- Combine flour and white sugar in mixing bowl. Heat 1 cup butter, 3 tablespoons cocoa, and 1 cup cola soft drink to boiling and pour over the flour and sugar. Mix thoroughly.
- Add buttermilk, eggs, baking soda, vanilla, and marshmallows and mix well.
- Bake in a prepared 9 by 13 inch pan for 40 minutes at 350 degrees F (175 degrees C).
- While still hot, frost with Coco Cola Frosting: Combine 1/2 cup butter or margarine, 2 tablespoons cocoa and 6 tablespoons cola soft drink and heat to boiling. Pour over 4 cups confectioners' sugar and mix well. Mix in chopped nuts and spread over hot cake.

CHOCOLATE COLA CAKE
Adding cola to this chocolate cake makes it incredibly moist and impossible to stop at one slice!

- Heat the oven to 180C/350F/Gas4.
- Sift the flour, sugar, cocoa and bicarbonate of soda into a bowl. Melt the butter and cola drink gently in a pan then add to the dry ingredients, together with the milk, eggs and vanilla.
- Mix gently but thoroughly and tip into a buttered, loose based cake tin (24cm/9½ in diameter). Bake for about 40 minutes or until a skewer inserted into the centre of the cake comes out clean. Remove from the oven and leave for about 15 minutes while you make the topping. Put the butter, cola drink and cocoa into a pan and melt slowly. Bring the mixture to the boil and then pour onto the icing sugar. Beat until smooth and pour over the cake while still warm. Cool the cake in the tin.
- Serve with the sauce, made by melting the chocolate bar gently in a pan with a splash of cream (you may want to add a little warm water to achieve a pouring consistency), stir in the marshmallows if using.

I just happened to see this Double Chocolate Coca Cola Cake recipe on facebook from an old school friend. Her mother use to make this cake when we were kids and I remembered way back then when she brought it over for us to try. It was so good and brought back happy memories.

- Preheat the oven to 350º Fahrenheit. Spray a 9x13 baking pan with cooking spray.
- Whisk together flour and sugar in large mixing bowl.
- In a small saucepan, heat 1 cup butter, cocoa, and 1 cup cola soft drink to boiling.
- Pour over the flour and sugar and use a hand mixer to mix well.
- Add buttermilk, eggs, baking soda, vanilla, and marshmallows and mix well.
- Pour the batter in the prepared pan.
- Bake for 40 minutes or until the cake tests done.
- When the cake has about 10 minutes left of baking, make the frosting.
- In a small saucepan, melt butter, cocoa powder and cola. Heat over low heat just until the butter is melted.
- Turn up the stovetop temperature slightly until the mixture is just barely boiling. Stir often.
- Take off the heat right at boiling.
- Place the powdered sugar in large bowl.
- Pour the hot butter mixture over the confectioners' sugar. Use a hand mixer to mix well, scraping the sides of the bowl as needed.
- Spread the frosting over the cake while it is still hot.
- This cake is delicious served warm with a scoop of ice cream.
