No-Bake Chocolate Cookie Pops image

Skip the oven and satisfy your sweet tooth with a recipe for No-Bake Chocolate Cookie Pops decorated with your choice of toppings.

18 chocolate sandwich cookies with cream filling
4 ounces cream cheese
1 1/2 cups milk chocolate or semisweet chocolate chips
1 Tablespoon vegetable oil
Assorted sprinkles, crushed nuts or toasted coconut flakes
Lollipop sticks

Steps:

  • Place the cookies in the bowl of a food processor and pulse them until roughly chopped. Add the cream cheese and continue pulsing until the mixture is well combined and there are no large pieces of cookie remaining.
  • Line a baking sheet with parchment paper. Using your hands, squeeze and roll the cookie mixture into 1-inch balls. Insert a lollipop stick into each ball, place them on the baking sheet and freeze them for 30 minutes.
  • Melt the chocolate and vegetable oil in the microwave on 30-second intervals, stirring between each interval, until fully melted. Dip the cookie balls in the melted chocolate then immediately garnish them with sprinkles, crushed nuts or toasted coconut flakes. Return the pops to the baking sheet. Loosely cover and refrigerate them for 1 hour or until the chocolate is set.

1 teaspoon baking powder
¼ teaspoon salt
½ cup unsalted butter, softened
1 cup white sugar
1 egg
1 teaspoon instant coffee granules
1 teaspoon vanilla extract
¼ cup miniature semisweet chocolate chips
¼ cup white chocolate chips
1 cup dried cherries

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Line two large baking sheets with parchment paper.
  • Combine flour, cocoa powder, baking powder, and salt in a bowl.
  • Beat the butter and sugar together in a large bowl with an electric mixer on medium-high speed, until light and fluffy.
  • Beat the egg, coffee granules, and vanilla into the butter and sugar mixture until blended.
  • Change the speed to low and pour in the flour mixture. Beat until just combined.
  • Stir in semisweet chocolate chips, white chocolate chips, and dried cherries.
  • Drop spoonfuls of the dough two inches apart onto the prepared baking sheets.
  • Bake 10 to 12 minutes per batch in the preheated oven, until cookies are just becoming firm.
  • Let cool on baking sheets for two minutes.

Water, vegetable oil and eggs called for on cake mix box

28 maraschino cherries, stems removed
1 package (16 oz) chocolate-flavored candy coating, chopped
28 paper lollipop sticks
1 large block white plastic foam

Steps:

  • Heat oven to 350°F. Make and bake cake mix as directed on box for 13x9-inch pan, using water, oil and eggs. Cool completely.
  • Line cookie sheet with waxed paper. Crumble cake into large bowl. Add frosting; mix well. Shape into 28 (1 1/2-inch) balls, placing cherry in center of each and covering cherry completely. Place on cookie sheet. Freeze until firm. When cake balls are firm, transfer to refrigerator.
  • In medium microwavable bowl, microwave candy coating on Medium (50%) 1 minute, then in 15-second increments, until melted; stir until smooth. Remove several cake balls from refrigerator at a time. Dip tip of 1 lollipop stick about 1/2 inch into melted candy and insert stick into 1 cake ball no more than halfway. This recipe was given to me by Joan and Karen friends of cook book II. They are sisters and make these together every year for the past 50 years. When I worked at the newspaper they would always bring a plate over for us all to share. They are so good!

COOKIE:
1/2 c butter or margarine
1 c granulated sugar
1 large egg
1 1/2 tsp vanilla extract
1/2 c baking cocoa
1/4 tsp salt
1/4 tsp each -baking powder and baking soda
1 1/2 c all purpose flour
36-48 maraschino cherries-well drained and patted with paper towel

Steps:

  • 1. Cream butter, sugar , egg and vanilla until light and fluffy. Add remaining ingredients; blend at low speed until a dough forms( will be stiff). Shape into 1 inch balls; push a cherry part way into each ball(so cherry is showing 1/2). Place 2 inches apart on ungreased cookie sheet cherry side up. When cookies are molded, prepare frosting and use immediately. Yes this is correct. --- Frosting: 1 c. semi-sweet chocolate chips 1/2 c. sweetened condensed milk 1/4 teas. salt 1 1/2 teas. maraschino cherry juice Melt chocolate with milk over low heat in saucepan, stirring constantly. Remove from heat and add remaining ingredients. Stir. Frost each cherry with 1/2 teaspoon of frosting.(frosting will spread over cookie slightly while baking. Bake at 350^ for 8-10 minutes until puffy. Cool on wire rack or paper bag. Store in covered container when cold.

