CHOCOLATE CHUNK APRICOT COOKIES
Perfectly chewy and thick chocolate chunk apricot cookies. One of the best flavor combinations ever!

- In a large bowl beat together the butter and shortening with an electric mixer. Add both sugars and beat until fluffy. Beat in the eggs, corn syrup and vanilla. In a separate bowl combine the flour, baking soda, and salt; stir with a whisk. Add the flour mixture to the egg mixture, beat until combined. Stir in the chocolate chunks and apricots. Cover and refrigerate dough for at least 2 hours.
- Preheat the oven to 350ºF. Roll the dough into 1 tablespoon sized balls and place 2 inches apart on a baking sheet lined with a silicone mat. Bake for 10 to 12 minutes or until lightly brown and just underdone. Cool cookies on the pan for 10 minutes. Remove from the pan and cool completely on a wire rack.

- In a large bowl, beat the egg, sugar, butter, vanilla, lemon zest and almond extract until blended. Combine flour and baking powder; stir into egg mixture and mix well., Bake in a preheated pizzelle iron according to manufacturer's directions until golden brown. Remove cookies and immediately shape into tubes. Place on wire racks to cool., In a small saucepan, combine sugar and cornstarch. Stir in milk until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in vanilla and cinnamon oil if desired. Cool completely., In a large bowl, beat ricotta cheese until smooth. Gradually beat in custard mixture. Fold in chocolate. Spoon or pipe into shells. Dip each side in pistachios. Serve immediately. Refrigerate leftovers.

CANNOLI DIP WITH HOMEMADE WONTON CHIPS
Steps:
- Fill a Dutch oven ⅓ full of oil, and heat the oil to 350°F. Once the oil is hot, carefully separate the wonton wrappers and fry them, in a single layer, about 1 minute (flipping them 2-3 times), or until golden brown.
- Transfer the wonton chips, with a slotted spoon, tongs or Asian spider skimmer, to a wire rack set over a rimmed baking sheet and sprinkle with kosher salt, if desired.
- Repeat until all wonton wrappers are fried. Once completely cooled, store in an airtight container until ready to serve.
- If using BelGioioso Whole-Milk or a dry(ish) ricotta it isn't necessary to strain the ricotta. If using fresh ricotta or ricotta that has extra liquid (whey), it is important to strain it from the ricotta. To do this, place a paper towel over the ricotta still in the container. Turn the ricotta and container upside down and set it in a wire mesh sieve for 30 minutes. Discard the excess whey.
- Pour the strained ricotta, sugar, orange zest, and vanilla in a medium bowl. Mix, using a hand mixer, on medium-high speed for 2 minutes. The mixture should be a little fluffier than at first.
- Gently fold in the candied ginger and chocolate chips.
- Refrigerate in an airtight container at least 2 hours before serving.
- Serve, chilled, with fresh fruit or wonton chips, or pipe into cannoli shells.

- For filling, Combine ricotta cheese, sugar, cocoa powder, and vanilla in a medium bowl; Stir or beat until smooth, fold in chocolate pieces; Cover and chill.
- Spoon filling into a pastry bag fitted with a large tip; Pipe filling into cones.
- Sift powdered sugar over cones; Chill UP TO 1 Hour.
- Don't let set longer, they will get soggy.
CHOCOLATE CHUNK AND APRICOT CANNOLI

