CHOCOLATE CAKE WITH GANACHE AND VANILLA MOUSSE FILLING
This is a chocolate cake to put other chocolate cakes to shame! The basic cake is built around some cake mix hacks to keep the baking simple but with true homemade flavor. The vanilla mousse filling is also very easy to whip up. Instead of having to fuss with frosting the cake you just pour an easy ganache over the top layer - chocolate and done! Please note that this cake is best served chilled and that the leftovers have to be refrigerated.

VANILLA BEAN ICE CREAM

- Combine the heavy cream, milk, and vanilla pod and seeds in a large saucepan. Bring to a gentle simmer over medium-high heat, then remove from the heat.
- Whisk the egg yolks, sugar and salt in a medium bowl. Ladle half of the cream mixture into the egg mixture and whisk to combine; return to the saucepan with the remaining cream mixture. Cook over medium heat, stirring constantly with a wooden spoon in a figure-8 motion, until the custard is thick enough to coat the back of the spoon, about 10 minutes.
- Strain the custard through a fine-mesh sieve into a blender; discard the vanilla pod. Puree until frothy, about 30 seconds; pour back into the bowl. Cover with plastic wrap and refrigerate at least 3 hours or overnight.
- Transfer the chilled custard to an ice cream maker and churn according to the manufacturer's instructions. Transfer to a resealable container and freeze until firm, about 2 hours.

- Preheat the oven to 350 degrees F. For the cake: Put the eggs and 1 cup of the sugar in a large mixing bowl and, with an electric mixer fitted with a wire whisk, beat on medium-high speed until the mixture is pale yellow, thick and has tripled in volume, about 8 minutes. Sift the cocoa, flour and baking powder together in another large mixing bowl. Add the egg mixture and fold to mix thoroughly. Grease 2 (9 by 2-inch) round cake pans with the butter. Sprinkle each with a tablespoon of the remaining sugar. Pour the cake batter evenly into the pans and bake until the cake springs back when touched, about 25 minutes. Let cool for about 2 minutes. Using a thin knife, loosen the edges of the cakes and flip onto a wire rack. Let cool completely. Sift together the confectioners' sugar and cocoa powder into a medium-size bowl. Add the butter and mix with an electric mixer until incorporated. Add the vanilla and boiling water and mix until smooth. Let cool. In the bowl of an electric mixer, combine the cream and the chocolate. On medium speed. Whip until stiff peaks form, set aside.
- To assemble the cake: Line a baking sheet with parchment paper and place a wire rack over it. Using a serrated knife, cut each cake in half horizontally. Brush the tops of three of the layers with 1/4 cup of the simple syrup. Place the bottom layer on a 9-inch round of cardboard and set it on the wire rack. Spread 3/4 cup of the mousse evenly on top of the cake. Top with a second layer of cake. Spread another 3/4 cup of the mousse over the top of the cake. Repeat the same process with the third layer. Top with the fourth layer. If necessary, shave off any uneven pieces of the cake with a serrated knife so that it is smooth and even on all sides. Chill for 2 hours. Spread the frosting evenly over the sides and top of the cake. Refrigerate until the frosting sets. Place the chocolate curls on top of the cake. Slice and serve with the ice cream.

- Preheat the oven to 350 degrees F. Butter and flour two 9-inch cake pans. In a small bowl, whisk together the flour, cocoa, baking powder, soda and salt.
- In the bowl of your electric mixer, beat the eggs, sugar and oil together until combined, mixing on medium speed for about 2 to 3 minutes. Stir in the milk, vanilla extract and paste. With the mixer on low speed, stir in the dry ingredients, and once they are all added, increase the speed to medium-high. Beat the cake batter for another 2 to 3 minutes. Pour the hot coffee into the batter and stir by hand to incorporate it – it will seem a bit thin and water, but stir and fold the batter until it is combined. Pour the cake batter evenly into both pans. Place in the oven and bake for 30 to 35 minutes, or until the center is set. Let the cake cool almost completely (I wait about 25 minutes) before gently turning it out on parchment paper. This cake is super moist and soft, so be careful!
- I like to wrap the cakes in plastic wrap once cool and refrigerate or freeze so they are easier to frost. I freeze them overnight. Then I make the frosting the next morning and go from there. To frost, remove the cakes and place a layer of the chocolate fudge frosting on one of the cakes. Top it with a big spoonful of the cocoa frosting and even it out with a spatula or spoon. Place the other cake layer on top.
- For the multiple frostings on the outside, I start at the bottom and using a knife, place big scoops of the frosting onto the bottom of the cake, all around. I then do the same with the cocoa frosting. Finally, I do the same with the vanilla, place it on top and down the top edge. It looks messy! (See photo above.) Using an offset spatula or knife, start dragging it around the cake so all of the frosting smoothes out at once. I do this multiple times, using multiple spatulas (or just washing the one I have) until it looks smooth enough to my liking. It’s supposed to look messy and like the colors are run together.

- Put the sliced butter in a small bowl and place it in the freezer. Fill a medium liquid measuring cup with water and add plenty of ice. Let both the butter and the ice eater sit and get very cold for 5 to 10 minutes.
- Place the chocolate in a small bowl. Heat the heavy cream in a small saucepan until it is simmering and just about to boil. Pour the cream over the chocolate, cover the bowl with plastic wrap, and let sit for 5 minutes.
- In the bowl of a stand mixer fitted with a whisk, beat together the mascarpone cheese, sugar, and salt on low speed until combined. Increase the speed to medium and beat until light, 2 to 3 minutes. On low speed, slowly add half the cream until combined, then stop the mixer and scrape down the sides of the bowl, making sure the cheese is completely combined into the cream. Add the rest of the cream on low speed. Increase the speed to medium-high and beat until the cream is smooth, thick, and nearly double in volume. When the pie is set, top with the whipped cream.

- Whisk together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes.
- Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.
- Once cakes have cooled, use a sharp serrated knife to cut each cake evenly in half, horizontally, so you end up with four cake layers.
- Place your first cake layer on a serving plate. Spread about a 1/4 of the of mousse filling on top of that cake layer. Repeat with the remaining cake layers, adding a layer of mousse filling between each layer of cake.
- To make the mousse filling dissolve the cocoa in the hot water. In a microwave-safe bowl melt the chocolate chips by cooking for 1 minute on high, stir and continue cooking in 30 second increments at 50% power until chocolate chips are melted and can be stirred smooth.
- To make frosting, melt butter in a medium saucepan over low heat. Whisk in milk, vanilla, and cocoa, whisk until smooth. Remove from heat and stir in powdered sugar and pinch of salt.
