Three flavors blend together to create a show stopping cupcake. A cookie crust, chocolate cheesecake, and spice topping make these Chocolate Chai Cheesecakes a delicious treat for fall dessert tables.

12 Oreo cookies
2 tablespoons melted butter
2 - 8 ounce packages cream cheese, softened
1/2 cup sugar
2 tablespoons sour cream
1 teaspoon vanilla
2 tablespoons flour
1/2 teaspoon cinnamon
4 ounces semi-sweet baker's chocolate, melted
2 eggs
1 batch Chai Whipped Cream

Steps:

  • Preheat oven to 350 degrees. Place a large sheet pan on the bottom shelf of the oven and fill halfway with water. Place 14 cupcake liners in a muffin tin.
  • Crush the cookies, cream included. Mix the crumbs with the melted butter. Spoon the mixture evenly in the bottom of the liners. Press down firmly.
  • Beat the cream cheese and sugar until creamy. Add the sour cream, vanilla, flour, cinnamon, and melted chocolate and beat again.
  • Add the eggs and beat until combined. Spoon the cheesecake batter evenly on the cookie crusts. Place the pan on the rack above the water. Bake for 25 minutes.
  • Remove and cool in the pan for 15 minutes before gently lifting them out and placing on a wire rack to cool for an hour. Place in the refrigerator and chill for 2-3 hours.
  • Top with the Chai Whipped Cream before serving.

Cashews, non-dairy milk, and silken tofu are the secret ingredients in this rich, vegan cheesecake--homey spices like ginger and cinnamon add fall flavor.

1 ½ cups crushed vegan graham crackers
¼ cup packed brown sugar
3 tablespoons coconut oil, melted
2 tablespoons non-dairy milk (such as rice, soy, or almond)
1 (12 ounce) package extra-firm silken tofu, drained
½ cup raw cashews, soaked in water 1 to 2 hours, drained
½ cup mashed ripe banana
¼ cup fresh lemon juice
2 tablespoons coconut oil, room temperature
2 teaspoons vanilla extract
⅔ cup sugar
4 teaspoons cornstarch
2 teaspoons ground cardamom
2 teaspoons ground ginger
½ teaspoon ground cinnamon
¼ teaspoon salt
⅛ teaspoon ground cloves
2 cups vegan whipped topping
½ teaspoon ground cinnamon
4 teaspoons finely chopped candied ginger

Steps:

  • Preheat oven to 350 degrees F. Lightly spray a 9-inch springform pan with cooking spray. Stir together graham crackers and brown sugar in a small bowl, then drizzle with oil and stir. Add just enough milk to make crumbs stick together. Press very firmly into bottom of pan. Bake 10 minutes. Keep oven at 350 degrees F.
  • Meanwhile, blend cheesecake-batter ingredients in a blender until completely smooth and no bits of cashew remain, giving blender a rest every minute or so and scraping down sides with a rubber spatula. Batter should be completely smooth and not grainy: This takes about 1 minute with a high-powered blender (such as Vitamix) or about 5 minutes with a standard blender.
  • Spray inside springform pan (above baked crust) with cooking spray. Pour in batter and jiggle to spread evenly over crust. Bake until top is lightly puffed and edges are golden, 45 to 50 minutes.
  • Cool to room temperature on a rack, about 1 hour. Chill, covered, at least 3 hours or, even better, overnight.
  • Slice cake with a thin, sharp knife dipped in water. Dollop each slice with whipped topping, dust with cinnamon, and sprinkle with candied ginger.

If you like Irish cream and chocolate, you'll love this recipe. After numerous attempts with the ingredients this is the recipe I now use.

1 ½ cups chocolate cookie crumbs
⅓ cup confectioners' sugar
⅓ cup unsweetened cocoa powder
¼ cup butter
3 (8 ounce) packages cream cheese, softened
1 ¼ cups white sugar
¼ cup unsweetened cocoa powder
3 tablespoons all-purpose flour
3 eggs
½ cup sour cream
¼ cup Irish cream liqueur

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a large bowl, mix together the cookie crumbs, confectioners' sugar and 1/3 cup cocoa. Add melted butter and stir until well mixed. Pat into the bottom of a 9 inch springform pan. Bake in preheated oven for 10 minutes; set aside. Increase oven temperature to 450 degrees F (230 degrees C).
  • In a large bowl, combine cream cheese, white sugar, 1/4 cup cocoa and flour. Beat at medium speed until well blended and smooth. Add eggs one at a time, mixing well after each addition. Blend in the sour cream and Irish cream liqueur; mixing on low speed. Pour filling over baked crust.
  • Bake at 450 degrees F (230 degrees C) for 10 minutes. Reduce oven temperature to 250 degrees F (120 degrees C), and continue baking for 60 minutes.
  • With a knife, loosen cake from rim of pan. Let cool, then remove the rim of pan. Chill before serving. If your cake cracks, a helpful tip is to dampen a spatula and smooth the top, then sprinkle with some chocolate wafer crumbs.
