What better way to finish a meal than rich chocolate truffles and coffee? This easy dessert combines the two

200g dark chocolate
100ml strong coffee
4 tbsp favourite spirit, such as rum, brandy , Disaronno
400ml double cream
2 tbsp golden caster sugar
cocoa powder , to serve

Steps:

  • Break the chocolate into small chunks and tip into a bowl with the coffee and alcohol. Bring 250ml of the cream to the boil, then pour over the chocolate mixture and stir until the chocolate has melted and the mixture is smooth. Divide the mix between 6 coffee cups and leave to set overnight in the fridge.
  • To serve, whip the remaining cream with the sugar until just set. Spoon the cream onto the chocolate pots and serve dusted with cocoa powder so each cup looks like a cappuccino.

These deliciously rich and creamy chocolate truffles are infused with coffee, and sealed in a smooth chocolate shell!

12 oz (350g) chocolate (milk, dark or semi-sweet), coarsely chopped
2 tablespoons (27g) coconut oil
16 oz (450g) chocolate (milk, dark or semi-sweet), coarsely chopped
3/4 cup (180ml) heavy cream
1/4 cup (56g) unsalted butter, softened and cubed
2 tablespoons instant coffee granules or powder

Steps:

  • Add the chocolate and cream to a microwave-safe bowl, and heat in 30 second intervals, stirring after each one, until melted and smooth.
  • Stir in the butter and coffee granules until fully melted and combined.
  • Cover the bowl tightly and refrigerate overnight or until the ganache is completely set.
  • Line a large baking tray with parchment or wax paper.
  • Roll the mixture into 1oz balls, and place them onto the prepared baking tray. If the chocolate becomes too sticky to roll, coat your hands in cocoa powder to make the process easier.
  • Freeze the truffles for 30 minutes.
  • Add the chocolate and coconut oil to a microwave-safe bowl, and heat in 30 second intervals, stirring after each one, until melted and smooth.
  • Dip each truffle into the melted chocolate, place back onto the lined baking tray, and refrigerate until set.

2 1/4 cups half-and-half
1/4 cup sugar
1/4 teaspoon kosher salt
5 egg yolks
1 tablespoon cognac or flavored liqueur, such as Frangelico or Grand Marnier
1 teaspoon vanilla extract
Two 4-ounce bars semisweet chocolate, chopped
Whipped cream, cocoa powder, chopped toasted walnuts, chocolate curls, toasted coconut for garnish

Steps:

  • 1. Arrange eight 4-ounce ramekins or small coffee cups on a baking sheet. Heat the half-and-half, sugar and salt in a pot over medium heat until it just comes to a boil. Whisk the egg yolks with the cognac and vanilla in a medium bowl. Whisk about 1/2 cup of the hot half-and-half into the yolks until smooth and then whisk the egg mixture back into the pot. Continue to cook until the mixture thickens slightly, stirring constantly, 2 to 3 minutes. Place the chocolate in a large bowl and pour the hot cream mixture over the chocolate. Whisk until smooth and then lightly stir to remove any air bubbles.
  • 2. If the mixture is not completely smooth, pour through a strainer and then divide evenly between the ramekins. Chill until cold and set, at least 2 hours or overnight. Serve with a dusting of cocoa powder, whipped cream and/or a sprinkle of nuts, coconut or chocolate curls.

150 grams Heavy whipping cream
1 tablespoon Instant Coffee Powder
200 grams Dark chocolate
50 grams Butter (Unsalted) , at room temperature
7-8 tablespoons Cocoa Powder

Steps:

  • To begin making Coffee Chocolate Truffles Recipe, take a saucepan and add the heavy cream and bring it to a boil on low heat.
  • Once the heavy cream has come to a boil, add the Instant Coffee Powder and mix it well. Once coffee powder and heavy cream have combined well, turn off the flame.
  • Break dark chocolate in small pieces in a heatproof bowl. Add the softened butter to this bowl.
  • Pour the hot cream and coffee mixture to the chocolate and butter. Let it rest for one or two minutes. We will see that chocolate has started melting.
  • Stir the mixture until it forms a smooth consistency
  • Pour the mixture in a shallow dish,cover it with a cling wrap and keep it in fridge for an hour.
  • After an hour take truffle mixture out of the fridge. Scoop out some mixture using a spoon and roll them with your palm, do it quickly as if you keep rolling them, they might start melting.
  • Toss the truffle in cocoa powder and keep aside. Repeat the same process for the rest of the mixture.
  • Once done keep the Truffle in the fridge until they feel firm.

ESPRESSO COFFEE TRUFFLES

1 1/2 cups single cream
1/2 cup hot espresso coffee
29 ounces dark chocolate (recommended: cacao content of 70 percent or more)
Cocoa Powder, for coating

Steps:

  • In a saucepan slowly bring the cream to the boil. Turn off the heat and add the coffee and chocolate. Stir with a whisk until the mixture becomes smooth and the chocolate has melted. The liquid should have become slightly lighter and shinier at this stage. Pour into a jug and leave to cool for about 2 hours or until it has come down to room temperature. See Cook's note*.
  • Beat the mixture with an electric whisk for about 1 minute or until it changes color.
  • Line a square plastic container with baking paper and pour the chocolate mixture into it. Leave to set in the refrigerator for 2 hours. You can test this by pressing the top with your fingers. Run a spatula around the edges and lift the chocolate on the baking paper out of the dish and swiftly cut it lengthways into even strips of about 2/3-inch. Then cut these into cubes. Put cocoa powder into a flat dish and roll the cubes in it, making sure that they are well coated. The truffles can be kept for about 2 weeks.

  • In a small heavy saucepan combine heavy cream and coffee. Cook over medium heat until the milk starts to bubble up around the outside edges. Remove from heat and let the coffee steep for about 10 to 20 minutes. Strain cream with a sieve to remove grounds. Transfer the heavy cream to a clean small heavy saucepan and heat it back up just until it starts to bubble up. You don't want it to boil or scald.
  • Add the chocolate to a medium size bowl and slowly pour the warm heavy cream over top. Let the mixture sit for 1 minute. Whisk until smooth.
  • Pour the mixture into a small baking dish and place in the freezer for 20 minutes. Remove and use a tablespoon to scoop out small mounds. Roll each mound into a tiny ball. Set each one on a parchment lined cookie sheet. If they start to melt place them back in the freezer for a few minutes. It's easier to work with when cold.
