- In a large airtight container, combine the first six ingredients. Store in a cool, dry place for up to 2 months., To prepare cappuccino: Place 2 tablespoons mix in a mug. Stir in hot milk until combined; top with marshmallows.

CHERRY-CHOCOLATE COFFEE CAKE

- Position a rack in the lower third of the oven and preheat to 350 degrees F. Make the streusel: Spread the almonds on a baking sheet and bake until toasted, 5 to 7 minutes; let cool and transfer to a food processor. Add the sugar, butter, flour, cinnamon, orange zest and cocoa powder and pulse until the nuts are ground and the mixture starts to clump. Refrigerate until ready to use.
- Make the filling: Toss the cherries, almond extract and cherry liqueur, if using, in a bowl. Stir in the flour and sugar.
- Make the cake: Whisk the flour, baking powder, baking soda and salt in a large bowl. In a small bowl, whisk the sour cream and vanilla and almond extracts. Beat the butter and sugar in a stand mixer fitted with the paddle attachment on medium speed until smooth, about 5 minutes. Scrape down the bowl. Beat in the eggs one at a time, until light and fluffy, 2 to 3 minutes.
- Beat in half of the flour mixture on low speed until almost incorporated, then beat in half of the sour cream mixture. Beat in the remaining flour mixture, then the sour cream mixture; finish mixing the batter by hand (do not overmix).
- Butter the bottom and sides of a 10-inch springform pan. Spread half of the batter in the pan. Sprinkle half of the streusel on top, then cover with the cherry filling. Drop spoonfuls of the remaining batter on top of the cherries and smooth with the back of a spoon. Top with the remaining streusel.
- Bake on the lower oven rack until the cake springs back in the center when pressed, about 1 hour, 20 minutes. Transfer to a rack to cool. Run a knife around the inside of the pan, then remove the side.

CHOCOLATE CHERRY COOKIES
A hidden cherry under the chocolate makes a sweet surprise when you bite into these wonderful chocolate cookies.

Steps:
- Combine flour and cocoa; set aside.
- Beat butter in a med bowl on med speed until softened.
- Add sugar, baking soda, baking powder and salt.
- Beat until well mixed.
- Beat in egg and vanilla, scraping the side of the bowl.
- Gradually beat in flour mixture.
- Shape dough into 1-inch balls.
- Place 2-inches apart on an ungreased cooking sheet.
- Press down the centers with your thumb.
- Drain cherries, reserving juice.
- Place a cherry in the center of each cookie in the depression you made with your thumb.
- Combine chocolate pieces and condensed milk in a small saucepan.
- Cook and stir over low heat until the chocolate is melted.
- Stir in 4 teaspoons of the reserved cherry juice.
- Spoon about 1 teaspoon of the chocolate and milk mixture over each cherry, spreading to cover cherry.
- If the frosting is too thick, thin with additional cherry juice.
- Bake in a 350°F oven for about 10 minutes or until edges of cookie is firm.
- Cool on cookie sheet for 1 minute.
- Transfer to a wire rack to finish cooling.
CHOCOLATE-CHERRY COFFEE MIX

CHOCOLATE COVERED CHERRY COFFEE
My hubby loves Chocolate Covered Cherries. I bought a box yesterday and when I got up this morning there was a single one left in the box. I just know that in his self sacrificing way he was just protecting me from the evil sugar (Yeah, right! lol). CHOCOLATE CHERRY CHIP CAKE
We always called it the "Busy Cake"...too many things going on with it! Crushed maraschino cherries can be found in the ice cream sundae department at the grocery store. If you can't find them, get regular maraschino cherries and chop.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
- In a large bowl, mix flour, sugar, cocoa, baking powder, soda and salt.

- Heat oven to 400°F. Grease cookie sheet with shortening or cooking spray.
- In large bowl, mix flour, baking powder, sugar and salt. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture forms coarse crumbs. In medium bowl, beat 1 of the eggs with fork. - Preheat an oven to 350 degrees F (175 degrees C).
- Line two large baking sheets with parchment paper.
- Combine flour, cocoa powder, baking powder, and salt in a bowl.
- Beat the butter and sugar together in a large bowl with an electric mixer on medium-high speed, until light and fluffy.
- Beat the egg, coffee granules, and vanilla into the butter and sugar mixture until blended.
- Change the speed to low and pour in the flour mixture. Beat until just combined.
- Stir in semisweet chocolate chips, white chocolate chips, and dried cherries.
- Drop spoonfuls of the dough two inches apart onto the prepared baking sheets.
