MINI CHOCOLATE CHESS TARTS WITH GINGERSNAP CRUST AND BROWN SUGAR MERINGUE
These mini chocolate chess tarts with gingersnap crust and brown sugar meringue are as decadent as they sound!
Provided by Sloane
Number Of Ingredients 16
Steps:
- Preheat the oven to 350 degrees.
- In a food processor, blend the gingersnaps, brown sugar, and salt until the cookies are a fine crumb.
- Pour in the melted butter and blend until fully combined.
- Divide the crust mixture up evenly between three mini tart pans and pack it in along the bottom and the sides. I used USA Pan mini tart pan, which has six 4-inch tarts in one pan.
- Parbake the crust for 8 minutes. Take the tart pan out of the oven and press the crust down with a spoon if it has puffed up at all.
- While the crust is baking, make the chocolate chess filling. Start by melting the chocolate and butter together in a small bowl.
- In a separate medium bowl, whisk together the sugars, flour, cocoa powder, egg, and salt for 1-2 minutes until light and fluffy.
- Add the heavy cream and vanilla and mix until fully combined.
- Then pour in the melted chocolate butter mixture, and whisk until fully combined.
- Pour the batter into the gingersnap crusts evenly, then bake at 350 degrees F for about 25 minutes. When they are ready, the sides will be set and the very center should have a slight wobble.
- Allow to cool completely in the pan before removing and topping with meringue.
- Using an electric mixer, beat the egg white until it becomes foamy.
- Begin slowly adding the brown sugar until all of it is used up.
- Continue beating until stiff peaks form.
- Top each cooled chocolate chess tart with the meringue, and enjoy!

- I like to make sure my pie dough is prepared before I begin making this chocolate pie. Make pie dough the night before because it needs to chill in the refrigerator for at least 2 hours before rolling out and blind baking (next step).
- On a floured work surface, roll out one of the disks of chilled dough (use the 2nd pie crust for another recipe!). Turn the dough about a quarter turn after every few rolls until you have a circle 12 inches in diameter. Carefully place the dough into a 9-inch pie dish. Tuck it in with your fingers, making sure it is completely smooth. To make a lovely thick edge, I do not trim excess dough around the edges. Instead, fold the excess dough back over the edge and use your hands to mold the edge into a nice thick rim around the pie. Crimp the edges with a fork or use your fingers to flute the edges. Brush edges with egg wash/egg white. Carefully line the inside of the pie with two pieces of parchment paper, as shown in the photo below, then pour in the pie weights. Make sure the weights are evenly distributed around the pie dish. If it’s helpful, you can watch me do this exact step in my praline pumpkin pie video tutorial. Chill the dough in the refrigerator or freezer for at least 30 minu
- Bake the cold pie crust (with weights) for 15 minutes. Remove pie from the oven and carefully lift the parchment paper (with the weights) out of the pie. Prick holes all around the bottom crust with a fork. Return the pie crust to the oven and bake for 8 minutes to help set the bottom. Remove from the oven and set aside until step 7. You can pre-bake the crust up to 3 days ahead of time. Cover and store in the refrigerator (without weights) until ready to use.

- Preheat the oven to 350°F. In a large bowl, whisk together the cocoa powder, sugar, and corn starch. Add in the beaten egg, melted butter, milk, and vanilla. Stir well to combine.
- Pour the mixture into the unbaked pie shell being cautious not to over-fill. Bake for 45 to 55 minutes or until a crust has formed completely across the top of the pie and is mostly set. There will still be some jiggle to the pie. Allow to cool completely before slicing and serving. This will allow it to set even more. Serve with a dollop of whipped cream, if desired.
