- In a large bowl, cream butter and brown sugar until well blended. Add eggs, one at a time, beating well after each addition. Beat in applesauce and 1/2 cup coffee. Combine the flour, 1/4 cup baking cocoa, cinnamon, baking soda, allspice, salt and cloves; gradually beat into creamed mixture until blended. Fold in raisins and walnuts., Pour into a 10-in. fluted tube pan coated with cooking spray. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely., In a small bowl, combine the confectioners' sugar and remaining baking cocoa and coffee; drizzle over cake.

CHOCOLATE-PUMPKIN SPICE CAKE
My version of moist pumpkin cake with cocoa and chocolate chips added for a yummy chocolate, pumpkin, and spice cake taste. Melts in your mouth. You must try it! Ice with your favorite chocolate buttercream frosting.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 10x15-inch baking dish with cooking spray.
- Combine sugar, oil, and eggs in a large bowl; beat with an electric mixer until combined. Mix in pumpkin.
- Sift together flour, cocoa, pumpkin pie spice, baking powder, baking soda, and salt in a separate bowl. Add to the pumpkin mixture until just combined; do not overmix. Stir in chocolate chips. Pour batter into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 30 minutes. Let cool completely.

CHOCOLATE CHIP SPICE CAKE
I made this by playing with a basic quick bread/cake recipe that my mother taught me when I was about 10. She used to flavor it with anything she had on hand: oranges, chocolate, pureed carrots or just plain vanilla with pecans to name a few. It's very moist and is a friendly companion for your morning coffee. I'm not a fan of frostings but you could frost it if you like.

- Preheat oven to 375 degrees. In a bowl, mix all the dry ingredients except the sugar and set aside. In another bowl, cream the butter with the sugar. Add the eggs one by one, mixing well after every addition. Add the vanilla and mix well. Start adding the flour mixture, 1/3 at a time and alternating it with the milk, beating on low so that it incorporates smoothly. Pour the chocolate chips in and mix them in with a spatula or spoon. Pour batter into a greased cake pan and bake for 25-35 minutes or until golden brown and a toothpick inserted n the center comes out clean.

CHOCOLATE CHIP APPLESAUCE CAKE
At last, an easy-to-make "scratch" cake recipe that does not need frosting! Recipe has been modified from one given to me by a friend years ago... 6/30/07 NOTE: This is not a standard chocolate cake recipe nor a spice cake recipe. The cocoa and chocolate chips help add to the "dark chocolaty" flavor and appearance but the applesauce and spices give it a unique flavor addition, producing a dark, moist cake with a different flavor with the added bonus of being a no-frost cake.

- Grease and flour a 13x 9" baking pan.
- In large mixing bowl, mix oil and 1 1/2 c sugar.
- Add beaten eggs, flour (no need to sift), cinnamon, salt, applesauce, baking soda and cocoa and mix until well-blended.
- Pour into pan and sprinkle with 1 1/2 T sugar, nuts (chopped walnuts or pecans) and 3/4 C chocolate chips.
- Bake at 350 dg. for 30-40 mins, until top springs back when touched, covering with foil if top gets too brown.
- Moist and delicious!

- Cream butter and sugar.
- Add egg yolks one at a time til blended.
- Stir in melted chocolate, mashed potatoes, lemon rind, and vanilla.
