Both of my daughters love these chocolate chip muffins! I usually double this chocolate chip muffin recipe so I have extras to keep in the freezer for a quick breakfast or snack. -Lori Thompson, New London, Texas

Time 35m

Yield 1 dozen.

Number Of Ingredients 8

2 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 large egg, room temperature
3/4 cup 2% milk
1/3 cup vegetable oil
3/4 cup miniature semisweet chocolate chips

Steps:

  • Preheat oven to 400°. In a large bowl, combine the first 4 ingredients. In a small bowl, beat egg, milk and oil. Stir into dry ingredients just until moistened. Fold in chocolate chips. , Fill 12 greased or paper-lined muffin cups three-fourths full. Bake until a toothpick comes out clean, 18-20 minutes. Cool for 5 minutes before removing to a wire rack.

Posted for safe-keeping; made public by request for a friend and for any fellow wheat grinders out there! :) Yield amount is an estimate.....I can't remember if these yield more than a dozen..... **NOTE** Flour amounts will not be the same if you are using store-bought all-purpose or wheat flour.

2 1/4 cups freshly ground flour (half soft white wheat and half hard white wheat)
1 cup buttermilk
1 teaspoon salt
1 egg
1 teaspoon baking soda
1/2 cup oil
1 teaspoon baking powder
3/4 cup sucanat with honey or 3/4 cup brown sugar
1/2 cup chocolate chips

Steps:

  • Measure dry ingredients into mixing bowl.
  • Add liquids and mix just until well blended.
  • Drop by spoonfuls into greased muffin tins.
  • Bake at350° for 15 minutes.
