¼ cup brown sugar
1 ½ cups all purpose flour
1 teaspoon baking soda
½ cup butterscotch chips
½ cup white chocolate chip
¼ teaspoon salt
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350°F
  • Mix sugars, butter, egg, and vanilla extract in a medium bowl.
  • Stir in flour, baking powder, salt, white chocolate and butterscotch until dough.
  • Scoop onto a greased baking sheet and place in the oven for 10 to 12 minutes.
  • Let cool for 10 minutes.
  • Enjoy!

2 ¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter-flavored shortening
¾ cup white sugar
¾ cup packed light brown sugar
2 tablespoons spiced rum
1 teaspoon vanilla extract
2 large eggs
½ (12 ounce) package white chocolate chips
½ (12 ounce) package butterscotch chips

Steps:

  • Sift flour, baking soda, and salt together in a small bowl.
  • Beat shortening, white sugar, brown sugar, rum, and vanilla extract together in a separate bowl. Add eggs one at a time, beating well after each addition. Stir in white chocolate and butterscotch chips. Fold in the flour mixture until just combined. Refrigerate dough until firmed up slightly, about 30 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Place a baking stone in the oven.
  • Drop dough by rounded tablespoonfuls onto the preheated baking stone. Bake until cookies start to turn golden, about 11 minutes. Remove from oven and let cookies rest on the stone for a few minutes. Transfer them onto a wire rack to cool completely.

2 cups (250g) all-purpose flour (spoon & leveled)
2 teaspoons cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup (1.5 sticks or 170g) unsalted butter, softened to room temperature
3/4 cup (150g) packed light or dark brown sugar
1/4 cup (50g) granulated sugar
1 large egg, at room temperature
2 teaspoons pure vanilla extract
1/2 cup pretzel pieces
1/2 cup (90g) butterscotch morsels
1/2 cup (90g) semi-sweet chocolate chips

Steps:

  • Whisk the flour, cornstarch, baking soda, and salt together in a medium bowl. Set aside.
  • In a large bowl using a hand-held mixer or stand mixer with paddle attachment, beat the butter, brown sugar, and granulated sugar together on medium speed until combined and creamy, about 2 minutes. Beat in the egg and vanilla. Scrape down the sides and bottom of the bowl as needed.
  • On low speed, slowly beat the dry ingredients into the wet ingredients until combined. The cookie dough will be thick. Beat in the pretzels, butterscotch morsels, and chocolate chips on medium speed until combined. Cover dough tightly with aluminum foil or plastic wrap and chill for at least 1 hour and up to 3-4 days.
  • Preheat oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats. (Always recommended for cookies.) Set aside.
  • Roll into balls, about 1.5 Tablespoons of dough each, and arrange 2-3 inches apart on prepared baking sheets. Bake for 11-12 minutes or until edges are slightly browned. The centers should still look soft. While the cookies are still warm, press additional morsels or chips into the top (if desired and only for looks!).
  • Cool cookies on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  • Cookies stay fresh covered at room temperature for up to 1 week.

Steps:

  • Preheat oven to 350 degrees. Line two baking sheets with parchment paper, and set aside. In a medium bowl, whisk together flour, baking soda, and salt; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugars until light and fluffy, about three minutes. Add eggs and vanilla; beat until well combined. Add the flour mixture all at once, and beat until just combined. Stir in chips.
  • Drop tablespoons of batter onto prepared baking sheets, two inches apart. Bake until golden brown, about 12 minutes. Transfer to a wire rack to cool on baking sheet, one minute, then transfer cookies to rack to cool slightly. Repeat until all batter has been used.

1 cup (2 sticks) butter
1 cup sugar
1 cup brown sugar
1 tsp. baking powder
1 tsp. baking soda
1 1/4 tsp. salt
2 large eggs
1 tsp. vanilla extract
2 1/2 cups old fashioned rolled oats
2/3 cup white chocolate chunks or chips
2 cups flour
1 cup peanut butter chips or butterscotch chips
1 cup semi-sweet or dark chocolate chips
1 1/2 cups chopped pecans or walnuts

Steps:

  • 1. Preheat oven to 350-375 degrees. Lightly grease baking sheet or use parchment. (Recipe says 375 degrees, but my oven bakes hot, so I bake at 350 degrees.)
  • 2. Beat together butter,sugars, baking powder, baking soda and salt. Beat in the eggs and vanilla.
  • 3. Using a blender or food processor, process the oats with the white chocolate until the oats are finely ground and the white chocolate is mostly ground.
  • 4. Add the oats and flour to the butter mixture. Then stir in the peanut butter or butterscotch chips, chocolate chips and chopped nuts.
  • 5. Drop by tablespoonfuls, 2" apart onto prepared baking sheets.
  • 6. Bake the cookies for about 11 minutes until they are just set. They may be barely starting to brown around the edges, but the tops won't yet be brown. Don't over bake! Remove from oven and cool.
