually stir at least half of the hot whipping cream into egg yolk mixture; stir back into hot cream in saucepan. Cook over low heat about 5 minutes, stirring constantly, until mixture thickens (do not boil). Stir in chocolate until melted. Cover and refrigerate about 2 hours, stirring occasionally, just until chilled.
- Beat 1 1/2 cups whipping cream in chilled medium bowl with electric mixer on high speed until stiff. Fold whipped cream into chocolate mixture. Pipe or spoon mixture into serving bowls. Refrigerate until serving.

Chocolate mousse is the ultimate dessert for any chocolate lover. We like to make ours using bittersweet chocolate, which is high in pure chocolate (at least 35 percent cocoa solids) and makes for a deep chocolate flavor. (Plus, it's also a great eating chocolate.) If you prefer semisweet chocolate, which has more sugar and fewer cocoa solids than bittersweet, know that it can often be substituted in recipes without significantly affecting the flavor or texture.

- In a medium saucepan, whisk together egg yolks, 2 tablespoons sugar, and 3/4 cup heavy cream. Cook over medium-low heat, stirring, until mixture coats back of spoon, 3 to 4 minutes (do not boil). Remove from heat; whisk in melted chocolate and vanilla. Strain into a bowl; chill until cool.
- With an electric mixer, beat remaining 1 1/4 cups heavy cream with remaining 2 tablespoons sugar until stiff peaks form. Stir 1/3 of whipped cream into cooled custard mixture, then gently fold in the rest with a rubber spatula.
- Spoon into serving dishes; chill, covered, at least 30 minutes and up to 3 days. Bring to room temperature before serving.

- Separate the cream from the chocolate sandwich cookies. Place the cookies in a plastic bag and the cream in a small bowl.
- Using a rolling pin, crush the cookies until they are finely ground.
- Microwave the cream from the chocolate sandwich cookies for 2 minutes.
- In a chilled medium bowl, beat the heavy cream using a hand mixer until thick and frothy.
- Add the cream from the cookies and the powdered sugar. Beat until stiff peaks form.
- Fold in the chocolate sandwich cookie crumbs, saving some as topping for later.
- Spoon into a piping bag or plastic bag with a piping tip. Pipe into serving bowls or glasses.

CHOCOLATE MOUSSE WITH COOKIE CRUMBLES

- Combine cookie crumbs and melted butter. Keep a couple tablespoons aside for topping, then divide the remaining crumbles between the cups for the mousse.
- 2. In a metal or glass bowl, whisk together egg yolks, sugar and 1/2 cup heavy whipping cream until combined.
- 3. Place bowl over a pot of simmering water and cook, whisking constantly. The mixture will thin out at first, then begin to thicken. Egg mixture will be ready when is has slightly thickened, lightened in color and has more volume. It should take about 7-10 minutes and reach 160 degrees. Do not boil. Remove egg mixture from heat and set aside.
- 4. Place chocolate chips in a small bowl and melt in the microwave in intervals of about 20 seconds, stirring between each interval, until smooth. Add chocolate to egg mixture and whisk until smooth. Set aside to cool to about room temperature.
- 5. In another bowl, make whipped cream. Whip remaining 1 1/4 cups of heavy whipping cream until it begins to thicken. Add powdered sugar to cream and continue to whip until it reaches stiff peaks.
- 6. Fold about a ¼ cup of whipped cream into the chocolate mixture until smooth to thin out the chocolate mixture a bit. Then fold about a 1/4 of the chocolate mixture into the whipped cream. Slowly fold in the remaining chocolate mixture.
- 7. Divide chocolate mousse between the cups then refrigerate until firm, 3-4 hours. Keep refrigerated until ready to serve.
- 8. Just before serving, top mousse with remaining cookie crumbles, a whoosh of Reddi-wip and some sprinkles.

- Beat eggs and granulated sugar with your mixer for about 3 minutes.
- Meanwhile heat 1 cup heavy whipping cream in a small saucepan until just hot, not boiling. With mixer on low pour the hot cream into the egg mixture slowly until combined.
- Next, add the egg/cream mixture back into the saucepan and over low heat, stir for five minutes constantly until thickened. Do not boil.
- Remove from heat and stir in chocolate until melted. Cover and refrigerate for 2 hours, until chilled, stirring occasionally.
- When the mixture is completely chilled and firm use your whisk attachment on your stand mixer to whip the remaining heavy cream until stiff peaks form. Remove chocolate from fridge and using the paddle attachment or a spoon fold/stir the whipped cream into the chocolate until incorporated and smooth. I found using the paddle attachment on low speed worked best.
- Serve immediately as-is, or refrigerate until ready to use.
