This is one of my very favorite cake recipes. It is so soft and fluffy. I like making it for birthdays and decorating it with chocoate icing.

1/2 cup sugar
2/3 cup brown sugar
2 eggs
1 teaspoon vanilla
2 cups flour, plus
4 tablespoons flour
1 teaspoon salt
1 teaspoon cream of tartar
1 teaspoon baking soda
2 cups semi-sweet chocolate chips

Steps:

  • Beat butter and sugars together.
  • Add eggs and vanilla.
  • Mix flour, salt, baking soda, and cream of tartar.
  • Add dry ingredients to the batter and mix until well blended.
  • Stir in chocolate chips.
  • Spread dough into a 15 1/2 inch round pan.
  • Bake for 20 minutes at 350 degrees.

Soft, chewy, chocolaty chocolate chip cookies that are positively childishly yummy! These are a finals pick-me-up for our college student daughter.

1 cup unsalted butter
1 ½ cups white sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
½ teaspoon baking soda
½ teaspoon kosher salt
⅔ cup unsweetened cocoa powder
1 cup chopped walnuts
2 cups semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy. This should take about 10 minutes! Add the eggs one at a time and mix to incorporate. Add the vanilla and mix thoroughly.
  • In a 1 gallon plastic food bag, place the all-purpose flour, baking soda, kosher salt and cocoa powder. Seal the bag and massage the ingredients to combine. The mixture will appear homogenous with no separate ingredients showing.
  • Add the flour and cocoa mix to the creamed butter and sugar. Mix together until the dough appears completely combined - about 3 minutes. Add all the walnuts and chocolate chips and stir them into the dough. Drop by two teaspoonfuls onto an ungreased cookie sheet. Or roll into balls, place about two inches apart on the sheet, and flatten slightly with your fingers.
  • Bake for 11 minutes at 350 degrees F (175 degrees C). The cookies will appear to be just barely firm with a sheen to their surfaces. Allow to cool on the sheet for about one minute before removing to a cooling rack to cool completely. Store in airtight containers.

Steps:

  • Heat oven to 350°F. Spray 36 mini muffin cups with cooking spray. In medium bowl, mix chocolate chips, pecans, brown sugar, vanilla, salt and 1 of the eggs until blended. Cover and refrigerate.
  • In large bowl, stir cookie mix, butter and remaining egg until soft dough forms. Shape dough into 36 (1-inch) balls; place in muffin cups. Bake 8 minutes or until edges are set.
  • Spoon chilled chocolate chip mixture evenly over baby cakes. Bake 8 minutes longer. Cool 5 minutes; remove from pans to cooling racks. Cool completely. Sprinkle with powdered sugar.

  • Heat oven to 350°F (325°F for dark or nonstick pans). In large bowl, beat cake mix, butter, 1 tablespoon milk, vanilla and egg with electric mixer on medium speed until smooth, or mix with spoon. Mix in additional 1 tablespoon milk if dough is too dry. Stir in nuts and chocolate chips.
  • Drop dough by slightly less than tablespoonfuls 2 inches apart on ungreased cookie sheets.
  • Bake cookies 10 to 12 minutes or until edges are set (centers will be soft and cookies will be very light in color). Cool 1 minute; remove from cookie sheets to cooling rack. Store covered.

1 1/2 cups sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups sour cream
3/4 cup margarine or 3/4 cup butter, softened
1 teaspoon vanilla
3 eggs
1/2 cup sugar
1 teaspoon cinnamon
1 (6 ounce) package chocolate chips (mini or regular)

Steps:

  • Heat oven to 350 degrees.
  • Grease (not oil) a 13 x 9 pan.
  • In large bowl, combine first 9 ingredients.
  • Mix well by hand or use a mixer at medium speed for about 3 minutes.
  • Pour half of the batter (about 2 1/2 cups) into the prepared pan.
  • In separate small bowl, combine the sugar and cinnamon.
  • Sprinkle half of the sugar mixture and chocolate chips (1/2 cup) over batter.
  • Repeat with remaining batter, sugar mixture, and chocolate chips.
  • Bake at 350 degrees for 30-35 minutes or until toothpick inserted in center comes out clean.

1 teaspoon baking soda
1 teaspoon salt
1 cup butter, at room temperature
¾ cup white sugar
¾ cup firmly packed brown sugar
4 large eggs
1 teaspoon vanilla
2 cups milk chocolate chips (such as Guittard®)
1 cup chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking pan.
  • Stir flour, baking soda, and salt together in a bowl.
  • Beat butter, white sugar, and brown sugar together in a bowl with an electric mixer until light and fluffy, 3 to 5 minutes. Beat eggs and vanilla into butter mixture until smooth. Gradually stir flour mixture into butter mixture until just combined. Stir in chocolate chips and nuts. Spread cookie batter into prepared pan.
  • Bake in the preheated oven until golden and the cake springs back when lightly pressed, 20 to 25 minutes. Cool before cutting into 2-inch squares.

1 egg
⅓ cup oil
1 teaspoon vanilla extract
¼ teaspoon baking powder
¼ teaspoon salt
milk, if needed
¾ teaspoon matcha powder, optional
chocolate chip

Steps:

  • Preheat the oven to 320°F.
  • In a large bowl, whisk together the egg, oil, sugar, and vanilla extract. Then, sift in the flour, salt, and baking powder.
  • Add a few tablespoons of milk at a time to thin the batter if needed; the batter should be loose and smooth, similar to cake batter.
  • If making matcha cookies too, divide the batter equally into 2 bowls and incorporate the matcha powder into one of the bowls.
  • Using a spoon, drop the batter onto a greased tray to form individual cookies. Gently press 2-3 chocolate chips onto the top of each cookie.
  • Bake for 6-8 minutes, or until golden brown around the edges; let cool.
  • Enjoy!
