BUTTERSCOTCH CRUNCH SQUARES

- Preheat oven to 400 degrees F. In a medium bowl combine the flour, oats, and brown sugar. Cut in butter until mixture resembles coarse crumbs. Stir in nuts. Pat mixture lightly into an ungreased 13 x 9 x 2-inch baking pan. Bake for 10 to 15 minutes. Remove from oven. While still warm, stir nut mixture to crumble. Cool.
- Spread half of the crumbs in a 9 x 9 x 2-inch pan; drizzle about half of the ice cream topping over crumbs in pan. Place ice cream in a chilled medium bowl; stir to soften. Spoon softened ice cream carefully over topping-drizzled crumbs. Drizzle with remaining topping; sprinkle with the remaining crumbs. Cover and freeze at least 6 hours or until firm. Let stand at room temperature for 5 to 10 minutes before serving.

- In a saucepan, melt the butterscotch chips over low heat, stirring frequently. When they are completely melted, remove from the heat and stir in the noodles until they are evenly coated. Drop by spoonfuls onto waxed paper. Allow cookies to set up for 20 to 25 minutes, then peel them from the waxed paper and enjoy!

I am not sure where this recipe came from but it is oh so delicious. I make variations using whatever I feel like. White chocolate chips, butterscotch chips, caramel bits, toffee bits, all work great. An easy and quick option to making cookies.

- 1. Combine flour and sugars and mix well.
- 2. Thoroughly beat in butter.
- 3. Add egg yolks and vanilla. Mix well, until smooth. Stir in chocolate chips.
- 4. Spread evenly with a spatula on a 10x15 greased or parchment covered baking sheet. Bake at 350F for 18-24 minutes or light golden and just set. Remove from oven.
- 5. Cool and cut into bars.

- Mix in margarine until thoroughly blended.
- Add egg yolks and vanilla.
- Mix until smooth OR blend in food processor until mixture comes together.
- Press with floured fingers in 10 by 15 by 1/2-inch cookie sheet with sides.
- Bake at 350 degrees for 13 to 18 minutes or until light golden.
- Cool slightly, about 20 minutes.
- Spread melted chocolate over base; sprinkle nuts on top.
- Press in lightly.
- Cool until chocolate sets.
- Cut into squares or triangles.
