BEST VEGAN CHOCOLATE CHIP LOAF CAKE (GLUTEN FREE OPTION!)
This deliciously "buttery" yet light and perfectly sweet vegan chocolate chip loaf cake is undetectably dairy free and eggless and SO easy to make with just one bowl and a whisk! Topped with a quick chocolate ganache for the ultimate vegan loaf cake that everyone will love, vegan or not!

Steps:
- Measure all ingredients before beginning. Grease and line an 8 or 9″ loaf pan with cooking oil and parchment paper. Preheat the oven to 350F.
- ingredients: In a medium bowl, whisk together the flour, arrowroot starch, and baking powder. Set aside.
- In a large bowl, whisk together the butter, sugar, dairy free yogurt, and vanilla extract. Then add in the dry ingredients and diary free milk, whisk just up until the flour is nearly all incorporated. Lightly tap the whisk on your bowl if there is any batter stuck in the whisk. Add in the vegan chocolate chips, and use a silicone spatula to fold the chocolate chips into the batter just until incorporated.
- Pour the batter into your prepared loaf cake pan, and bake for 50-55 minutes, or until a toothpick comes out clean. The top of the loaf will be lightly golden.
- Make the vegan chocolate ganache according to instructions.
- Allow the loaf to cool in its pan for 10 minutes. Then transfer the loaf to a cooling rack to cool completely before slicing.
- When ready to serve, pour the chocolate ganache over the loaf. Slice and enjoy!
- Store any leftovers in an airtight container and in the fridge for up to 5 days, or in the freezer for up to 3 months.

it is with great dissapointment i admit defeat on a concept, this was sipposed to be veganomicon chocolate chip brownie waffles sadley my waffle maker was inferior and could not hold the umptions goo of them without tearing them apart when i opended the waffle maker. i scraped out and ate teh cooked goo and it was gorgoues but messy. i kept the crispy cooked bits off waffle and spinkled it over the cake mix once it was in the loaf tin. i nearly cried that day fro sheer dissapoinment i love waffles, but on the plus side i got a very good cake out the mix

Steps:
- preheat you oven to gas mark 4, line a loaf tin with baking parchment
- sift all the dry ingredients into a large bowl and make a well in the centre.
- mix all wet ingredients in another bowl and whisk a little
- add wet ingredients to dry ingredients usie a spatula to combine until just mixed do not over mix, fold in gently choc chips and pecans if using.
- put mixture into loaf tin and bake for about 40 minutes, this should be a slightly squidy loaf so stick in a wooden squewer ( i really had to think how to spell squeerer then im sure its wrong every way i look it it nevermind!) if its fudgey give it about naother 5 minutes or if you like it a bit gooey take it out, it will conitnue to cook a bit whilst its cooling.
- cut into chunks and refuse to share with husband as you are lamenting over waffes.
