Indulge! Dress up Betty Crocker® brownie mix with a super-easy ganache made with chocolate chips and whipping cream.

1 box Betty Crocker™ fudge brownie mix
Water, vegetable oil and eggs called for on brownie mix box
2/3 cup whipping cream
1 cup semisweet chocolate chips (6 oz)
Fresh raspberries, if desired

Steps:

  • Heat oven to 350°F. Place mini paper baking cup in each of 42 miniature muffin cups. Make brownie batter as directed on box. Fill muffin cups about 3/4 full (about 1 tablespoon each) with batter.
  • Bake 18 to 21 minutes or until toothpick inserted in edge of brownie bites comes out clean. Do not overbake. Cool 10 minutes before removing from pan. Cool completely, about 30 minutes. Carefully remove paper liners, if desired.
  • In 1-quart saucepan, heat whipping cream over low heat just to boiling. Remove from heat; stir in chocolate chips until melted. Let stand about 15 minutes or until mixture coats a spoon.
  • Spoon about 1 teaspoon chocolate mixture onto each brownie. Garnish with fresh raspberries.

The slightly sweet, dense chocolate brownie is dotted with maraschino cherries for that classic chocolate covered cherry flavor we all know and love. Unlike most brownie recipes, this one will not leave you with a toothache. It's perfectly balanced. A fudgy chocolate brownie with a sweet maraschino cherry in each bite, this is sure to become a household favorite!

4 ounces semisweet chocolate, coarsely chopped
4 ounces unsweetened chocolate, coarsely chopped
1/2 cup unsalted butter, cut into pieces
3 tablespoons unsweetened cocoa powder
3 large eggs
1 and 3/4 cup packed light brown sugar
1 tablespoon vanilla extract
1/2 teaspoon salt
1 cup all-purpose flour
10 ounce jar maraschino cherries, drained

Steps:

  • Preheat the oven to 350ºF. Line an 8x8-inch pan with aluminum foil, leaving a 1-inch overhang on all sides. Spray the foil lightly with nonstick spray.
  • Add the chocolate and butter to a medium heatproof bowl set over a pot of simmering water. Stir occasionally until fully melted and smooth. Whisk in the cocoa powder until smooth. Set aside to cool slightly.
  • In a separate medium bowl, whisk together the eggs, sugar, vanilla, and salt until combined. Whisk in the melted chocolate until well combined. Fold in the flour with a rubber spatula just until combined. Fold in the cherries.
  • Spread the batter evenly into the bottom of the prepared pan. Bake for 20 to 25 minutes, or until the top of the brownies look dry and the edges begin to pull away from the sides of the pan. Cool the brownies in the pan on a wire rack.

2 cups Ghirardelli semi-sweet chocolate chips (divided)
2/3 cup butter
1 cup sugar
2 eggs, beaten
1 teaspoon vanilla
1 cup unsifted flour
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup Quicker Quaker Oats
2/3 cup maraschino cherry, Chopped (divided)
1/2 cup walnuts or 1/2 cup pecans, Chopped
2 teaspoons vegetable shortening

Steps:

  • Heat oven to 350°F.
  • In 2-quart heavy saucepan on low heat, melt 1 cup chocolate chips with butter, stirring constantly; remove from heat. Stir in sugar, eggs and vanilla.
  • Gradually add flour, baking powder and salt to chocolate mixture. Fold in oats, nuts, 1/2 cup chocolate chips and 1/3 cup chopped cherries.
  • Spread into greased 9 x 13" pan.
  • Bake at 350 F for about 25 minutes, or until toothpick inserted in center comes out clean.
  • Cool on rack.
  • Cut brownies 4 by 6 across pan to make 24 squares.
  • Sprinkle remaining chopped cherries over top.
  • In small heavy saucepan on low heat, melt remaining 1/2 cup chocolate chips and shortening, stirring constantly.
  • Drizzle chocolate over top of brownies to make a lacey pattern.
  • Chill about 15 minutes to set chocolate. Recut brownies.
