CHAI CHOCOLATE TRUFFLES



Chai Chocolate Truffles image

1 1/2 cups heavy cream
7 bags chai tea, such as Tazo
1/4 teaspoon salt
9 ounces dark chocolate (70 percent cocoa), chopped
2/3 cup Dutch process cocoa powder
Gold dust, for garnish, optional

Steps:

  • Combine the heavy cream and tea bags in a small saucepan. Place the pan over medium-low heat and warm gently, stirring occasionally, until bubbles just start to form around the edges of the cream, about 5 minutes. Simmer 3 minutes more and then turn off the heat.
  • Place the chopped chocolate and salt in a medium bowl. Strain the hot cream mixture through a fine-mesh strainer over the chocolate and let sit for 3 minutes. Slowly whisk the now-melted chocolate into the cream, starting with small circles in the center of the bowl and moving into larger circles as the mixture begins to come together; stop when smooth and completely blended. Press a piece of plastic wrap directly on top of the ganache and refrigerate for about 3 hours, or until just set and cold but still pliable.
  • Place the cocoa powder in a shallow bowl. With a 1-ounce scoop, scoop level rounds of the ganache into your palm and gently roll into a ball. Roll the truffles in the cocoa powder to coat, then place in an airtight container and refrigerate until ready to serve.
  • Just before serving, sift a touch of gold dust, if using, over the top of the truffles for sparkle.

1 1/2 cups all-purpose flour
3 tablespoons instant chai tea latte mix, *
1 teaspoon baking soda

Glaze
1 cup powdered sugar
1 tablespoon Land O Lakes® Butter softened
1 tablespoon instant chai tea latte mix *
1/2 teaspoon vanilla
4 to 5 teaspoons milk

Steps:

  • Heat oven to 350°F. Grease bottoms only of 3 (5 3/4x3-inch) mini loaf pans; set aside.
  • Combine water and baking chocolate in 1-quart saucepan. Cook over low heat, stirring occasionally, until chocolate is melted. Remove from heat; cool to room temperature.
  • Combine brown sugar, 1/2 cup butter, eggs and 1 teaspoon vanilla in bowl. Beat at medium speed until creamy. Add chocolate mixture and sour cream. Continue beating until well mixed. Add all remaining bread ingredients; beat at low speed until mixture is smooth.
  • Spoon batter evenly into prepared loaf pans. Bake 30-40 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pans. Cool completely.
  • Combine all glaze ingredients except milk in bowl. Beat at medium speed, adding enough milk for desired spreading consistency. Spread glaze over cooled bread.

2 tea bags, black
1/4 cup sugar, plus 2 tablespoons (6 tablespoons total)
1/4 cup unsweetened cocoa powder
4 cups milk
1/2 tablespoon vanilla extract
1 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
1/2 teaspoon ground cardamom
1/4 teaspoon ground cloves
1/8 teaspoon cayenne pepper
couple grains salt
whipped cream (optional)

Steps:

  • In a saucepan, bring water to a boil. Remove from heat; add tea bags. Cover and steep 5 minutes. Remove tea bags.
  • Stir in sugar and cocoa. Bring to a boil; reduce heat. Add milk, vanilla, spices and salt. Cook and stir over medium heat until mixture is heated through, about 5 minutes. Do not boil. Strain, if desired. Pour into warm mugs. Garnish each with whipping cream and a sprinkle of nutmeg, if desired.

3 cups (375g) all-purpose flour (spoon & leveled)
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cream of tartar
1/2 teaspoon salt
1 cup (230g) unsalted butter, softened to room temperature
1 cup (200g) granulated sugar
1/2 cup (100g) packed light brown sugar
2 large eggs, at room temperature
2 teaspoons pure vanilla extract
1 and 1/2 cups (270g) white chocolate chips
1/2 cup (100g) granulated sugar
1 and 1/2 teaspoons ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground cardamom
1/2 teaspoon ground allspice

Steps:

  • Whisk the flour, baking powder, baking soda, cream of tartar, and salt together until combined. Set aside.
  • In a large bowl using a hand-held or stand mixer fitted with a paddle attachment, beat the butter, granulated sugar, and brown sugar together on high speed until completely smooth and creamy, about 2 minutes. Beat in the eggs and vanilla extract on high speed. Scrape down the sides and bottom of the bowl as needed.
  • On low speed, slowly mix the dry ingredients into the wet ingredients until combined. Beat in the white chocolate chips. The cookie dough will be thick. Cover dough tightly with aluminum foil or plastic wrap and chill for 1 hour and up to 3 days.
  • Remove cookie dough from the refrigerator. If the cookie dough chilled longer than 3-4 hours, let it sit at room temperature for about 20 minutes. This makes the cookie dough easier to scoop and roll.
  • Preheat oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats. (Always recommended for cookies.) Set aside.
  • Combine the topping ingredients. Set aside.
  • Roll cookie dough into balls, about 1.5 Tablespoons of dough per cookie. Roll each in the topping mixture and arrange 3 inches apart on the baking sheets. Bake for 11-13 minutes or until lightly browned on the sides. The centers will look very soft.
  • Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. While the cookies are still warm, I like to press a few more white chocolate chips into the tops- this is only for looks!