- Puree ricotta in processor. Blend in mascarpone. Add preserves; process until incorporated but some small chunks remain. Add chocolate; mix until just blended, using on/off turns (do not puree).
- Transfer mixture to pastry bag without tip. Pipe into shells. Sprinkle ends of cheese filling with coffee. Chill until cold. (Can be made 6 hours ahead. Keep refrigerated.) Sift powdered sugar over cannoli.
CHOCOLATE CHIP CANNOLI CUPCAKE
Steps:
- For the cupcakes: Preheat the oven to 350 degrees F. Line regular sized cupcake pans with 24 liners.
- Sift the flour, baking powder, baking soda, and salt in a bowl. Set aside. In a mixing bowl fitted with a whisk attachment, beat the eggs and sugar until light in color and fluffy. Scrape down the sides of the bowl. Add the oil and vanilla. Mix until incorporated. Add the sour cream. Mix until just incorporated. Add the dry ingredients to the wet mixture, and mix until just blended.
- Fill the cupcake liners three-quarters full with batter and bake until baked through and golden brown, 18 to 22 minutes. Cool completely.
- For the cannoli cream: In a mixing bowl fitted with the whisk attachment, beat the ricotta, confectioners' sugar, and vanilla on medium speed for about 5 minutes. Stir in the mini morsels.
- For the whipped cream: Beat the cream and sugar together in a mixing bowl fitted with a whisk attachment until the cream is whipped.
- To assemble: Using a small knife, cut on an angle directly into top of the vanilla cupcake in a circular pattern, staying within the perimeter of the top, removing the inside of the cupcake in one piece. Using a spoon or small scoop, fill the inside of the cupcake with Chocolate Chip Cannoli Cream. Place the top of the cupcake back on, putting a little pressure so that the top is pressed into the cream, holding it in place. Top with a dollop of Fresh Whipped Cream and garnish with mini morsels.

- In a large bowl, whip 1 egg with the sweet wine and 3 tablespoons of oil. Gradually add the flour (you may not need it all) until it comes together into a ball of dough. Knead for a few minutes, or until smooth and silky. Wrap in clingfilm and leave to rest for 1 hour.
- Pour the sunflower oil into a large, sturdy pan on a medium-high heat, and leave it to get to 180ºC on a thermometer. Meanwhile, roll the dough into a large sausage about 4cm in diameter. Keeping the rest of the dough covered with a clean damp tea towel, slice off a ½cm-thick disc and roll into a ball, then flatten out on a flour-dusted surface to 2mm thick. Lightly dust your metal cannoli tubes with flour (or use lightly oiled dried cannelloni tubes), then wrap a circle of dough around each, sealing the edges with beaten egg. Working in batches, carefully lower into the hot oil for just 1 minute, to get lightly golden. Remove to a plate lined with kitchen paper to drain for 3 minutes, then squeeze the moulds and gently slide off the cannoli. Repeat until you’ve used up all the dough.
- Melt the chocolate. Pound the hazelnuts in a pestle and mortar until fine. Drain the ricotta, then blitz in a food processor with the vanilla paste, honey, cocoa and grappa until just smooth. Spoon into a piping bag with a star nozzle, and twist the bag to give tension, then pipe the filling into the cannoli. Drizzle with chocolate, sprinkle with nuts, and serve.

- In a medium bowl, mix the flour, sugar and cinnamon together. Cut in the shortening until it is in pieces no larger than peas.
- Make a well in the center, and pour in the 1 egg plus 1 egg yolk (Lightly beat the egg + yolk before adding. Save the unused egg white for later), Marsala wine, vinegar and water. Mix with a fork until the dough becomes stiff, then finish it by hand, kneading on a clean surface. Add a bit more water if needed to incorporate all of the dry ingredients. Knead for about 10 minutes, then cover and refrigerate for 1 to 2 hours.
- Break off a piece of the cannoli shell dough. I found it easiest to work in small pieces, in chunks a little larger than a golf ball. Flatten just enough to get through the pasta machine on the largest setting. Continue to roll out the dough through the past machine on successively thinner settings until you have reached the desired thickness, dusting with flour when necessary. I went to setting #5, but our shells were thin and delicate. You may want to stay at #4 if you prefer a heartier shell. Place the thin sheet of dough on a lightly floured surface.
- Using a large cookie cutter (or a large glass or small bowl will do) cut into approximately 4 to 5 inches circles. Dust the circles with a light coating of flour to help ensure they can be removed from the tube forms easily later.

- In a large bowl, whisk together the flour, baking powder, salt and sugar. Add the butter in small chunks and massage it into the flour with your fingertips. The butter shouldn’t be in large pieces (like if you were making pie dough) but should more closely resemble grated parmesan cheese or coarse meal (whatever that means).
- Pour the cream, eggs, and vanilla into a large measuring cup and whisk until smooth. Add this mixture to the flour and butter and mix until a little dry flour remains. Toss in your dried apricots and chocolate chunks and continue to mix until everything is incorporated and no dry flour remains.
- Divide the dough in half. On a lightly floured surface, gently press each half into a 6 inch circle (about 1 inch thick). Using a sharp knife, divide each circle into 6 wedges.
