- Preheat oven to 350°F.
- Pour boiling water over dates and set aside to cool.
- Mix 1 cup sugar, oil, eggs, cocoa, dates with water, baking soda, salt and vanilla together and blend well.
- Stir in the flour until well blended.
- Pour into a greased and floured 9x13-inch cake pan.
- Sprinkle the topping ingredients on top of cake mixture in this order: chocolate chips, walnuts and sugar.
- Bake for 35-40 minutes. Cool.

- In large bowl, pour boiling water on dates. Stir in 1 teaspoon baking soda. Cool about 15 minutes or until lukewarm.
- In small bowl, mix all topping ingredients; set aside.
- Heat oven to 350°F. Stir all cake ingredients into date mixture. Pour into ungreased 9-inch square pan. Sprinkle with topping.
- Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool completely, about 2 hours.

- 1. Chop dates and place in a medium size heat proof bowl. Add baking soda and pour boiling water over dates and soda. Stir and cool. Water will foam up.
- 2. Cream shortening and sugar until well creamed. Add eggs and beat until smooth
- 3. Mix together dry ingredients in separate bowl.
- 4. Drain cooled water from dates and alternately add flour and date water to creamed sugars. Start and end with flour adding a little of each at a time. Stir in vanilla.
- 5. Grease and flour a 9x13 cake pan. Pour batter in pan.
- 6. Mix topping ingredients together in medium size bowl and sprinkle on top of batter.
- 7. Bake at 350 degrees for 30-35 minutes. Bake until toothpick comes out with a moist crumb on the toothpick. Do not overbake.

- Preheat oven to 350 degrees. Place chopped dates in a small bowl and sprinkle with baking soda and pour on hot water. Set date mixture aside to cool. Using your mixer cream shortening and sugar. Add eggs and mix about 30 seconds. Add cooled date mixture. Combine flour, salt and cocoa and gently mix in. Add vanilla and mix until combined. Stir in 1/2 cup of the chocolate chips. - Preheat oven to 350°F/180°C. Grease a 9x5-inch loaf pan. Set aside.
- In a medium bowl sift together flour, baking powder, and salt. Set aside.
- Note: In this step it's possible to whisk the ingredients in the same order with a hand whisk instead of using a mixer. Mixing the ingredient slowly and with the paddle attachment in the mixer gives the cake a more 'cakey', light texture. In this case there's no need to mix for a few minutes, mix only until the ingredients are combined.In a medium bowl using a mixer fitted with the paddle attachment, beat butter, oil, and sugar on medium speed for about 4 minutes, until light and fluffy. Scrape down the sides and bottom of the bowl as necessary. Add eggs and vanilla extract and beat until combined. On low speed, beat in flour mixture in 3 additions, alternating with the buttermilk (or sour cream/heavy cream) in 2 additions, starting and ending with the flour. Mix in chocolate chips. Once all is added, be careful not to overmix the batter.
- Scrape batter into prepared pan and smooth the top. Bake for 45-60 minutes or until a toothpick inserted into the center of the cake comes out clean. If the top browns too quickly while baking, cover pan loosely with aluminum foil. Allow cake to cool completely on a wire rack.
- Store cake at room temperature in an airtight container for up to 2 days or refrigerate for up to 5 days. Serve at room temperature.

- Place dates in a small bowl and add enough hot water to cover. Allow to sit for 10 minutes to soften.
- Preheat the oven to 350 degrees F (175 degrees C). Line 2 large baking sheets with parchment paper.
- Remove dates from water, reserving soaking liquid. Combine dates, walnuts, and vegetable oil in the bowl of a large food processor. Pulse several times until mixture forms a paste and no large chunks of dates remain; this may take several minutes. If mixture is too dry, add soaking liquid, 1 tablespoon at a time, until a paste-like consistency is reached. Add egg and vanilla extract; pulse to combine. Add oats, cocoa powder, baking soda, cinnamon, and salt. Pulse until combined, scraping down the sides of the bowl as necessary. Fold in chocolate chips; dough will be very sticky.
- Use a medium cookie scoop to place rounded balls of dough 1-inch apart on the prepared baking sheets. Press tops of dough down with damp fingers to flatten slightly.
- Bake in the preheated oven until cookies are just set, 13 to 15 minutes. Allow to cool on the baking sheets for 5 minutes before removing to wire rack to cool completely. Keep stored in refrigerator until ready to serve.

CHOCOLATE CHIP DATE NUT CAKE
This was my favorite birthday cake growing up as a young boy. Everytime my Grandma Laura would come to visit us in Taos, NM, she'd pick one up from Dory's Bakery and bring it over. I was able to get ahold of Dory long after she'd sold the place and surprisingly she still remembered me and my mother, Joan, who was her friend. She gladly gave me the recipe although the measurements were obviously for multiple cakes, I quartered it and came up with the right increments for just one really large one or a couple regular ones. This cake doesn't include frosting but was sprinkled with powdered sugar and served. Believe me when I tell you the frosting is not missed! This coming from a former little boy with a hell of a sweet tooth!
