HAZELNUT-CHICKPEA-CHOCOLATE SPREAD

Steps:
- In a food processor, pulse the hazelnuts until they form a fine meal. Add the chickpeas and process until combined. Add the coconut sugar, cocoa powder, oil, vanilla and 1/4 cup water and process until smooth.
- Serve the spread with strawberries, pretzels and/or graham crackers.
CHOCOLATE HUMMUS

- *Feel free to sub chickpeas or white beans for the black beans. Or you can use 1 1/2 cups cooked beans instead of canned.To make the chocolate hummus, drain and rinse beans well. Combine all ingredients except add-ins in a food processor until completely smooth like brownie batter. Stir in chocolate chips if using. (A few commenters had success with a blender, but a food processor will yield a smoother texture.) Leftovers can be covered and refrigerated 4-5 days. - As with all hummus, this spread couldn't be easier; Just throw everything but the water into your food processor or blender, and thoroughly puree, scraping down the sides of the bowl to get everything incorporated as needed. With the motor running, slowly drizzle in the water, until you reach your desired consistency. Spread at will!

- Empty the can of chickpeas into a colander. Rinse with water, and with the water running, rub the chickpeas with your fingers, so the skins start to loosen
- Drain the chickpeas really well. Remove and discard as many skins as possible and dry them using paper towels ( this process is optional, but removing the skins will produce a smoother, less gritty hummus)
- Melt the chocolate chips in a glass bowl using your microwave, in 20 second increments, stirring well each time
- Place the chickpeas in the food processor and pulse until they resemble coarse cornmeal. Add the melted chocolate, vanilla, salt, tahini and milk. Process until smooth and creamy. Add more almond milk, to achieve the desired consistency ( See note below ). Store in the refrigerator until ready to use

- Roast your sunflower seeds. I spread baking paper on a baking tray (one with low sides). I spread the sunflower seeds out evenly and cook them in an oven at 180 degrees. Set the timer for 3 mins, stir then roast for a further 3 mins. (Much longer and you take them too far)

- Preheat oven to 350°F (180°C). I recommend using the convection mode for faster roasting, but the recipe works on conventional mode as well.
- Open the can of chickpea, drain under a sieve and rinse them under cold water. Shake the sieve to remove any water, then place the chickpeas onto a large baking sheet covered with parchment paper.
- Slightly rub the chickpeas with a clean towel or absorbent paper to remove a part of the moisture. If some skin peels off of the chickpeas, leave it and remove it later.
- Bake for 50 minutes, making sure you stir them with a wooden spoon every 20 minutes to roast all sides. Keep baking until the chickpeas are hard, smaller in size, very dry and crispy. The best way to test if they are ready is to eat one! If not crunchy and too soft, keep baking.
