CHERRIES AND CHOCOLATE FUDGE
Cherries and chocolate are an all time favorite combination. This chocolate fudge has candied cherries and almonds throughout, and is topped with more cherries and pecans.

- Line an 8 x 8 inch square pan with aluminum foil.
- In a microwave-safe bowl combine sweetened condensed milk and chocolate chips; microwave on high for 1 1/2 minutes, or until chocolate is melted. Stir until smooth. Stir in chopped almonds, chopped cherries and almond extract. Pour into prepared pan and spread evenly. Place pecan halves and cherry halves on top.
- Cover and refrigerate for 2 hours, or until firm. Cut into 1 inch squares. Store, covered, in refrigerator.

- Spray foil-lined 8-inch pan with cooking spray; set aside.
- Place chocolate in medium saucepan. Add milk; cook on low heat 8 to 10 min. or until chocolate is completely melted and mixture is well blended, stirring frequently. Add remaining ingredients; mix well.
- Spread immediately into prepared pan. Refrigerate 6 hours or until set.

CHOCOLATE NUT FUDGE
I've had this recipe over 50 years, and it is still my favorite. It isn't too sweet, and best of all, no cooking! Keeps well when wrapped and placed in refrigerator. I make this for Christmas giving.

- Melt chocolate chips in a large, heavy pan over low heat, stirring constantly to avoid scorching, until melted and smooth, about 10 minutes. Stir sour cream, confectioners' sugar, and salt into the chocolate. Mix the vanilla wafer crumbs into the chocolate mixture and stir in broken walnut pieces. Spread fudge into the prepared pan, refrigerate until firm, and cut into squares.

CHOCOLATE CHERRY NUT FUDGE
This is a favorite around the Holidays. I'm not sure where the recipe came from - off of the can of sweetened condensed milk or the chocolate chips (for the basic Fudge). I just know it is so easy to make! And the addition of the cherries and nuts makes it oh so delicious!

Steps:
- 1. Line an 8 or 9 onch square pan with aluminum foil. This makes it easier to take the fudge out of the pan.
- 2. In a large glass bowl combine chocolate chips, sweetened condensed milk and salt. Microwave on high 2-3 minutes. (Check after 2 minutes)
- 3. Quickly stir in nuts, almond extract and cherries.
- 4. Spoon immediately into foil lined pan and chill 2 hours or until set.
- 5. Remove from pan, peel foil off and cut into pieces. Store in the refrigerator.

- Line an 8-in. square dish with foil and grease the foil with 2 teaspoons butter; set aside., In a large heavy saucepan, combine the sugar, cream, corn syrup, salt and remaining butter. Bring to a boil over medium heat, stirring until sugar is dissolved. Cook over medium-low heat, without stirring until a candy thermometer reads 240° (soft-ball stage). Remove from the heat; stir in marshmallows and vanilla., With a wooden spoon, beat until mixture begins to lose its gloss, about 10 minutes. Fold in pecans and candied cherries.