3 1/2 ounces instant chocolate pudding mix
3 cups whole milk, plus 1/4 cup
1/3 cup dark chocolate chips, chopped
1 cup frozen Cool Whip Topping, thawed
1/3 cup cherry preserves
chocolate shavings (for garnish)
fresh cherries (for garnish)

Steps:

  • In a large bowl, whisk together the pudding mix and 3 cups milk until smooth and well combined. Stir in the chopped chocolate. In another medium bowl, whisk to combine Cool Whip with 1/4 cup milk. In another small bowl, whisk to combine cherry preserves and 2 tablespoons water.
  • Spoon a tablespoon of the pudding into each popsicle mold and top with a spoonful of whipped topping. Pour the pudding mixture halfway up the molds and add a spoonful of preserves. Top off each with remaining pudding, insert popsicle sticks and freeze until firm, at least 6 hours or overnight.
  • Unmold and garnish with shaved chocolate and fresh cherries.

Steps:

  • Preheat oven to 375 degrees F.
  • Combine flour, cocoa powder, salt and baking soda in a bowl. In a bowl of an electric mixer, or with a handheld mixer, combine butter and sugars until fluffy. Add egg, vanilla, and wine and combine. Slowly in batches add the flour mixture until just combined. Fold in the chocolate and cherries. On a nonstick cookie sheet, place a heaping tablespoon of dough for each cookie about 2 inches apart from each other. Bake 8 to 10 minutes, or until tops are still soft looking but edges look firm.

3/4 cup confectioners' sugar
1/3 cup unsweetened Dutch-process cocoa powder
1/4 cup granulated sugar
1/2 teaspoon salt
2 1/2 sticks cold unsalted butter, cut into cubes
2 teaspoons pure vanilla extract
2 1/2 cups confectioners' sugar
5 teaspoons meringue powder
1/4 cup water, plus more as needed
1/2 teaspoon cherry extract
Red gel food coloring

Steps:

  • Make the cookies: Pulse the flour, confectioners' sugar, cocoa powder, granulated sugar and salt in a food processor until combined. Add the butter and vanilla and pulse until the mixture looks crumbly and holds together when pinched. Transfer the dough to a large bowl and press into a ball. Knead a few times until the dough comes together. Turn out onto a piece of parchment paper. Top with another piece of parchment and roll out the dough until 3/8 inch thick. Refrigerate until firm, about 1 hour.
  • Position racks in the upper and lower thirds of the oven; preheat to 325 degrees F. Cut out cookies using a 3-inch round cookie cutter. Arrange 2 inches apart on 2 unlined baking sheets, then insert an 8-inch lollipop stick about three-quarters of the way into each. Gather the scraps and refrigerate until firm, if needed; reroll to cut out more cookies.
  • Bake, switching the pans halfway through, until the cookies are set, 25 to 30 minutes. Let cool 10 minutes on the pans, then transfer to a rack to cool completely.
  • Meanwhile, make the icing: Whisk the confectioners' sugar and meringue powder in a large bowl. Beat in the water and cherry extract with a mixer on medium speed until soft glossy peaks form, about 3 minutes; add up to 1 more tablespoon water as needed until the icing is pipeable but not runny. Tint red with food coloring.
  • Decorate the cookies: Transfer about 1/2 cup icing to a resealable plastic bag and snip a corner. Pipe the icing around the edge of each cookie; set the bag of icing aside for adding details later. Thin the icing in the bowl until the consistency of runny yogurt, adding 1 teaspoon water at a time. Transfer to another resealable plastic bag and snip a corner; pipe within the outline, then use the back of a spoon or an offset spatula to smooth it out. Let set, about 1 hour. Pipe the reserved detail icing on top of the cookies to make a floral design.

  • While the cake is baking drain the cherries in a fine mesh strainer over a bowl. Reserve the cherry liquid for another use.
  • Once the cake is cool run a sharp knife up and down through the baked cake from end to end and side to side of the pan to break the cake up into pieces. Dump the cake pieces into a large bowl. Run the sharp knife through the pieces of cake until the cake is nothing but crumbs.
  • Stir in about 3/4 of the tub of frosting. Stir until the cake and frosting are completely combined and you do not see any dry pieces of cake. Add more of the frosting if you need to. You want a wet dough but not so wet that it will not hold shape when you are forming the balls.
