12 (1 ounce) squares bittersweet chocolate
2 cups unsalted butter
1 pinch salt
2 eggs
4 cups confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Melt the bittersweet chocolate, and allow to cool slightly.
  • Place the butter or margarine, salt, and vanilla in a mixing bowl. Beat with a mixer until very light and airy, about 4 minutes. Add the powdered sugar a little at a time while beating on low speed. Mix well, and beat on medium speed for about 4 minutes. Add the eggs one at a time, and beat for 5 minutes more. Add the melted chocolate, and beat 4 minutes.

6 tablespoons unsalted butter, melted
3/4 cup cocoa powder
1 1/2 teaspoons vanilla extract
Pinch fine salt
4 cups confectioners' sugar (1-pound box)
6 tablespoons milk

Steps:

  • Combine the butter and cocoa powder in the bowl of a stand mixer fitted with a paddle attachment (or in a large bowl if using a handheld electric mixer). Mix on low speed until combined. Add the vanilla and salt. Continue to mix on low speed, adding the sugar a cup at a time and alternating with additions of the milk. Increase the speed to medium-high and mix until smooth. Use immediately, or refrigerate in an airtight container up to 3 days. Allow to come to room temperature and mix on medium-high until smooth.

2 cups (1 pound or 454 grams) unsalted butter, room temperature
1/2 cup (115 grams) vegetable shortening
3 lbs (1.36 kilograms) 10X confectioners' sugar
1 cup (110 grams) Dutch processed cocoa powder
3 Tbsp meringue powder
1 tsp salt
5 fl oz (150 mililiter) chocolate liqueur (i.e., Godiva or another)
2 Tbsp milk
1 Tbsp pure vanilla extract
2 cups (1 pound or 454 gram) refrigerated Ganache

Steps:

  • 1. First, prepare the Ganache. Refrigerate until firm.
  • **2.**Cream the butter and shortening for 2 minutes. Stop to scrape the bowl. Cream the mixture for an additional 60 seconds.
  • 3. Sieve cocoa powder and confectioners' sugar together. Add the sugar mixture 1 cup at a time to the creamed butter and shortening. Mix until well blended. Add meringue powder and salt and beat for one minute. Mixture will appear dry.
  • 4. Add milk, vanilla extract, and chocolate liqueur to the buttercream. Beat until well combined.
  • 5. Add Ganache, 1 cup at a time and beat until light and fluffy.
  • Storage: Store the icing in an airtight container and freeze. The icing will keep for up to 2 months.
  • Yield: 2 1/2 to 3 quarts (2.37 to 2.85 L)

200g butter, softened
400g icing sugar
5 tbsp cocoa powder
2 tbsp milk

Steps:

  • Put the chocolate in a heatproof bowl over a pan of barely simmering water (make sure the bowl isn't touching the water). Stir until melted. Alternatively, melt in the microwave, stirring every 30 secs. Leave the melted chocolate to cool for 5 mins.
  • Mash the butter and icing sugar together with a fork first, then switch to a wooden spoon or electric beaters if you have them. Sift in the cocoa and pour in the melted chocolate, a pinch of salt and the milk, then mix again until smooth. Use to top cupcakes or cover and fill a chocolate sponge cake.

⅓ cup white sugar
¼ cup water
2 eggs

Steps:

  • Melt chocolate in a microwave according to package instructions. Set aside and let cool completely.
  • Combine sugar and water in a saucepan. Bring to a boil; let boil for 1 minute. Remove from heat and set aside.

3 sticks (1 1/2 cups) unsalted butter
6 tablespoons water
3/4 cup sugar
3 large egg whites
1/4 teaspoon cream of tartar
6 tablespoons unsweetened cocoa powder

Steps:

  • Chop chocolate. In a metal bowl set over a saucepan of barely simmering water melt chocolate, stirring until smooth, and let cool. Cut butter into pieces and soften to cool room temperature.
  • In a 1 1/2-quart heavy saucepan bring water and sugar to a boil, stirring until sugar is dissolved. Boil syrup, without stirring, until a candy thermometer registers 248°F.
  • While syrup is boiling, in a bowl with an electric mixer beat whites with a pinch salt until foamy and beat in cream of tartar. Beat whites until they just hold stiff peaks and beat in hot syrup in a stream (try to avoid pouring onto beaters and side of bowl). Beat mixture at medium speed until completely cool, 5 to 10 minutes. Beat in butter, 1 piece at a time, beating until mixture is thickened and smooth. (Buttercream will at first appear very thin and at some point look like it is breaking but, as more butter is beaten in, it will thicken and become glossy and smooth.) Beat in cocoa powder, melted chocolate, and a pinch salt, beating until smooth. (Buttercream may be made 2 days ahead and chilled in an airtight container. Bring buttercream to room temperature and beat before using.) (If buttercream is too cold when beaten it will not be glossy and smooth.)
