Time 1h

Yield 12 serving(s)

Number Of Ingredients 12

1 cup flour
2 3/4 cups milk
3 eggs
2 tablespoons cocoa, unsweetened
1 tablespoon sugar
1 pinch salt
8 3/4 ounces mascarpone (8 oz cream cheese would work just increase cream a bit)
4 ounces chocolate (60-80% cocoa)
1 cup cream, whipped
3 tablespoons powdered sugar
1 tablespoon butter
raspberries (optional)

Steps:

  • In a bowl, stir together the flour, cocoa, salt, sugar.
  • Whisk in milk and add the eggs until well blended. Set aside.
  • For the filling, melt chocolate and butter at 40% power in the microwave, about 90 seconds.
  • Whip the creme.
  • After a few minutes add the mascarpone and icing sugar and mix well.
  • Fold in the chocolate and butter. Put in fridge.
  • Heat a lightly greased frying pan over medium heat. Pour a little batter into the pan, tilt and rotate the pan until the batter coats the bottom evenly. Cook for a few minutes then flip it and cook the other side as well for a couple of minutes.
  • There will be 12-15 pancakes from this batter.
  • Place a pancake on a board and spread with the cream.
  • Place in a row seam side down. Spread a thin layer of cream on the top.
  • Sprinkle the top with cocoa or grated chocolate.
  • If you want, put a raspberry on one end to simulate the burning end.
  • Serve creatively.

  • Heat the cream in a medium saucepan over medium-low heat until steaming but not boiling. Remove from the heat and stir in 1/4 cup of the loose leaf tea. Remove from the heat and steep for 10-15 minutes. Pour the cream through a sieve to strain out the tea. Transfer the cream back into the saucepan.
  • Return the saucepan to medium-low heat and cook again until steaming but not boiling. Remove from the heat and stir in the chocolate. Let stand for 1 minute. Using a whisk, stir the mixture until a glossy ganache is formed. Let stand at room temperature until the ganache thickens to the consistency of soft, spreadable chocolate frosting. Transfer the ganache to a disposable piping bag with a 1/2-inch hole snipped in the end.
  • Cut two pieces of waxed paper to 12×20 inches. Roll each piece up from the short side creating a 12×1-inch tube. Affix a piece of cellophane tape across the seam to hold the tube closed. Stand each tube upright inside two tall drinking glasses or tumblers. Place the tip of the piping bag into the opening of one of the tubes and squeeze until the tube is filled with ganache. Rap the glass on the work surface to remove air bubbles or gaps in the chocolate. Fill with more ganache if needed.
  • Transfer the tubes to the refrigerator to chill, about 3 hours or overnight. You will have a little leftover ganache, so I recommend rolling them into truffles.

  • To make tuiles, sift confectioners’ sugar over egg whites in a medium bowl. Add salt and whisk until the sugar is fully incorporated into the egg whites. Sift flour and cocoa over the top. Add butter and whisk until well combined. Scrape down the sides and let the mixture rest for at least 20 minutes before continuing.
  • Preheat oven to 350°F. Place paper rectangles (see Tools, above) under a silicone mat on a baking sheet. Spoon one barely mounded tablespoon of batter in the center of each rectangle. Spread the mixture with the back of small spoon to cover the rectangle as evenly as you can. The batter will be very thin.
  • Remove the tray from the oven. Work as carefully and quickly as you can while the tuiles are very hot, which is essential for shaping. Using a thin, flat spatula, flip one of the tuiles over on the hot baking sheet. Starting from the wider edge, wrap the tuile tightly around a wooden dowel (or spoon handle). Quickly set the tuile and dowel seam-side town on a cooling rack holding gently for a moment to make sure it won’t unroll. Repeat with the second tuile. If it is too stiff to roll, return the baking sheet to the oven for 30 seconds to a minute to soften before continuing. Once tuiles cool slightly, slip them off the dowels/handles.