This is a show-stopper, super-rich chocolate lovers' dream dessert. The chai and rich chocolate flavors harmonize with one another perfectly. It's even better the next day!

1 ½ cups graham cracker crumbs
½ cup chocolate cookie crumbs
⅓ cup melted butter
¼ cup white sugar
½ teaspoon ground cinnamon
2 tablespoons miniature chocolate chips
1 cup semisweet chocolate chips
2 (8 ounce) packages cream cheese, at room temperature
¾ cup white sugar
1 teaspoon vanilla extract
3 large eggs, at room temperature
1 cup heavy cream
1 cup heavy cream
2 extra-strong chai tea bags (such as Stash or Twinings®)
1 cup semisweet chocolate chips
1 piece crystallized ginger, minced
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place a 9x13-inch baking pan filled with water on the lower rack of the preheating oven. Line a 10-inch springform pan with parchment paper.
  • Combine graham cracker crumbs, cookie crumbs, butter, sugar, and cinnamon in a food processor or bowl; mix well. Spread mixture evenly over the bottom and 1/2 inch up the sides of the springform pan. Press down with the bottom of a glass or mug to compress the crust. Sprinkle mini chocolate chips on top.
  • Place crust in the preheated oven to melt the chocolate chips, 3 to 5 minutes. Carefully spread melted chocolate over the crust. Set aside.
  • Place semisweet chocolate chips in an oven-proof bowl; heat in the oven until melted, 3 to 5 minutes. Stir well to ensure there are no lumps.
  • Add cream cheese and sugar to the chocolate; beat with an electric mixer until creamy. Stir in vanilla extract. Add eggs one at a time, beating well after each addition. Mix in heavy cream just until incorporated; avoid overbeating. Pour filling mixture over the crust.
  • Bake on the middle rack of the oven, above the water-filled pan, until middle is set, 40 to 50 minutes. Remove cheesecake from the oven and cool completely, about 1 hour. Run a thin, sharp knife around the edges to loosen the sides of the cake and prevent cracking.
  • Make ganache while cheesecake is cooling. Bring cream to a boil in a small saucepan. Add tea bags and let steep until fragrant, about 10 minutes. Squeeze tea bags into the cream and discard. Add chocolate chips; stir until melted and smooth. Add ginger, cinnamon, and nutmeg. Pour over cooled cheesecake and chill until set, at least 1 hour.

Steps:

  • Whisk together the dry ingredients in a bowl (flour, cocoa powder, cream of tartar, baking soda, salt) and set aside.
  • In a stand mixer fitted with the paddle attachment (or with a hand mixer), cream together the butter, chai masala blend and sugars for 3 minutes on medium speed.
  • Scrape down the sides, add the egg, and mix on medium speed for another minute. Scrape down the sides once more.
  • With the mixer running on low speed, spoon in the dry ingredients until just combined.
  • Place the dough in the fridge (covered) for one hour.
  • Preheat the oven to 350℉/177℃ and line two large baking sheets with parchment paper. Add the granulated sugar to a bowl.
  • Make ~2 tablespoon sized balls (or ~40g), rolling in between your hands, then roll through the sugar.
  • Evenly space the cookies on the prepared baking sheets and bake for 11-13 minutes.
  • Remove from the oven and bang the pan on the counter a few times, then place on a wire rack to cool for a few minutes.

1 whole nutmeg

1/2 teaspoon fennel seed
1/2 teaspoon pumpkin pie spice

2 pints vanilla ice cream
1/4 cup, plus 2 tablespoons chocolate syrup

Steps:

  • In a saucepot on medium-low heat, steep the milk with the nutmeg, cardamom, fennel seed, pumpkin pie spice, cinnamon, and black peppercorns until the milk is fragrant, about 20 minutes. Stir occasionally to break the milk film or "skin" on the top. Strain and discard the solids. Refrigerate until cold, about 30 minutes.
  • In a blender add the ice cream, 1 cup strained milk and chocolate syrup. Blend until smooth. Divide mixture evenly among 4 glasses and serve.

  • Preheat oven to 300 degrees F. Butter an 8-inch square pan; line with parchment paper, leaving an overhang over two of the edges.Combine cookies and salt in a food processor and pulse until very finely ground. Drizzle over melted butter and pulse until evenly moistened. Press into bottom of prepared pan.   • In a large bowl beat the 1/2 cup butter with an electric mixer on medium to high speed for 30 seconds. Add powdered sugar, cardamom, cinnamon, and cloves. Beat until combined, scraping sides of bowl occasionally. Add melted chocolate and cream mixture, beating just until combined. Cover and chill for 15 minutes. Beat for 5 minutes or until mixture is slightly thickened and ribbons form.
  • Spoon chocolate mixture into cooled piecrust. Smooth surface. Cover; chill for at least 6 hours or up to 24 hours.
